huge thanks to my buddy for sharing this one with me. i cant get enough of the casey stuff right now, and the family preserves series has been incredible. its impressive how many of these different fruits they have already put out, and this shiro plum edition might be my favorite so far. these are the little yellow plums, tart when they are not quite ripe, but insanely sweet and juicy when they get there. this beer showcases them well. the tart skins compliment the wild cultures in the aroma, making this seem more sour than i remember others being, puckery and super mouthwatering. the base has a wonderful grain freshness, wheaty it seems, dry, big and round in feel, a perfect platform for this fruit and yeast. the plums are juicy alright, a bit sweet in the middle, pulpy, and almost tricking me into tasting more tropical fruit, pineapple comes to mind. some vibrant clean acidity here, but what makes this is the classic casey woody bretty funk, fruity in its own right, drying, lively, and distinct to this brewery. as it warms, i get more and more of the plum. its a hard fruit to brew with, and this does seem somewhat less fruity than say the cherry, but they have done an expert job of bringing the subtle plum through the base beer to the forefront, its best appreciated close to room temperature. funky and tangy, not quite piquant, dry, and complex as they come. this is highly refined and absolutely dialed in, no need to cellar at all. the quality here is stunning, amazing use of these yellow plums, and another gem in the casey lineup. thanks again to my friend for sharing this rarity!
