From a 750 ml bottle (bottled October 28, 2015) into a tulip glass.

A-The beer is light in color, like dried straw. The head is pretty much white and it clings to the glass as I drink. Retention is good; the one and one-half fingers of foam lasts for quite a while. I can see a few fine bubbles creeping up the murky liquid.

S-The aroma is heavy on the lemon, but tartness is mild to moderate and acidity is subtle. There are some pine and herbal notes too, but the hops are not overwhelming. Rather, the beer smells nicely funky with fruity brett flavors adding to the lemon-hop note.

T-The taste tracks the smell. The beer is lightly tart, not sour, and the flavors are a nice mixture of semi-dry fruity brett funk, lemon, and earthy pine. I don't taste a lot of oak, but the beer is dry and this is definitely a saison and not a juicy, dank fresh-hopped IPA.

M-The body is light in heft and the carbonation is fine and persistent on my palate.

O-This is a nice low-ABV beer. It reminds me of the bieres de table that I enjoy, but with a little hoppy kick. The lemon-pine flavors from the hops might be a touch on the astringent side, but I think that same lemon kick means this beer will pair nicely with food.

750 mL bottle. Very hazy pale yellow. Smell is nicely hoppy. Grapefruit and grass. Pungent. Bretty and a little acidic. Taste is wheaty, crisp, lemony tart. Nice hop flavor again. Grapefruit hop lingers. Light body. Low carbonation. Very nice.

Really enjoyed this. Fruity IPA in the nose. Lemon zest and pine dominate the aroma. Great carbonation laid way to a nice cloud-like head. Taste was tart, with citrus rind similar to lemon/lime with a great pine presence. Great change of pace to the more funky and sour beers of the day.

really fabulous beer, obviously a wet hopped beer bottle two and a half years ago has changed some, this is drinking amazing right now, a lighter and easier drinking saison here, fully wild, bottled in the fall of 2015. it has a lot of lambic characteristics to it, which make me think the wet hops just did their ageing thing in the beer, no alpha acid at all apparently, and still some subtle citrus to this softly hazy vibrant yellow brew. it smells tangy like lemonade, some crisp acidity and soft oaky funk, well mature now and with a very old world rustic sort of vibe. i would not describe this beer as hoppy in any recognizable sense, i suspect it never really was even when it was wet, thats not really what these guys do, but there is a cool uniqueness here leftover from the wet hops in the flavor. to me though it tastes like wild champagne, white grapey and mineral rich and funky as can be, farmy and musty but dry and brilliant and effervescent at the same time, really unique and really good, to me far more compelling than their base saison, but that could be a product of its age as well. feeling lucky to have had this, even if its not obviously wet hopped anymore its real unique. i hope to try this fresh in the fall if they make it again, but do not think the moment has passed, its drinking amazingly well right now!
