A: Pours a cloudy medium golden honey in color with moderate amounts of active visible carbonation rising from the bottom of the glass, moderate amounts of small dark yeast particles in suspension, and moderate copper + golden yellow colored highlights. The beer has a two finger tall dense sudsy foamy beige head that reduces to a medium to large sized patch of medium thick film surrounded by a large patch of thin film covering the remainder of the surface of the beer with a thick ring at the edges of the glass. Significant amounts of lacing are observed.

S: Moderate aromas of citrus/grapefruit pith, floral, and herbal hops over the top of light to moderate aromas of toasted + bready + caramel malts with just a hint of sweetness.

T: Upfront there are slightly less than moderate flavors of toasted + bready + caramel malts with just a hint of caramel sweetness. That is followed by moderate to strong flavors of citrus/grapefruit pith, floral, and herbal hops. Light amounts of herbal flavors are present from the shiso as well. Slightly stronger than moderate amounts of lingering bitterness in the finish.

M: Medium bodied with moderate amounts of carbonation. Smooth with a light to moderate amount of dryness in the finish.

O: The set of beers matching the different types of flavors is a really interesting idea and I'd be interested in trying some of the others if I come across them. The beer is, as advertised, bitter with a really nice flavor/aroma profile from the hops. Enjoyable and easy to drink with well hidden alcohol.

An excellent beer. Strong aroma of citrus and pine, particularly grapefruit. Flavour profile to match- strong citrus and tropical fruit. Sweet but not overly so, with minimaly drier finish. Medium body- about what you'd expect given the ABV. Definitely worth trying if you can find it!

Apricot-like golden, really hazy, small white head for just a bit.
Nice and hoppy on the nose, lots of sweet citrus, mango, light pineapple, peach, lychee. Some honey and light caramel too. Not sure what shiso smells like, but it does seem to be an extra minty note present.
Lots of bitter citrus in the start, tons of grapefruit and lemon peel. Lots of crisp juice, too. Some peach sweetness, white grape and nice mango notes mellow it down for a bit. A touch of caramel and biscuity malt. Piney and grassy hops follow, really bitter, dry and rough, a bit spicy and dank, too. There are even some floral notes. There's a definite addition in the finish, a clinging minty leafiness that i suppose added to the bitterness too.
Aftertaste is really green and hoppy, bitter (but not horribly so, actually had rougher ones), with quite some tropical fruit lingering. Medium body, prickly carbonation.
A really bitter puppy, deserving its name. Still, it's not horribly so, with that bit of complexity that makes you drink more and more of it, making it easy to ignore the aggressive finish.

shiso leaf, this is the first ive seen the japanese culinary herb in a beer, leave it to mikkeller i suppose. this one is great though, a really hoppy ipa with a ton of body. the shiso leaf sort of adds a floral element to the hops, but i think i pick up mosaic or something similarly tropical in the nose and taste of the beer, almost sweet for a beer thats supposed to showcase bitterness, but the combination of the hop varietals used and the shiso is just brilliant. some grain weight to this, not a ton of pale barley flavor, but definitely body, which i love in an ipa. there is so much going on here, i find myself looking for the shiso specifically, but thats the wrong approach. this, like the sour part of this series, is not a beer to be dissected, its best as an experience evaluated on the whole, and the whole here is one of a kind delicious. i love the feel, frothy and full, but well carbonated and pretty dry for an ipa. overall a fun creation that was well worth the price. i have to get my hands on the rest of the series!

Thanks to GRG1313 for sharing this one at his tasting.

Pours a clear golden-orange with a foamy off-white head that settles to a film on top of the beer. Foamy swaths of lace form around the glass on the drink down. Smell is of malt, citrus fruit, tropical fruit, and citrus zest aromas. Taste is much the same with citrus zest and grapefruit juice flavors on the finish. There is a mild amount of hop bitterness on the palate with each sip. This beer has a lower level of carbonation with a slightly crisp and medium bodied mouthfeel. Overall, this is a good beer that is tasty and easy to drink.
