Much has changed in 10 years since I first reviewed one of my favorite beers. Kirby no longer brews the great German styles that made Capital famous and it seems the brewery has had some recipe troubles over the past few years. But it's been reported that the Maibock (once diacetyl troubled) may be back on the right track -- let's see.

12 ounce can with no discernible dating. 6.2 ABV clearly stated on the label.

L -- Pours a clear, deep golden with a dense and firm off-white head.

S -- Lightly bready malts with some mild peppery alcohol and DMS.

T -- Mellow breadiness with a doughy character and spicy hops in balance. Light pepperiness from alcohol in the finish and the doughy bread makes a return for the aftertaste along with mild hop earthiness and light citrus.

F -- Mouthfeel is soft and smooth with a light-medium to medium body.

O -- I think the bugs have been worked out, no off flavors that used to plague the beer in the past. This is a very good rendition of one of my favorite German styles, it will be a seasonal staple in my fridge again.

2007 edition of one of my favorite styles from my favorite micro. Not sure why this year's offering shines this year - mood, previous string of brews consumed, just the need for a good, precision lager? Whatever - this batch is deelightful!

Poured a deep gold with a billowy white head that settles quickly, aroma of bready malt and light noble hops in great harmony -- slight pepperiness from alcohol.

Wrap all of the aroma characteristics into the flavor and add a slight, sweet nuttiness, a medium-light body with a soft mouth-feel, a dry finish and you have one of the best beer experiences outside Munich itself.

Agreed - here's to Kirby's fine art!

Bready, earthy aroma, perhaps some caramel and fruit. Attractive golden color accented by rising carbonation bubbles. Topped with a 1 inch thick, creamy off-white head receding at a moderate pace. Substantialness to the feel, not thin. Thick-tasting (if that makes any sense). Bready with a touch of spiciness and fruit. The spiciness provides a nice balance to the bready malts, since there is not much bittering at all. Not sweet, but nicely balanced. Very enjoyable spring-time seasonal.

Clear copper color. 3-4 finger head from the can and very active. Great head retention. Smells German, naturally. Malty and some bread. Tastes quite sweet and malty. Similar to a Festbier. Feels a bit on the thinner side but decent. Remained very active. A good beer. I haven't had many Maibocks to compare, but it is an easy drinking beer.

Golden, copper and yellow together at last, 3/4" white head. Aroma was grass.

Taste gave up some caramel I wasn't expecting, grass again. Notes of apple. Highly carbonated. Some toffee malt notes. Spice rack de minimus. Hops there enough to bring it approaching balance, but ultimately the bready notes and all the toffee/caramel stuff keep this leaning on the malt body side of things versus anything else.

A nice treat that I'd like to find again next year as this doesn't seem to stay long here in Chicago.
It looks a bit blonder than expected, but a beautiful head ... with enough lace sticking around.
Aroma and taste are very similar until after the swallow and then this, let's say, butterscotch maltiness, appears. And that is pleasant and appreciated. I could use a few less bubbles in this Maibock.

Had again in Fall and there were less bubbles; hence, a .25 upwards rating in Feel. Lesson: patience improves.
