Our combination of Pilsner, Pale and Wheat malts along with French hops and an authentic Belgian yeast creates a beer with a distinguished taste, a generous bitterness and a nice balance between body and bite. Unfiltered to keep its character intact.

i would not have guessed this was as strong as it is, partly because i think the alcohol is pretty well hidden, but also because it was served to me in a pint glass at one of those beachside tourist eateries that didnt know how to handle or present this beer. might be some consistency issues too, my brother had the same beer mere days earlier at the same establishment and loved it, then tasted mine and said it was much different and worse, maybe some keg variance going on? in any event, its not bad, just more or less unexciting wheat beer. its murky and a bit thicker, not much head by the time it reaches our table. aroma and flavor of a real warm fermentation, some of those forced fruity notes, white grape and apple, not all the way pleasing, but fine with the wheat and pils malts. a belgian element to the yeast too. it feels a little off, unrefined, but its not at all bad, and drinks relatively easily for what it is. perhaps my biggest critique is not with the beer at all but how it was served. nothing is more unflattering to a beer than serving a strong one in a pint glass, its just absolutely the wrong format for this style, and i think it does no favors at all to the beer. unfortunately this was the only beer from these guys i was able to try on my florida trip, and it wasnt a great first impression. i will make a point to find more next time i am back in the state and give them another shake...

De Labirratorium. En copa Teku. Jugando a Resident Evil 7. Saison con marcado perfil maltoso, en la que las notas funk son claramente discernibles pero se echa en falta que resulte algo más refrescante

Audible pop when uncapping, and an unsurprisingly massive head results. Almost all foam; 5% liquid, even as I moderated the pour. Three pours from a 12 ounce bottle to fit in a 20 ounce glass. Foam is a dirty white, almost light beige. Body is hazy and lively, and a dark orange color, closer in appearance to a hazy amber than to a classic saison. Very good head retention.

Fairly traditional on the nose. A touch of citrus, likely from the hops; bubblegum, pear, and white grape from the yeast; honey and pale grains from the malt. A bit of clove and banana; somewhere in between a classic saison and a Hefeweizen. Just a very light mustiness.

Surprisingly musty and slightly tart on the palate; no mention of Brett on the label, but it definitely has a similar yeast expression. The light tartness is somewhat like lemon-honey tea. Any sense of Hefe from the nose is not remotely expressed on the palate; this is a lightly funky, musty, smooth saison, with a lively medium body, ever so slightly dry.

I'm very pleasantly surprised. This is very enjoyable, and worth re-purchasing. A little heavy bodied for a saison, but that's not surprising at 6.9% ABV, and it's still plenty lively and retains a touch of dryness.

Well put together, but the yeast is not yet to the Belgian standard yet.
However, Siren's Saison is still well-crafted; particularly its buoyant Looks and fruity Smells. I would like to try this with a variety of foods. I'm betting it would pair well.

Started in 2014, this young brewery markets itself well ; at least judged by their website and taproom. I will seek them out more while down here. Focussing on the Belgian styles, it seems, has brought Biscayne Bay's beers into some 250+ local restaurants. Impressive.

A decent saison. Opaque honey colored beer with subtle malt smell. Malty flavor with a hint of sweetness. Nice carbonation with a smooth but crisp finish.
