This one looked good with a nice even head on top of a cloudy and dull pineapple juice looking liquer. The haze and chunks ( only if disturbed) adhere to the primitive title.

Crisp mouthfeel with good carbonation. Dryness on back of tounge with lingering tropical fruit flavors. Lemon/citrus flavors are pleasant because they're are not overly assertive. For a 9% abv ale this is surprisingly mild tasing with only faint warming at the end.

The problem I have here is mostly with aroma. At first I couldn't pinpoint exactly what the smell reminded me of... and then it hit me. This musty stuff smelled like formaldehyde and rancid cheese, definitely attributed to the wildy yeastiness of it all. After that realization I can never drink it again. The funky aroma intensified as the brew warmed.

Me and this unique brew just didn't agree.

Reinart Flemish Wild Ale in bottle. Aroma and appearance are good. Nice golden pour with good carbonation and a nice head. A sweet nose with a hint of sourness. Starts off like a slightly bitter tripel, good sweetness, some spice, with a good malt flavor. Then it turned to ass in my mouth. Vomit-like sourness destroyed this beer for me. I like Flemish sours, but this was unbearable. Maybe the bottle needed more aging.

Horse turd aroma. Yellow body and big head with significant lace. Funky dimension of drinkable malted apple juice acid. Bold hop is there as well, but bitterness is not the prominent taste in my mouth, Smooth mouthfeel. I suggest strong meat dish. I survived Demon Fish T-shirt.

Lots of funk, and a bit of candy rise up to meet you in the aroma of De Proef's Demon Fish. It's got notes of wet wool, sweaty horses, dirty sock, manure, baby diaper, vomit, damp wood, and mud. In a way, well, in VERY much of a way, it's not all that pretty... there's something missing from the funk, perhaps yeasty fruitiness, that leaves it a touch off-putting at first. Of course you CAN come to enjoy it, as I did, but I'd imagine that most people are not quite ready for the experience. And although you get used to it and start to recognize the sugar-candy aspect more as you progress, the initial contrast can be a bit odd as well.

But let's talk about what is pretty... the appearance. Clear, effervescent gold body... beautiful, creamy, almost-rocky white head... rings and short walls of lace. Very nice!!!

In the mouth it's medium-light bodied with a dextrinous edge and a moderate, smooth-but-not-quite-creamy carbonation.

The flavor is much softer than the aroma suggests, and is actually fairly clear of funk - very odd! It's a little bit Bretty, but not particularly tart at all. In fact, it's kind of reminiscent of a mineralish Duvel!!! Or, perhaps, a less malty, bright version of Orval. There's a nice maltiness to it that suggests straw and grain, but it also has a candy edge to it. And there's some alcohol, but it's neatly contained until at least halfway through the glass. It's nicely balanced and drinkable, but where is the funk? Bring on the funk! For a beer that's so aggressive up front, it's a massive let down in the mouth - not that I'd want it to taste like it smells!!!! - but c'mon.

In conclusion, it's a bit haphazard... intense at first, but then boring. Overall a decent goblet, but not nearly as worthy as their other offerings.

A: poured into an appropriate glass. nice hazy straw colored with a small white head. beautiful lacing.

S: spicy and fruity. malt and cheese like hop aroma.

T: malty, musty, fruity and phenolic. not as sour as I anticipated (this is my first wild ale). I get a candy sugar flavor in there somewhere. pretty tasty all in all. very dry finish.

MF: moderately high carbonation with a crisp dry finish.

D: I give this a great drinkability because I just about lost it when I read this was 9%. I was thinking like 4 or something. Very good strong sour ale.

Corked and caged 750ml bottle poured into a large tulip glass. Pours a murky brownish orange color with a nice creamy off-white head that possesses excellent retention and lacing. The aroma is sour with some fruity malts, spices, barnyard funk and yeast. The taste starts off with a nice smooth maltiness that quickly turns sour and finishes with horseblanket and a dose of earthy hops in the very dry finish. Overall, this is another great beer in the "De Proef" series, recommended.

750ml brown bottle without dating. Appears to be plenty fresh when poured.

The beer is clear yellow in the glass, with big persistent carbonation, an inch of thin white head and decent lace. The aroma is not exactly pleasant; full of spicy white pepper, yeast, and metallic mineral water notes. The flavor is even less likable. Big cobwebby white pepper overtones with an unrelenting sour metallic base. Body is decent, at least. Medium-full with a good balance between carbonation and creaminess. I'd be hard-pressed to drink this again.

A: Huge chunks of floaties dance against a beautiful hazy orange colored body topped off with a big rocky white head.

S: a big sour lemony/banana aroma with some sour fruitiness, oranges, and some barnyard funk (hay).

T: The initial flavor yielded sour tart oranges, ending cleanly and quickly. There is a sour fruitiness of apples and oranges with a barnyard funkiness from the brett. There were noticeable medicinal alcohol notes as well some wild flower spicings. The brett truly takes center stage here flavor wise and finishes with a light acidity.

M: medium, fizzy carbonation with a sour bitterness of oranges and strong alcohol fusels on the back of the tongue.

D: Very nice experience and not for the faint of heart or for those unfamiliar to style. It is the incredible wild yeast strain (brett) that will keep you coming back for more alluring you for the next sip. Intriguing to say the least.

After trying the "Pinhead" in the series and feeling nonplussed and underwhelmed, I saw the positive reviews of others in the series, and felt compelled to continue trying them.

Demon Fish pours a clear orange, frothy foam is fed by steady streams of of tiny bubbles.

Aroma and taste are intertwined, very horseblankety. No stinky cheese or chemical odors at all, just wild farmy yeast. Hay, musty grain, and barn stalls. Strong and unique.

Taste mirrors the flavor, wild yeast is the centerpiece, with husky grain notes and a dry chalky residual finish. Tart and herbal qualities manifest over time. It's certainly an acquired taste, but satisfying to those craving something different. Somewhere between Wild Ale, Saison, & Gueuze.

Full and creamy mouthfeel, slightly bitter. Well matched to the taste, it envelops the palate fully, no escape. One bottle would be best shared, unless you're a fiend for funky Belgian ale.

Reccomended for fans of Fantome, Reinaert, & Russian River.
Paired well with an aged Gruyere.

Bottle courtesy of Boboski: Poured a clear golden color ale with a big foamy head with great retention and lacing. Aroma of barnyard and funk is dominating and enjoyable but maybe a bit strange. Taste is way too strong on the barnyard with what I can only describe as cat litter (not that I have ever tasted it but you get the idea). I usually am a big fan of sour, tart and funky beer but this goes to a level that I am either not ready for or maybe the brewer screw-up something. I finally had to drain pour this one.

750 ml bottle purchased at Hi Time Wine Cellar in Costa Mesa, CA. in late 2007 (September?). Reviewed in January 2008.

This is my 3rd or 4th to pass my lips in this wonderful series from one of my favorite Belgian breweries.

Pours a bright yellow gold with a moderate white head, a steady stream of carbonation allows a thin cover to remain throughout the session. Top-ups bring a nice head back to the party.

Aroma is the wonderful tart/sour wet grass that is so common to the style- very lovely indeed.

Flavor is harsher and sharper than the aroma with a very hard-edged tartness at the end. A very dry ending.

Alcohol burn ending is harsher than I like- I think the earlier versions hid the alcohol better.

Overall, this is still a really good beer, but probably my least favorite of the series.

Purchased from Hi Times 6 months to a year ago, so it's had some time to age and come together.

A: Hazy golden color with a 2 finger head that leaves a fair bit of lacing.

S: Barnyard funk. Brett. Funky. Most people would probably hate the smell of this. But hey, once you get into sour beers...

T: Sour, but not that tart. Decent maltiness in the background. Still, wonderfully funky. Earthy. There is actually some balance from the sweetness here (maybe the 9% helps).

M: Low carbonation. No real alcohol bite. Moderate crispness on the end.

D: Very good.

Recommended. Not the best sour, but still one I definitely enjoyed drinking. Can't wait to try some more of this series (seeing as how this one is one of the lower rated of the series).

I was pleasantly surprised by this beer. The bottle I obtained had no date, but the label was an image of some evil anthropomorphized bird with what appears to be another bird's carcass in the lower left.

Poured a dense straw-colored hue with a nice white head (maybe a finger's worth). Viscous enough that the floc and chunk remained suspended for the most part.

Farm, albeit dry farm and not wet. Horse. In my opinion it was not too sour. Rather, it impressed me as a solid Trippel that used a different yeast. The yeast was both at the forward and backward of the swallow; bookends containing a bright and clean malt. Again, solid beer.

Poured into a tulip glass. Full, smooth, white, delicate head with great retention. Heavy, soap-like lacing occurs as the head subsides. Lots of effervenscence, like that of a pilsner. The beer itself is brilliantly clear, pouring a golden, straw color.

After one whiff, it is apparent there is an abnormal yeast strain used. Extremely funky, earthy, barny nose, similiar to that of an authentic lambic. Hop aroma. There are also hints of fruit, particually banana and pineapple. It also smells very bready and slightly sour. A Spice that comes to mind is nutmeg.

The taste is not at all fruity, but dry, bitter, and bready. The most dominate taste for me was the bread, almost like ginger bread. The beer actively bounces on the palette in a gentle manner, and vanishes quickly. As it disappears, the bitterness and bready tastes creep up onto the palette. A peppery taste is also present. Mouthfeel is dry and the beer lingers after swallowed. It coats and intrigued my tastes buds. There is a distinct aftertaste difficult to pinpoint...

A fine, fine and extremely different beer - no surprise that it came from De Proef 'The Prof'. It is so complex I could drink it all night trying to figure out what the heck is going on!

clear gold with a thick white head.
whoa, the aroma is a funky barnyard full of different smells. straw, horse blanket, wet wool, and cheese-y aromas round out the funky side of things. i'm pulling some noble hop aromas out of this, in addition to a distinct strawberry aroma, that i seem to remember from previous editions in the series.
in the flavor i detect a bit of grainy malt in the flavor, which i haven't really noticed in any of the other flemish primitives. there also appears to be a lot more a hop presence, noticable at the middle and finish. the taste is thankfully less funky than the aroma lets on, thankfully because if i had to guess the taste from the aroma, i would be imagining what licking a sheep stall might taste like. the horse blanket and straw are still there just to a lesser degree. fruit comes out after some time with the other flavors, again, that fresh, light berry flavor, mostly strawberry. the amount of hops hurts this beer a bit i feel like some of the more subtle nuances are masked with bitterness. i come away with a feeling that there are lots of minerals in the water.
medium bodied with soft, but active carbonation.
good enough drinkability, but i feel that the hops might interfere with the experience a little.

It pours a lovely yellow/light-peachy color with a thick melted marshmallow head. There is one steady stream of bubbles bubbling up from the bottom center of my glass.

It smells sour, but with maybe a hint of fruitiness at the end.

The taste is crazy! It is sour, but not in a normal-sour type of way. It has a very crisp taste, and a good refreshing mouthfeel and aftertaste. I am not sure what temperature it should be served at, but I think it's sort of cold right now. I'm not really sure what to say about it--it has sort of a funky/strange flavor, but I think I like it. I don't know about drinkability either--I'm not sure I could have too many of these!

S: Barn yard (straw, horse, earth) funk, cheesy, spice, slight sulfery mineral.

D: Great. It's like an Orval on steroids!

09/05/07- Purchased at Worden's in Missoula, MT.

Presentation- 750ml bottle, both caged and corked. No visable freshness info on the bottle.

Appearance- Somewhat murky orange-golden in color. Pours with a solid 3/4 inch creamy head and leaves behind decent patchwork lacing.

Smell- Odd sugary tropical rotten fruit nose. Very yeasty and a bit funky, but not really in a good way.

Taste- Tastes like someone fed me yeast covered rotten apricots and maybe some moldy papaya as well. Very sugary and somewhat foul tasting.

Mouthfeel- Soft lower carbonation level. Silky and lightly creamy, but the rancid taste really ruins it obviously.

Drinkability- Dumped this one after a few sips. My wife said it reminded her of rat poison. Not quite that bad, but either spoiled or just not my cup of tea. Have the spoon wacker at hand pretty soon to try.

Pours a hazy darker ripe peachish color with a frothy cloud like looking white head. Excellent fluffy retention, which doesn't loose anything. Some floaties in there, but that's due to it being WILD. Chimney smoke like looking carbonation streaming to the top when you hold it to the light. Sticky thick lacing down the glass. Sour patch kid aroma with an earthy undertone. It almost smells like diapers, a locker room, or a dirty trash can. Man that shit is funky. A sweaty shirt stuck in a bag in the hot sun for a couple of day comes to mind. A tart aroma also tickles the nostrils.

Taste does not equal the smell--at all. Malt notes come through and hug the taste buds. Rice malt that is cloying in the finish. There's a sour edge in the finish. Again, that is some funky ass shit. Completely complex and changes with every taste. Very interesting, but not quite drinkable in my opinion. It's definitely one to try in order to expand your palate, but it's not an every day brew. Shouldn't this be put into the wild ale category? It's not a belgian strong ale, though the high abv gives my opposition some credibility.
