This was phenomenal. I could easily argue it's the best Cut Troy has made to date. Slightly golden-hazy appearance. A sweet grape must smell on the nose which is followed on the palate. Light, bubbly, and efferevescent. This was the standout of the April '16 release.

Really sharp sour flavors that open up as the bottle warms. More funk comes out and balances the rich grape flavors. Dry finish leaves plenty of lingering flavor.

A - Bright yellow gold color, nice clarity, lacing is thin but dense and creamy.

S - White grape with lots of funk and some stinky notes. (???)

T - Tart, funky white grapes, citrus, and oak.

M - Light medium body.

O - Puckering, nice oak presence, and refreshing. Recommended.

Bottled January 2016, drank end of May 2016. Poured from 750ml bottle into Fantome Ghost outline tulips - quite pale, clear, lacing quickly disapates. Appears moderately carbonated.

Huge grape aroma hit me as soon as I opened the bottle. A decidedly barnyard element grew after opening, to become the dominant smell. It reminded me of my initial impression of Merci b2. Earthy, musty, complex and wonderful aroma. The smell of sharp Brett phenolics is a perfectly integrated background note.

Taste is more sharply sour than expected. Beautiful grape character, but funky yeast is the star of the show here. Citric acidity, or tartaric I suppose - a bit too bracing. Quite lambic-like.

Carb is moderate (higher than expected, from Casey's own description). I found it spot on actually. Perhaps it carbed up more during its 4 months in the bottle. Lovely mouthfeel, bright and lively. Neither syrupy, nor flabby. Lush.

Overall a fantastic beer. Have more for cellaring and I'm happy about that. I just hope the acidity mellows a bit. Well worth pursuing. A lively sandy haired cousin to the earthy and brooding Merlot Cut, to which I would give the slight edge over this one, but both are world class.

750ml cork and caged bottle. 1/19/2016. Served in a Casey stemmed glass. Pours a clear golden body with a slight orange hue, one finger thick white head, fair retention, not much lacing. In some ways, looks super refreshing, like a clean lager. I know, a weird thing to say about a wild ale. Smell is white vinous sweetness, tart grape must, light oak, mildly funky, touch of lemon and leather, light sulfur. It smells like what it is- Oak Theory with grapes, and that's great. Flavour is similarly complex; lemon, leather, vinous character, light grape must, less sulfuric than on the nose, but a nice moderate acetic tartness to it. And yeah, it tastes like Oak Theory with grapes, which is a good thing in my opinion. Mouthfeel is medium bodied, crisp and refreshing, moderate acetic and musty grape finish. A lot of Cuts suffer from overfruiting which covers up the OT base which is what I feel makes OT so good; for some reason, Riesling seems to complement the base very nicely without simply bulldozing over it. Great wild.

750ml bottle, sticker dated 1.19.16, poured into a Casey oversized wine glass. Enjoyed on 3.26.17, reviewed from Tasting Journal.

The beer pours a nice peach and apricot color, hazy and cloudy with a white head, foamy with decent retention and spots of lace. The aroma is great, soft white grape, musty oak, really well developed funk, vinous with a nice acidity that brings out some peach and soft stone fruit notes with light straw like grain. The flavors are excellent, very tart white grape, peach skin, with some earthy noyaux like flavor , lightly floral with some smooth oak, light wine acidity and a touch of grain. The mouthfeel is nice, coating, medium body that's very lively with lots of carbonation and a tart prickly finish.

Verdict: An excellent wild ale/saison from Casey. A great expression of the Riesling grape and a wonderfully complex beer that is both bright and refreshing. Delicate, approachable and wonderfully tart, a great entry from Casey.

Poured out as a nice golden yellow color with a white head on top. The smell of the beer has a really nice wine-like aroma some subtle oak. The taste I thought has a nice tart Grape flavor with some oak spice in the finish. The feel of the beer is light bodied and well carbonated. Overall this beer was very good in my opinion.
