I agree with the reviews below...mildly hoppy...slightly sweet....herbal. I wouldn't call it a traditional Kolsch, but I was ok with that. It has a homemade quality to it, and it's very drinkable.

Can. Bright CLEAR pale gold with lasting small head. Fresh grassy herbal and light minerally aroma. LIght crackery sweetness with light hints of honey and herbal grassy light bitterness in minerally refreshing finish. Very light and lively. Pretty fucking amazing kolsch.

a relatively faithful interpretation of the style here, and just the second beer i have had from simple roots. its clear, foamy from the tap, and very much alive. the one thing about it for me that slowed me down a little bit is that there is some sweetness in the middle and in the finish here that i generally am not a fan of in a style that i drink for refreshment, its almost corny to me, and seems to fill this out just a little more than i want it to, especially when it warms up a bit, but the beer stays pretty drinkable overall, has an obvious and authentic kolsch yeast profile to it that seems really dialed in on the fermentation side, and i like the bit of hops to the finish, noble and grassy, keeps this tasting fresh and clean. there is great carbonation too that makes it move, and its summery and even floral in its vibe. a simple and well made beer, i think it could benefit from being a tad drier, but they have done a pretty good job with it. nice with some fresh shucked oysters!

This was poured into a stange. The appearance was a yellow color with a one finger white foamy to bubbly head that dissipated within less than a minute. There wasn’t any lacing. Wispy looking carbonation rises at a fast pace. The smell starts off with a sweet grassy aroma allowing subtle sweet corn and hay-like features arising. Some light lemon/semi-citrus cleans it out nicely to balance. The taste is moderately sweet through a combination of the grassiness, corn, light lemon/citrus. The aftertaste was moderately balanced between the grassiness to hay-like qualities. Its dry and quick on the finish. On the palate, this one sat about a light on the body with a nice sticky sessionability about it. Carbonation feels fairly light allowing the flavor to be the backbone - sticky sweetness clinging to my tongue. Overall, everything seems to fit to the style. Definitely one for a crushable Summer’s day.

Poured from a bomber into a shaker pint, the beer is a bright, slightly hazed, straw gold coloring, with a thin, sparse, filmy, white surface coat, and a steady flow of carbonation throughout the body. The aromas are fruity and floral, with notes of honey, melon, and lemon. Very sweet aromas, on a cracker backbone. The flavors are very fruity and sweet forward, with notes of lemon, melon, and apricot blending with a rich, sweet honey character, and a roasted and toasted grain backbone. Some grassy and floral hops highlights, with a subtle dose of bitterness. The body was crisp and effervesced, keeping the fruity esters and subtle bitterness in the aftertaste short and sweet. The finish is dry, crisp, and clean. Refreshing brew.

This beer pours a bright whitish-gold with a thin head into my glass. This brewery flew right under my radar.

Crisp and mildy sweet malt with a touch of hops. It pays to keep it simple.

More sweet than crisp in the mouth. Grainy texture.

Dry finish feels off. Perhaps a bit more carbonation would help.

Not bad for a basic kolsch. A little more "oomph" in the mouthfeel would make it perfect.
