Notes: A hoppy saison brewed with wheat and aged in oak with brett.

This batch was aged for over three months in our foudre with brettanomyces and then dry hopped. Refermented in the bottle with brettanomyces.

750ml bottle, no date seen, poured into a 14oz snifter glass. Enjoyed on 6.3.17, reviewed from Tasting Journal.

The beer pours a nice golden color, hazy and cloudy with lemon hues and a big, white, foamy head that has great retention and yields spots of lace. The aroma is pleasant, nice funky bretty character, a bit musty, strong wheat aromas with plenty of hops, green, grassy, floral, citrusy but still delicate and offering some nice fruit esters. The flavors are nice, hoppy for sure with a more earthy expression, a hint of pine, dirty and grassy with strong bretty funk, light fruitiness and hearty wheat. The mouthfeel is lively, coating, bubbly medium body with a more bitter and dry finish.

Verdict: A good hoppy saison from Holy Mountain. This reminds me a lot of Dorothy from Hill Farmstead. Nice expression of Brett complimented with fruity and grassy hops. A great beer for summer.

Foudre Aged Hoppy saison
6.5% abv (on the bottle)
No bottle date but purchased 10/1/15 at the brewery

A: pour cloudy orange yellow with several fingers of creamy head.
S: smells. get sugary pineapple juice, guava initially and then musty, farmhouse funk from the brett. Get some spices and esters from the saison yeast.
T: Upfront get fruit notes from the nose (pineapple, guava, apple skins) followed by spicy clove and black peppercorns, and funky hay, dried leaves and oakiness. finises crisp, slightly bitter, slight plastic note
M: medium, initially creamy but there is a crispness in the finish.
O: I really enjoyed this beer, especially the light fruitiness from the hops and brett and complex farmhouse underlying. This sort of toes the line between hoppy saison, Belgian ipa and brett ipa. Only complaint is tht the finish is a little bitter for a saison (maybe a combination of the hops and foudre aging?). I would be happy to have this again.

L: Light yellow
S: Strong brett notes.
T: A rush of brett into hop notes. There is a light hint of saison at the hint with oak. This is more of a hoppy beer with saison, rather than saison with hops.
F: Light brett hoppy beer.
O: A light hoppy beer. Nothing too exciting but enjoyable.

Appeareance: Pours with a very imressive head capping the cloudy golden liquid; the head fades somewhat quickly though there are plenty of strands left behind

Smell: Bready and funky, with a lemon aspect; the hops add a bitter element to the aroma

Taste: Funk and hop tones jut forward and build, with a lemony tone; peppery, with a spicy rye character, in the middle; the finish is a return to the start, with the funk and the hops battling it out to a draw

Mouthfeel: Light to medium body with moderate carbonation

Overall: Saison, Brett and hops equal quite a combination; I wouldn't drink this every day but it is an interesting combination that reminds me of some of Crooked Stave's efforts in this regard

A: The beer is hazy light yellow in color and has a light amount of visible carbonation. It poured with a finger and a half high white head that gradually died down but has excellent retention properties, consistently leaving a short head and lots of bubbles down the sides of the glass.
S: Light to moderate aromas of yeast and brett funk are present in the nose.
T: The taste follows the smell, but isn't as funky as I would have expected as they seem to be diminished a bit by the underlying malts. There are also some hints of oak and peppery spices.
M: It feels light- to medium-bodied on the palate and has a moderate amount of carbonation.
O: This saison isn't as dry and spicy compared to other beers in the style but is rather easy to drink and has some refreshing properties.

On tap at The Beermongers.

A clear straw yellow with a dense, off-white head with good retention and lacing, this looks good. The nose is super rustic, grainy, moderately spicy and honey with plenty of phenols. Grainy and straw-like. The palate is grainy, phenolic, earthy with moderate hop bitterness, with citrus, lemon zest, mildly floral honey. This is really really spicy. Drying finish, grainy, rustic and phenolic. Solid.

Hoppy Saison??? aroma is actually the best thing about this beer, lots of tropical notes but not a typical saison smell. Maybe i have not had a lot of hoppy saisons but this beer was a clash of flavors it did not taste like a saison and the "hoppy" part just gave a weird apple flavor. Lingers on your palate in a funky bad way. Not a fan

750 mL bottle. Hazy bright yellow. Smells of lemony hops. A little funky. Taste is lemony. Wheat. Light tartness. Oak is substantial in the back end. Light body and crisp. Well carbonated. Lingering hop bitterness and some brett makes an appearance. Flavorful and really nice.

On tap at Duck Island Ale House in Seattle. Brewery says this is made with Galaxy hops. It has a beautiful tall creamy head in the big snifter. Fruity aroma is inviting. Interesting mix of the yeasty bitterness with the hops.

Dries out totally with the Belgian yeasty effect. The bitter edge seems to take over after some sipping. Interesting but the drinkability suffers. Still it's a great experience with the hops. [from May 2014 notes]
