I shy away from wilds. I fear for getting a sour one that I will have to drink by myself.
But Surly Bird teaches me to be less afraid of wilds as they also can be dry and let malt sweetness in.
This is only my 6th from de Proef, so I'm not going to pass judgment... but this is an interesting ale and, apparently, an even more interesting yeast that keeps giving me these indescribable flavors. So while I will stifle sweeping judgments on de Proef, I'll try to rate Surly Bird.

Looks like a pleasant blonde. Foam hangs around.
Smells intriguing... with yeast indicating it will control (and balance) what goes on.
Tastes like what a great yeast should do: balance malts with spices and let them come and go and let new flavors pop in and out.. Feel eventually gets too dry, overpowers the good impression the ale made.
The solution: have the rest of the bottle with food. And I did. Finish Surly Bird with food.

2012 vintage

L: Pours a mostly clear medium gold with chunks of sediment and a billowy head that retains extremely well. Very active carbonation and nice lacing. Carbonation is so lively that it sends the sediment chunks shooting upwards from the bottom of the glass, creating almost a whirlpool effect.

S: Leathery brett off the bat, with some faint mango, honey, and oxidized notes. Some cleaner bretty fruitiness, mild spice and a somewhat soapy character.

T: Pretty rustic and dry – a bit grainy with some nondescript hop bitterness, oxidized cardboard notes and a mild metallic aftertaste. A lot drier and blander than I remember it being fresh.

F: Medium body, active carbonation, mild warmth in the finish.

Thoughts: This beer really dried out over those years in the cellar and lost much of its character.

Head for days on the pour of this one; creamy white, rocky, meringue like ... extending with structure inches above the glass rim. Smell is earthy, unique - damp seashore, brackish, hay and twine, mushrooms, caramel / toffee maltiness, a bit of lemon, honey, and a difficult to pinpoint fruitiness ... maybe like rotting apples ... the apples that have fallen to the ground around a tree and begun to ferment and decompose in the sun. Flavor is more of the same; a dynamic, earth driven crazy unique beer. This said, I actually feel this would be an incredible food beer, paired with rich fall braised dishes. Creamy medium mouthfeel, not heavy. No alcohol presence and remarkably easy drinking at 9%.

Weird, funky ma non troppo... not quite a sour. Thin body, watery finish but killer drinkability

Interesting flavor here. That from the brettanomyces co-fermentation? Definitely reading like Belgian strong golden. (Which it is.)

Appearance: Golden with champagne bubbles and Giant Foamy head like meringue
Smell: funk like fruity mushrooms
Flavor: surprise - not at all tart or sour, little to no bitter up front, some in the aftertaste
Like a really mild beer. No alcohol flavor at 9% Not a lot of any flavor except that bitter aftertaste threatening
Overall: 3/5 Incredibly drinkable, like an Intro To Beer class.
