A - Pours a dark ruby red with a two finger foamy off white head. Light soapy lacing.

S - Aroma is tart cherry, green apple, plum and oak.

T - The taste starts with brown sugar, toffee and raisin. The sweetness fades into green apple, tart cherries, plums and a good amount oak and leather.

M - Medium bodied with medium carbonation. Soft creamy mouthfeel with a nice dry finish.

O - This is an excellent sour Quad. The balance of sweet and tart is perfect definetly recommended.

500 ml bottle into chalice, bottled on 1/14/2015. Batch year 2013, 11.5%. Barrels 136, 138-140. Pours slightly hazy ruby red/copper color with a small dense light khaki head with good retention, that reduces to a thin cap that lingers. Light spotty soapy lacing clings on the glass, with a good amount of streaming carbonation retaining the cap. Aromas of big raisin, plum, tart cherry, cranberry, fig, apple, caramel, brown sugar, toffee, vanilla, toasted oak, leather, funk, light red wine vinegar, light pepper, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/acidic yeast, dark malt, and oak barrel notes; with great strength. Taste of big raisin, plum, tart cherry, cranberry, fig, apple, caramel, brown sugar, toffee, vanilla, toasted oak, leather, funk, light red wine vinegar, light pepper, and yeast/oak earthiness. Light-moderate fruity/tannic tartness and yeast/oak spiciness on the finish; with lingering notes of raisin, plum, cherry, cranberry, fig, apple, caramel, brown sugar, toffee, vanilla, toasted oak, leather, funk, and yeast/oak earthiness on the finish for a while. Damn nice complexity, robustness, and balance of fruity/funky/acidic yeast, dark malt, and oak barrel flavors; with a great malt/tart/spiciness balance and zero cloying flavors after the finish. Medium carbonation and medium-full bodied; with a very smooth, moderately acidic/tannic, and lightly slick mouthfeel that is great. Alcohol is very well hidden with only a light warmth present after the finish. Overall this is an excellent sour quadrupel style. All around great complexity, robustness, and balance of fruity/funky/acidic yeast, dark malt, and oak barrel flavors; and very smooth to sip on for the big ABV. A very enjoyable offering.

Amber colored ale with surprising clarity. Big egg shell colored foam on the pour.

Lactic, cider aroma. Plenty of oak and dark fruit.

Sweet malts in the beginning. Apples and figs. Mild lactic and cider-like tartness. Lots of funkiness.

Full bodied. Syrupy feel. Alcohol well hidden. Low carbonation.

Pretty complex. A little less sour than I would like but still very good.
