Really well made saison. Perfect carb level. Lighter hay and funk notes. Some grassy Brett flavors. Hint of white grape and vanilla. I'd keep aging this one and let that Brett keep working if I had more.

750mL bottle purchased at the brewery. Pours a hazy burnt golden color with an inch of head. Lots of lacing. Funky aroma with lots of white wine as well as apricots and some citrus. The taste is more citrusy than expected along with the Chardonnay flavor. Hint of wood. Funky, musty, yeasty finish. White wine at the end with citrus peel. Lots of carbonation. Not a style I drink often but I was impressed by the sample at the brewery so I had to buy one. Glad I did. Worth seeking out.

Light Brett funkiness, lemon, grainy and oak. Super carbonated. Very clean finish. Touch of grape, pineapple and white wine. Really refreshing. Could have left it to age and develop a bit more. Personally I like it less funky.

good beer. slight tart. keeping my other tucked away for a while to see what the brett does. lots of flavor layers to this beer. great summer sipper!

Picked up the bottle on Saturday, 6/18, then chilled it and opened it on Sunday for Father's Day. Pouring into a Hill Farmstead glass, Comb Over appears as a slightly hazy bright gold color with a fluffy head that dies down and doesn't leave much lacing.
Smell is really inviting, nice subtle sweetness along with some funky Brett notes and a nice oak from the barrel. Taste is much more layered and nuanced. It starts with a pretty good tart sweetness, notes of lemon and hints of malt. Middle has the chardonnay and barrel characteristics, hint of buttery chardonnay wine here. Finishes with a bit of saison yeast spice and good dose of cheesy funk from the Brett. It become more balanced as the beer warmed, so I recommend letting this one sit for a few minutes if you're pulling it out of the fridge.
So many layers in this beer make it hard to pick apart, but this is just a really awesome mélange of flavors that paired so well with the charcuterie and light appetizers we were enjoying before the Father's Day cookout. Seriously well done, NEBCO.
