750 ml bottle- Pours hazy golden with medium white head that reduces leaving a thin blanket and collar. Aroma is funky brett, lemon, yeaty, grass, wet hay, barnyard funk, yet clean and refreshing. The taste is yeaty, bretty goodness, lemon, medium light tartness, old books. Good brett beer, not much if anything to complain about here.

750 ml bottle from the brewery. This is Blend #3. Aroma is oak, lacto, vanilla, lemon, peppery; some light brett character comes out after it warms in the glass a bit. Pours slightly hazy golden with a white head with good retention. Taste is sour (8/10), oaky, some tannic dryness. Has a somewhat sauvignon blanc-like character; not getting any red wine notes here. More like an American sour/wild ale than your typical saison, which is fine with me right now. Mouthfeel is just right for me--not too foamy, not too thin. Tasty as fuck, for sure.

750ml bottle split between a pair of snifters. I don't see a date. Lots of beer left in the bottle, so I didn't get any sediment that may be in there.

Pours crystal clear golden, with an initially large coarse head that settles quickly into a medium creamy head that fades again fairly quickly to a middling layer of head. Lots of carbonation. Pretty beer. Smell is total saison. I need to learn the words for this. Lemon, flowers, some brett funk, smells really good.

Taste is very tart -- much tarter than the aroma suggested. More lemon, apricot and/or peach. Initially abrasive, but I'm warming up to it.

Mouthfeel is smooth and silky. Overall, I'm pretty impressed with this beer.

Blend Two. Super earthy, effervescent, funky. Big fan of this beer, and hoping to get more beers from Holy Mountain.

750ml bottle of blend #2, dated April 2015. Served in a stemmed glass 1/18/2016.

The bottle gushed as it opened. Hm. Pours a slightly hazy light orange, yellow body. Four finger white head, a bit more retention than I'd like, nice rings of lacing. Smells of citrus, a bit of minerals, a heavy blanket of mustiness, peppercorn, mild graininess. Flavour is a bit different. A bit of grainy sweetness, lemon peel, minerals, mild hairstyling product; not nail polish but more of a synthetic, plastic-like smokiness that takes some getting used to. A bit of oak astringency. Mouthfeel is medium bodied, nice carbonation, not too prickly despite the pour. Finish is a mild plastic-like astringency. Overall, it works reasonably well with some flavours that seem different than most saisons. That one flavour back there seems somewhat synthetic but not necessarily in a bad way. An interesting first try from Holy Mountain and it makes me curious to try more of their offerings.

750mL (Blend #2, April 2015) into a tulip. Pours a hazy pale golden color w/ a towering white foamy head that leaves behind clumps of lace.

Aroma is funky, earthy, rustic, bready, spicy.

Taste is surprisingly fruity and sweet, almost like a tripel. Pale bready malt, dried apricots, maybe some candi sugar. Pears and apples too. Oak, brett, juicy orange.

Mouthfeel is crisp and refreshing, medium body. Silky smooth, perfect carbonation.

Overall another outstanding brew from Holy Mountain. They make this look easy.
