On tap at CBC 2016, day 2. Cherries, sherry, whiskey, oak and vanilla. Resembles a Belgian-style sour, indeed.

Blend 2, CO whiskey barrels, 12/15/2016. 750ml bottle, served in a Casey stemmed glass.

Pours a hazy medium straw yellow body, one finger white head, good retention. Bits of spotty lacing. Literally smells of gueze; funk, cheese, cobwebs, oak, a bit of cereal grain sweetness, stone fruit, tangerines, mild spicy spirit, a bit of smoke, moderate vinegar. This is great. Flavour is a real trip; as this beer warms up, it changes quite a bit. Cold, it is heavy on the stone fruit, lemon, tangerines, citrus, which is probably all from the microflora. As it warms up, more spicy, slightly warming spirit comes out, some oak as well, adding a bit more complexity. In the background, there's all this funk and cobwebs of the base Oak Theory. Wonderfully complex, and has the air of a complex Belgian-style gueuze. This is a really nicely done blend. Mouthfeel is medium bodied, good carbonation, warming whiskey blends in with a moderate vinegary acidity on the finish. A real trip, definitely worth going after just like the rest of his beers.
