Notes: Pale and aromatic, with a soft minerality, Witchfinder is a refreshing young saison, brewed with pilsner malt and wheat, and fermented with a mixed culture of saison strains. Hopped with Saaz and Amarillo, this farmhouse style beer is full of floral and citrus hop notes, and juicy fruit esters.

750ml capped bottle served in a snifter. Any sediment should still be in the bottle. I don't see a date.

Pours hazy yellow with a moderately sized head and surprisingly good retention. Lots of active carbonation. Smell is green plants, a little funky spice.

Taste is actually surprisingly tart -- I wasn't expecting that. Aside from the lemony tartness, I'd say it follows the nose pretty well. It has an extremely dry and increasingly bitter finish. Interesting.

Mouthfeel is very dry, very carbonated. Overall, very nice beer.

really outstanding stuff, i have loved each of the few beers i have had from these guys, so refined and delicious. this one is pretty subtle, traditional, like a table beer of sorts, not too strong, too hoppy, too anything, its mellow and delicious and drinkable forever. very pale in color, a watered down straw looking color, shiny in the light, dull out of it, with a very fizzy soda looking head and wonderfully upbeat carbonation. aroma of white wine, slight bretty funk, dry citrus, and grassy hops that have to be saaz. it almost like a pilsener and saison hybrid with the saaz hops in the taste on top of the fresh dry european pils malt, that half of the equation makes for a pretty cool saison when the wild yeasts come in. i really like the balance between bacterial and bretty here, just a little acidic pucker, a dry rustic funk that doesnt overtake the beer, and a new school hop flavor as well beyond the saaz, citra maybe. infinitely refreshing, crisp, sauv blanc-like, just hoppy enough, light but flavorful on the grain, and effervescent and delicate on the feel. holy mountain nailed this one, and seems to have the wild saison category pretty darn well dialed in. brilliant beer, woefully underrated here on BA.

750ml bottle from last night’s share. Body is cloudy orangish-pink color capped with a soft white head. Nose is starts off with typical saison characters, some Brett and some savory spice. taste again leans hard on the saison and yeast, wh ile the spiciness plays in the background.

This one pours a golden yellow-ish orange color, with a big voluminous head, and lots of lacing.

Smells like grass, lemon zest and lemon rind, clove, slight Brett, and orange peel.

I'm impressed with the small sample of Holy Mountain stuff I've been lucky enough to try. This seems like there's a bit of Brett in the mixed culture here, it's got a little bit of that sharp cheesy Brett to it, with grass, clove, lemon and orange. It's got a surprisingly strong hop character to it, lots of pine and grassiness.

This is lighter bodied, crisp and super drinkable, with a higher level of carbonation.

I could drink a ton of this and it would make me super happy.
