Great taste, great smell, very nice and red, cherries come out great. One of the best sour cherry beers I have ever had. Would love to try it again.

Pours a clear, deep rosé coloration with a thin, fizzy head that quickly vanishes. Smell is dominated by a soft, sweet and sour dark cherry aroma and lighter notes of funk and oak. Taste follows the nose, being dominated by a soft, sweet and sour dark cherry taste, good amount of barnyard funk, some citrus and hay and medium/strong barrel character of oak and light tannins. Finish is quite dry, with a medium sourness and some cherry-colored funk lingering in the aftertaste. Effervescent mouthfeel with a medium body and lively carbonation.

This has quite a nice balance of fruit, funk and sourness going on, although there is also a certain sweetness to the cherries that is somewhat reminiscent of vanilla/marcipan. The light tannins coming through lend a pleasant, mildly vinous quality to this as well.

Pours an orange, reddish color with a bigger head, which vanishes immediately after pouring.

Smells of pithy, jam accompanied cherries with a good amount of funk, hovering above the fruits. Has a sunny straw aspect to it, brightening up the nose just a little, with younger appearing cherrries and accompanying notes of vanilla and subtle oak.

Has a light, slightly effervescent mouthfeel with a finely nuanced carbonation, making this highly drinkable and reminiscence of sparkling wine.

Tastes of old leather, unripe cherries with a decent lemony tartness and a good amount of old hay. The cherries become more dominant then with a stone pith quality, due to a jammy sweetness rising up, which lets the fruits mature in an utmost pleasant way. Finishes sparkly, fruit forward, with a calming marzipan sweetness and a vineous sourness, which becomes the most apparent during the aftertaste.

Quite complex and well balanced with a subtle, yet well integrated fruit appearance, which features an uncommon, well displayed cherry flavor.

The reality is I wanted to hate these Casey beers for being exclusive, rare and expensive. Also, the reality is such that they are so good, I can't even plausibly deny that they aren't my cup of tea.

Pours a nice red color reminiscient of that 3F Schaerbeekse color. Thin pink head 1/3" doesn't last long, but the color sure is pretty. The aroma is what you have to be going for, some germ funk, some dry wood, tons of fruit (cherry). Its good stuff.

The taste is plenty sour, a 7 on the 1-10 scale, the acidity is probably a 5. Nice dryness to the cherry and wood aspect, the body is plenty sufficient to carry the day without interfering with it. Carbonation isn't perfect, but neither is it problematic, in a perfect world I guess there would be about 10-20% more, but not everyone likes their wild ales to be as effervescent.

My biggest disappointment with this beer is its price and lack of availability. If something like this was at the supermarket and priced in the $20 range, I would buy it every trip.

Ruby / slightly orange color, a light white head diminishing quite fast.
Nose has a lot of funk, cherries, notes of acetic acid, lactic acid, slight lemon, it is lovely!
Taste is tart cherry forward, lots of fruitiness, a big blast of complexity, funk, wild character, slight acetic from the barrel aged, everything magically balancing with each other.
Astonishing beer for sure, 5% abv that has a medium body, almost creamy. Completely amazing !

Bottle: Poured a red color sour ale with a medium size foamy head. Aroma of cerise pit and tart notes is quite nice. Taste is a mix of cerise pit with some tart notes and some acidity noticeable and limited residual sugar. Body is full with good carbonation. Interesting and enjoyable beer.

L: Bright ruby red hues with a warm, thin white head
S: Ripe cherries and a healthy amount of funk
T: Exceedingly cherry-forward married with tart cranberries and a gentleman's amount of barnyard funk
F: Medium with an ample amount of carb
O: This was my first Casey beer and it was incredible. This beer embodies everything you'd want in a cherry sour - bright flavors, crisp tartness, and just the right amount of funk. Very well done.

Batch 2 and Batch 3, side by side. 750ml cork and caged bottles, served in a snifter glass. The tasting notes and the final rating reflects that of Batch 3, with comparison notes following at the end.

Pours a beautiful reddish pink body, typical of Casey cherry beers. One finger frothy white head with a light pink hue, good effervescence, retention and plenty of lacing. Leaves a medium collar for a while as well. Smells of rich cherry skin, tart cherry aromatics, fair bit of lemon, moderate lactic tartness, light leather and mild funk. The cherries are in overload, in a good way. Flavour follows as well, surprisingly complex with a big cherry bite with plenty of cherry skin on the taste; lots of juicy cherry character on top of the base Oak Theory. The main issue I have with fruited Cuts is that they tend to overwhelm the base Oak Theory, which is still one of the best beers that Casey makes, in my opinion. However, in this case, the cherries seem to work in very nice harmony, not completely overwhelming the wild ale characteristics of the base. It works really well, with plenty of complexity just from the cherry character. Mouthfeel is medium bodied, mildly creamy with a great cherry skin flavour on the finish. One of the very best beers from Casey.

Batch 2 in comparison to Batch 3 described above seems to fall flat, pun intended. There isn't very much carbonation evident on the mouthfeel, and while there is a strong cherry character, it seems a bit muted, perhaps because of the minimal carbonation. Appearance is similar, a bit darker, perhaps, but otherwise it just seems to lack in all departments when compared to Batch 3. I've not had the fortune of having Batch 1, but I'm told that Batch 3 is very similar with Batch 1 still being the favored batch. Take that for what you will.

Batch 3

Holy moly this is hot fire. Massive pie and tart cherry mixed with light funk on the nose. Taste is like that perfect slice of pie that's just tart enough to keep you going back for another bite. Funk plays in perfectly, and carb is perfect. Best beer Troy has made, IMO. Significantly better than batch 1 was fresh, and this has the makings of a beer that is only going to get better with time. Amazing.

another gem from casey, one of the first ones i have ever had on tap. its got a beautiful pale red to pink color with a soft haze to it and just a thin white layer of head. the nose is crazy intense on the fruit, smells like pie cherries, tangy but sweet too, with a great lambic style base, wheaty, funky, and driven by some mature lacto and the acidity it brings. i am thinking in the flavor that the cherries themselves have to be quite sweet. most of the sourness in this beer, at least to me, appears to come from wild yeast and not the fruit itself. the beer isnt sweet, but the fruit sort of goes back and forth between cherries off the tree and pie cherries from a can, still a little tart, but more sweet i reckon. oak and funk dominate in the middle, and work really well with the cherry. it is somehow much lighter in feel than some of the other cut series beers, maybe its the softer carbonation, could be a product of the draft/bottle difference, but this has a great lightness to it. casey is killing it right now, and while this kriek type almost seems like too much cherry, the flavors come together really well in the end, and this is another brilliant example of american wild ale. the oak is really prominent and the flavor lingers nicely on the tongue. on tap at freshcraft.

edit: just had a batch one of this, and wow, it has really matured nicely, far drier than i remember it being when fresh, but without any of the cherry fading. enormously complex stuff, more lambicy too, just splendid. if you have one of these in your cellar, now is the time!

Batch 1

This beer is just about a perfect AWA. It is a stunning cherry red, beautiful nose of cherry skins, cherry juice and mild funk. Taste is an amazing bouquet of fresh cherries and mildly bitter cherry skins with a layer of subtle funk and just a mild tart finish. Mouthfeel is amazing, crisp and refreshing without being too dry. Not much to say, just one of the best AWA I've ever had.

This was batch 2, served at the release 3/5/16. I was quite surprised how clean this beer is. No haze, easily see through and extremely still. Very little carbonation. Smell is cherry skin, tart with that Oak Theory funk. Taste was a great soft sour but I didn't get an explosion of cherry as described. I'm going to sit on my bottles because I think this could become a monster in time.

Enjoyed at the brewery. Pour is red, red, red, Nose is cherries with mild funk, but the cherries are overwhelming. Taste follows the nose. Absolutely cherry bomb with mild funk in the background. Enjoyed this thoroughly.

This is a beautiful beer. Bright but deep red with a wine-like appearance. Glowing. Beautiful. 5

Fresh cherry pulp, tart cherry, red wine, vanilla. Lovely blend of smells. 4.5

This is awesome. Bold, tart, pulpy tart cherry flavor with a bit of a earthy, orchard twist. What really stands out here is the subtle spice that seems like cinnamon and nutmeg but tastes very pie-like. Such an excellent attribute to this beer. 4.75

Tart, vinous, dry, silky smooth, earthy and mildly spiced. 4.5

Lovely beer.

Beautiful pink color. Smell is cheesy funk and sweet cherries. Flavor is unique and beautiful balance of sweet and tart cherries. Cheesy funk with some earthy lemon and mineral flavor as well. Delicate and complex. No one aspect really stands out above the others. Very balanced and delicious.

An incredibly unique cherry flavor - the sweetness dried out, leaving a purfumed, ethereal cherry flavor. Light and delicate but lingering. Slight mustiness and tannins sweep in.

750 mL bottle poured into a snifter. Hazy bright red/pink body. Small white head. Cherry aroma is nice. Kinda jammy and juicy. Oak. A little musty. Taste is very similar, but has a tannic quality. Oak and strong, deep cherry flavor. Wine flavor is pretty strong in the back end. Moderate sourness. Medium body. Impressive fruit flavor that dominates everything else.

Appearance: Looks like a glass of cherry pie. Bright glowing red.
Smell: Ripe cherries, juicy, funky, hint of tartness.
Tastes: Softer than most krieks acidity, similar levels to Cantillon. Intense cherry, funky barnyard, very complex, long finish for the style. Blew away many Lambic-Kriek in a blind side by side.
One of the best American beers ever made.

Appearance: Glowing red appearance. Beautiful color.
Smell: Tons of Balaton cherry on your face cpuled with a great deal of funky like most Casey beer.
Taste: Similar to the nose. Tons of cherry yet very funky at the same time. Acidity is perfectly balanced.
Feel: Medium body with a nice mouthfeel, not thin.
Overall: Easily the best cherry fruited american wild beer I have ever had. Looking forward to many magnificent beers from Troy Casey.

Best cherry beer I've had and my favorite by Casey.
Had this in April and May and I left each time with the amazing aftertaste while heading back on I-70. 2.68 lbs of Balaton per gallon!

Funky, Tart, and Dry. Amazingly wonderful. The funky nose on the beer lasts forever and reminds me heavily of the fruited lambics from 3F where the yeast character is front and forward. The cherries are very present, but they don't overwhelm the complexity of the beer like most cherry additions. Wonderful sour.

Tasted at the May release. Simply the most beautiful beer I have ever had the pleasure of enjoying. Pours a deep rich blood orange color with just a wisp on fine head. Cloudy but not quite murky. Nose is predominately the sour cherries and lemon with just a bit of funk in the back. Taste follows the nose and finishes with a pleasant tartness. Another in the line of awesome beers from Casey.

Had the pleasure of trying this at the april release. At the time The beer was still young and had butter notes, but wow, it worked perfectly with this beer. It is the most cherry forward beer iv ever had with a really nice funk. Kinda like a 3f kriek but much better! I cant wait to try this again!

Review from a full glass at the April release in Glenwood Springs. We were happily surprised when Troy brought a case of bottles to the bar for pours before the beer was even released in bottles.

A - This is hands-down the most beautiful looking beer I've ever seen. A vibrant bright red/pink color from the loads and loads of Balaton cherries. There is a 1/4" pinkish-white head that sticks around....unusually long compared to many Casey beers. The vivid color is just incredible.

S - The smell is straight fresh cherry juice. Tons of fruit character, and as it warms there is more funk coming forward as well as a forwarning of acidity.

T - Probably one of the best AWAs I've had the pleasure of tasting. Definitely my favorite cherry beer, no doubt. the fruit character in this beer is just amazing. SO much fruit, and a really nice balance of funk and acidity from the base beer.

F - Really full-bodied and a nice thick mouthfeel. The carbonation is spot-on.

O - Troy said this is his best beer yet, and there's no doubt about that. It's going to be hard to top this beer, even with all of the anticipated future The Cut releases. Getting a pour of this beer as a pre-release surprise, getting my socks knocked off by how good it is, and sitting outside in the sun overlooking the river and mountains....do beer experiences get any better than this?
