Our Saison is as old-world as it gets. We use 100% Colorado ingredients: Colorado water, malted and raw barley and wheat, Crystal hops and a yeast blend of saison yeast, brettanomyces and lactobacillus. We ferment the beer in custom-made open oak barrel fermenters. After this rustic primary fermentation, the beer goes to other barrels for further aging and flavor development. The result is a citrusy, dry, tart and effervescent beer worthy of sharing.

Bottled 3/28/17
First pour is clear golden yellow with a receding frothy white foam head and bubbling effervescence. Further pours are cloudy and hazy. Smells like tart vinegary funk, some barnyard notes, straw, toasty hay, light banana, apple, pear, white grapefruit, salty lemon, hints of apricot, peppercorn, clove spice, leathery bandaid, oak, bready crackery grainy malts, with mild earthy hops. Tastes tart, acidic, slightly sour, vinegary and sweet, with light barnyard funk notes, toasty hay, straw, oak, white bread, crackery grains, mild banana, apple, pear, apricot, lemon, white grapefruit pith, peppercorns, clove spice, leathery bandaid, horse blanket, with some floral earthy hops. Feels medium bodied, smooth and crisp, finishing dry with moderate carbonation. Overall a really nice and complex oak aged saison.

The beer appeared golden orange in color with a fair head. Nice fruity aroma with a touch of sourness; some initial barnyard funk. The taste mimicked the smell, perhaps a bit sweeter on the palate; some sweetness. Medium-heavy body; a bit fizzy; a tad residual sugar heaviness.
This was a bottle packaged March 2015, so the beer has been aged (but in unknown conditions to me). Overall, it was a nice enough farmhouse, shared by a neighbor this evening on his 58th birthday.

Magnum. Show me how it can get better than this for this style and for what exactly it’s presented as. Take a blindfold to anything and tell me another more balanced, crisp and funky finished. World class.
