Man we're still cranking out Sour Fest 2019 reviews, which should be a testament to the awesome selection of beers Hops & Pie in Denver, CO put on that weekend.
Apricot beer pours a yellow orange mixture indicative of the color of apricots themselves. Ah the delicious aroma of apricot, nice, soft and fuzzy, delicious.
Taste and mouth feel, this isn't a wild ale masquerading as a saison, it has the softness of a saison, but a restrained sourness and acidity that keep it from being a full on wild ale with brute force. Its got a nice soft malt body that is relatively neutral and light, a great amount of apricot that still embraces the 'beer' aspect here. Its fun and delicious to drink without having to brace yourself for anything other than the realization that this beer is awesome and I prolly won't ever see it on a shelf, and if I do, it will be between $20-40.
Apricot can be delicious, but pretty sour and acidic in some lesser apricot wild ales (that I still like), but this is clearly top tier stuff in every way, and I was hoping I wouldn't like it given the exclusivity and price tag.

Pouring semi-clear yellow-gold, it fills to an opaque pale yellow with a thin fizzy blanket that quickly dies off to a thin film.
Smell is super fresh and expressive, yet soft and mild, with apricot, apple orchard, and even freshly de-husked corn. Hints of lemon and peach candies emerge on the back end, as well as a moderate breadiness.
This starts soft, round and farm fresh on the palate, not sour or extreme like I've come to expect in other Casey beers. Apricot is very present, with some green apple and hints of clementine, while wild herbs like honeysuckle, as well as honeycomb, support in the background. The swallow gets more tart and sharp, with a thin fizz that disappears quickly to a semi-dry tingle.
