The sun is, however, unable to penetrate the murky depths of Bar Harbor Cadillac Mountain Stout. Glossy sable with red-bronze highlights peeking through the bottom edge of the glass. The head is on the large side due to what appears to be, at the moment at least, a generous amount of carbonation. The loud 'pffft' should have been a tipoff, but I still had to give the cap a well-timed slurp to prevent overflow. The foam is toasted tan in color and is airier than I like on my stouts. It's the sort of unsticky head that is unlikely to leave much lace... and doesn't.

The nose is a good one. There's nothing here that's surprising or that really stands out, just a mouth-wateringly good American stout aroma. It smells of vanilla-laced bittersweet chocolate, like a thick, chewy brownie swimming in melted vanilla bean ice cream. No molasses, anise, smoke or any of the other scents commonly attributed to the Double or Imperial stout styles. It's simple, but in a good way.

There's more flavor complexity on the palate than aroma complexity in the nose. Either that or my tastebuds are more refined than my olfactory lobe. Unfortunately, it isn't the stoutest stout going (more on that below). It's still overwhelmingly chocolate-like. Coffee with cream elbows its way into the flavor profile as well and may even become 'numero uno' as the beer approaches room temperature. Vanilla is still present, but not abundantly so.

There's a near perfect mix of flavor sensations (sweet, bitter and sour). That will be a good thing for some and not such a good thing for others. Since I like balance in my (non-subtyped) stouts, I'm fine with it. As is usually the case, bitterness reigns late in the mouthful and after the swallow. I can't decide if the hoppiness is citric or floral. It's both really, probably favoring the former.

As I'd feared, the initially vigorous amount of carbonation hasn't settled down nearly enough. That, coupled with a body that is at least as much porter as it is stout, results in a mouthfeel that can only be described as disappointing. Breaking news: the bubbles are finally calming themselves and the body is firming up just enough by the time I enter the bottom half of the bottle to earn a tentative thumbs up.

Cadillac Mountain Stout isn't the world-beater that I expected, but it is a very good version of a 'just plain ol' stout, a style that is too often ignored. Assuming a little better quality control with regard to carbonation, I can see how it earned the accolades that are so proudly displayed on the label. I'd like to thank MuddyFeet for sending the bomber my way.

Poured from a 12oz. bottle into a Sam Adams perfect pint.

A: Standard pour yields a 2.5 finger foamy mocha head with decent retention. Beer is a dark, near opaque amber. Lacing is stringy and subtle at best with little cling.

S: Aroma is smoked malts, licquorice, chocolate, and day old coffee. Nothing overwhelming but very appropriate with no real surprises.

T: Chocolate, coffee, and roasted malt sweetness upfront. Coffee flavors sour a little but they're balanced by the intensifying chocolate and toffee taste. Licquorice present waaay in the back along with a bit of smokiness. Finish is a bittersweet molasses with an aftertaste of chocolate that dissipates quickly. Very enjoyable.

M: Medium bodied with moderate carbonation. A bit livelier in the mouth than I would've thought from the style but smooths out as it warms. Silky and oily as it finally goes down. Finish is sticky and aftertaste fades quickly.

D: This beer is caught between an American and an English style stout and it thankfully represents the best of both. Great feel and amazingly complex for what it is. A surprisingly solid offering from an otherwise quite below-the-radar brewery. Definitely worth seeking out and trying though. Hugely drinkable.

Pours a pitch black color with a finger of khaki head. The head has little retention, leaving nothing in the way of lacing before settling into a thin, bubbly halo.

The aroma is all roasted malts with a hint of vanilla cola and black licorice. Odd but pleasant.

The flavor brings notes of roasted pecans and almonds, followed by tootsie rolls and licorice. Finishes with a faint touch of hops. I should hate this but I don't. It's pretty good, actually.

The feel is medium-full bodied with moderate carbonation. Very creamy and smooth. No alcohol presence.

Overall, a pretty good and very interesting stout. It's a bit too sweet, but never cloying, and it has a nice creamy body, like your mom.

I dont normally go for smaller stouts. 6.7% is small by my standards.
Poured into my Sierra Nevada bulb glass.

Appearance: Pitch black with a one quarter finger light tan head. Looks beautiful.

Smell: Sweetness. A lot of vanilla tones, very pleasant. Roasty.

Taste: Chocolate, vanilla, roasty. Great! Reminds me of Edmund Fitzgerald in that there is nothing added but it is full of flavor! Everything melds together so nicely.

Mouthfeel: A little thin but some creaminess. I would like it a little more viscous.

Overall: Another beer that is not hyped at all but knocked my socks off. If you see it, it is worth getting.

A: Served warmer than usual on a really hot day, probably around 50 degrees would be my guess - i.e., slightly colder than cellar temperature. Poured - fairly aggressively - from the 12 oz bottle into a pint glass. Body is black with a half-finger tannish head. Leaves a decent amount of lacing stuck to the sides of the glass.

S: Roasty. Hint of charcoal and coffee. Herbal or leafy hops; tobacco.

T: Roasted barley malt, touch of roasted coffee beans and modestly acrid char. A bit of chocolate. Sour cherries on the back end of things. Some sort of hop bitterness finishes it off; I'm thinking more citrus than anything, but it's tough to pinpoint the hoppy bitterness in light of the roasted barley and charcoal-type flavors.

M: Good carbonation levels - not overly active at all, giving this a good modestly creamy feel. Heft is a tad bit thin, but for a Dry Irish Stout, I'm not expecting a full bodied beer at all, so it works.

O: This is really good. Packs a lot of flavor into a relatively light stout. Drinks like a four or five percenter, but packs in nearly seven. Quick buzz is duly noted.

Cadillac Mtn. Stout: In a 22 oz bomber bottle, thanks Benjamin. A vigorous pours results in a huge head in my Imperial Pint glass, but it dissipated very quickly, leaving a slight covering. Inky black is revealed to be a beautiful ruby red when held up to a weapons grade light. Interesting and extremely pleasant aroma, with coffee and toffee present. The taste is terrific, initial sweetness develops with a nice blast of roasted flavor as well. Sweet aftertaste lingers, with a bit black licorice as well. Nice taste, easy to drink and well worth it. Pick it up if you have the opportunity.

A: comes out of the bottle just about black. Some ruby highlights when held to the light. Two fingers of head from a heavy pour.

S: Somewhat difficult to locate. Black patent malt. Hints of coffee and bitter chocolate.

T: Milk chocolate. Fresh roasted nuttiness. Some coffee. Nicely hopped to balance everything out. Very nice.

M: Perfect carbonation level. Proper level of viscosity for the style.

D: High. I could definitely see myself having several of these in a sitting.

My first offering from Bar Harbor and its a good one. In this era of Imperial everything, I'm happy to find a nice well crafted stout that is nice and easy to drink and holds my interest at the same time. Very happy to try this.

Pours a near black shade of brown, very bubbly along the sides of the pint glass like a soda pop. Full two finger head sits up top when poured directly into the glass, with a bit of lacing left as it recedes.

Smell is mostly just lightly toasted malt, there are some citrus hops present as well as a slight bit of cocoa powder, but mainly just that light maltiness.

The taste pretty much follows the nose. Very light toasted malts, even a bit watery.

Moutfeel is medium bodied and creamy, good for a regular stout

Ehhh, this just doesn't have the kind of flavor I look for in a stout, even a low ABV one. I would be much more likely to stick with something like Bell's Kalamazoo Stout at this ABV range. I know it is a dry stout and isn't supposed to be a huge flavor bomb, but it really doesn't even have enough toasted maltiness to satisfy. Pretty average overall.

I know the ownership for this brewery has changed, it makes me wonder if the recipe for this changed as well because I am not experiencing ANY of the complexity mentioned in older reviews

Your ship has just run aground in a terrible nor'easter; a St. Bernard (in Maine!?) comes to rescue with a canister around his neck - in it, one bottle of Cadillac Mountain Stout. You wrestle the canister from the giant beast.

The aroma is sweet, sweet chocolate, hints of caramel and fine roasted malts. The sizable head fades into light mocha lacing.

The initial sip is chocolate and malt decadence; intertwined with an appropriately moderate carbonation. The palate is all dessert - this has the sweetness and character of a freshly baked brownie. Indeed, the admixture of malts and floral hops keeps this stout enticing and interesting.

Mouthfeel is full and rich, with prominent aftertastes of coffee-tinged malts.

You forget your troubles; lost silks and pearls are of no interest to you. Was your wife on board? You're not sure. All you can think of what a tremendous, well balanced beer this is.

After a disappointing first go at it last month, I tried it again, and was richly rewarded. Worthy of true beerfaring adventures.

Pitch black with a huge, noisy dark tan head. You would have thought with the fizziness of the head that it would have faded quickly, but the fizz subsides eventually and the head sticks around for a while longer. The nose is chocolate, roasty malt, prunes. The flavor is dominated by bitter hops but underneath that are toffee, wood and a hint of milk chocolate. The flavor would be better if they lowered the hops/burnt bitterness and raised the malt profile and complexity but this is still an excellent beer. The mouthfeel is prickly from the high carbonation.

I couldn't believe I found a six pack of this stuff just sitting on the shelf in a Maryland beer shop! This was a long time want of mine.

A: Wow, what a creamy appearance. Black as the blackest black hole, with a finger or so off-white (a bit of brown notes) head that retained itself forever. The head resembled that of a nitro pour.

S: High grade milk chocolate and coffee. However, the coffee isn't of a "coffee ground" nature, which leads me to believe that this facet of the taste profile is just the brewer working his/her magic with the malt, rather than actually adding coffee to the brew.

T: Chocolate sponge cake. That is honestly the best way to describe the initial taste on this one. Totally even throughout... even on the smooth finish. Velvety!

M: Thick and creamy, without being pretentious or "Imperial" at all. The lacing was substantial, the booze was non-existent, and the sweetness was mild, yet still dessert-like.

O: I don't know how some breweries find this kind of balance. This is one of those rare brews that defines the style. I've tried tons of the great "American Stouts" on the market: Obsidian, Kalamazoo, Central Waters Coffeehouse, etc., and this one is right up there with them... maybe even above them.

12 oz bottle poured into hill farmstead glass

A - comes out oily black, sort of a purplish tint to it. small thin head from a strong pour whats there has good retention and good lacing.

S - roasted coffee, dark chocolate when i first poured it out i got a sort of a wine/vinegar booziness wafting out of it.

T - superb roasted coffee to this that hits at the front and back. chocolate in there as well but sits in the back. some bread malts and sweet malts in there as well as a decent, but definitely in the background, grass hop presence.

M - lots and lots of carbonation. medium bodied. coffee grind feel to the brew which works with the roast coffee taste.

O - a fine american stout. didn't look all that impressive when poured but its whats under the hood that counts.

Big thanks to mdavis31481 for helping me knock another top 100 beer off of my list.

Appearance: Ebony body, gigantic tan head, bubbles cling to the glass. The head is a slow fader, leaving a little lace.

Smell: Lots of sweet chocolate to enjoy, coffee is there, so is a sweet cream smell, but the chocolate really defines the smell. I have had chocolate cake that doesn't smell this good.

Taste: Balanced and highly drinkable. Chocolate is bitter and sweet, like a wonderful piece of gourmet chocolate. Taste ends with a small alcohol warmth, very nice.

Drinkability: Mouthfeel is a little thin, but this is a very solidly crafted stout, up there with the tops in style.

Poured a 22oz bomber into an imperial pint glass. Color was a completely opaque dark brown/black with a 2 finger bubbly mocha brown head. The head clung to the sides nicely, and settled down to a thin layer. Aroma was slightly malty, but nicely sweet. Small amounts of dark brown chocolate with a bit of lactose. Taste was a mellow sweet, slight bitter kick on the toungue that switched to a dark chocolate coffee flavor. Felt good in the mouth. Nicely carbonated, a hint on the thin side compared to many stouts, but not bad. Very drinkable. More like a drink and less like a beer.

Received as an extra in a trade with bmanning.

A: Pours black with a fairly-substantial brown head that eventually recedes into some decent lacing.

S: Lots of roasted coffee, malt, and chocolate. A few dark fruits make their way in alongside some faint hop presence, but the coffee/chocolate balance is what really makes this one shine.

T: Coffee and chocolate dominate again. The roasted characteristics of each blend together very well, creating the best-tasting American Stout that I have had the chance of having.

M: Quite creamy and smooth with moderate carbonation.

D: Very high. Fairly-low alcohol to complexity ratio, so this is definitely one I could sip all day.

A- Pours black as oil with a thick, frothy head. Head is about 2 fingers with great retention and good lacing.

S- All dark malts and chocolate. Very little sweet scents, mostly burnt flavors. Not terribly complex, but pretty delicious smelling.

T- Just like the scent. Starts off and continues throughout with good dark malt flavors. Hints of smokey flavors and semi-sweet chocolate mix in. Slight hints of anise creep in towards the end. Just like the scent, not terribly complex, but very consistently solid taste throughout.

M- Very thick and creamy for a lower gravity stout. Slightly higher than desired levels of carbonation. Sticky on the palate. Easy to drink, and easily sessioned.

Overall, a very good, non barrel-aged, everyday stout. Beats the hell out of a Guinness, but not quite the level of Founders' stouts.

Nice dark color with a thick head. Moderately bitter with lots of malt flavors. Really nice roasted/chocolate flavors noticeable from the first drop. One of the best stouts I have had.

A- A beautiful black beer with a very creamy off white head that has excellent retention.

S- A very clean aroma. Some cocoa malts and vanilla. Not all that pungent or mind blowing, but is appealing.

T- Very clean and eerily tasty. This seems much more tasty and complex than the aroma would lead you to believe. Some cocoa and coffee and vanilla all swirling together in a wonderful combination.

M- Velvety smooth and just the right consistency for the style as to not become overly heavy.

D- I did not have very high expectations for this, but damn... this is amazing. Too bad it was hard to get my hands on some of this, I would be drinking this all the time if it were more available.

Poured from a bottle with a best enjoy date by 12/09. Seeing as it is 12/09, I think it is time to enjoy this one! Bottle says it is a Platinum Medal World Champ Dry Stout.

Pours a deep, dark brown/black color with a 1/2 inch head that slowly recedes.
Smells of dark roast, chocolate, and slight coffee. First sips yields a nice flavor of dark roast with a slight maybe cherry flavor. A surpisingly light mouthfeel. Minimal lacing. Finishes fairly cleanly.

Good overall drinkability. Well hidden 6.7% abv

A: Slips out of the bottle a pitch black liquid with a single finger of creamy and bubbly mocha coloured foam head. Retention fades quickly leaving a ring around the glass, while lacing clings well as the stout is consumed.

S: Dark fruits (specifically cherries), sweet butterscotch element, fruity hops, licorice, and dark chocolate. Very unique, very appealing, and quite potent for a standard stout.

T: Was expecting a more malt forward stout from the initial aromas, but this proves more well balanced in terms of hops-malt. Fruity citrus-like hops upfront, but quickly complimented with lighter roasted malt flavours. Cherries and licorice are there but take some digging to uncover. Very good with quite a robust taste profile.

M: Lighter mouthfeel with a moderate carbonation. Not quite viscous nor oily as I prefer, but it does translate to a more drinkable stout. Finishes with an enjoyable roasted flavour.

D: Quite a delicious stout that I would enjoy again. Pretty easy-drinking which could be dangerous as it's approaching 7%, but that's a risk I'd be willing to take.
