Notes: Perzik is a spontaneously fermented beer adhering to the Méthode Traditionnelle standard. It was aged for 18-30 months in used French oak barrels before being refermented on over 3 lbs/gal of yellow and white donut peaches from Door County, WI.

Drank 7/20/19 @ the Yarchives; poured from the bottle.

This started as a fairly straight forward tart peach bomb; assertive & simple.

Once warm, however, it's depth was revealed; other citrus notes and a more mature sourness emerged & I was fairly blown away. A really nice beer.

Appearance: poured peach flesh color with full translucence. No foam present after pouring.

Aroma: lots of funk with some oak and vinous quality. Tart with just subtle notes of peach. A bit more nectarine forward.

Taste: strong showcases of yeast funkiness delivering that traditional Lambic quality. It is sour with mild acidity that is perfectly balanced out by the sweetness of the beer. There is just light notes of peach (surprisingly I found their Cassis more peach forward). Modest oak throughout.

Mouthfeel: medium bodied, carbonation perfect. Absolutely no harshness from the acidity.

Overall: truly outstanding! For anyone wanting a quality Lambic, this is it. Peaches were there but maybe underwhelming. But still solid nonetheless!
