My original review , at bottom , was quite awhile ago, + it was from a growler that was 5 or 6 days old. Since then the recipe has been tweaked. Among other things, the beets are now peeled, to reduce "earthiness", and there is a smaller amount of beets/batch. Numerical ratings now saved, are from the current review.
New review, of new batch(3 wks old +/-) from a bottle.
Translucent bright pinkish-red, with light, quickly-dissipating light pink head. It really shines, and stands out.
Smell is of pickled beets, but much more of the beet part , with the "pickled" part being light, and the whole being of lesser intensity , maybe 1/2 strength, of the actual thing. Slight bread crust aroma when swirled.
Taste is a clean, cooked beet flavor, of the root, not the stem & greens, and almost no "earthiness", with a hint of that pickled flavor. Finishes with a slight tang, some typical saison spiciness, and a hint of bread crust , as with cream ales, but fainter. Slight drying bitterness.
Feel is light, but not watery, with moderate, but light-feeling, effervescent carbonation dancing on top of it all. Slight drying feeding on the finish, that lingers.
Overall, a pleasure. I like beets, but guessing that it's not a requirement to enjoy this. It comes across as just another fruit flavor. One of the few "new & improved" things, that actually is. :)

Pours a clear, ruby-red , with 1/2" pink head, and a little lacing. I.e. the color of water that beets were cooked in. :) Beautiful color, and does invite one to drink it. :) (4.25)
Aroma is of not-quite-cooked, fresh beets. (3.5)
Taste ,not surprisingly, is that of fresh beets. That of not completely cooked beets, or the stems on the greens. Also some very slightly tart notes of apple and honeydew on the finish. (3.5)
Feel is thin, and slightly oily, with light, fine carbonation. 31 IBUs? No noticeable hop aroma or flavor, just some light lingering bitterness on the finish. (3.75)
Overall, a positive experience. Drank it as a stand-alone, but probably would have been better with a meal. I like it, but can't envision drinking a lot of it . Good for an occasional change-up. I LIKE beets but am not fanatic about them. If however, you LOVE beets, and can't get enough of them, do try this. You'll probably love it. :) (3.5)
