my first from these guys, and what a treat it is. a beautiful light saison fermented entirely in oak. in some ways, its not all that different from what some of the heavy hitters around the country are doing, at least stylistically, but the execution and the end result are quite distinct. i really dug this, we all did. incredibly pale in color, washed out lighter than yellow base, huge airy white head with great retention, and more clarity than expected for what it is, just a little cloudiness, but you can still see a lot of fizzy bubbles exploding to the surface. it smells light for an oak fermented beer too, not as heavy and woody as they can be, and perhaps not quite as funky as anticipated, although it definitely has some mustiness to it through the grain driven base. wheat and maybe some belgian pils in the grain bill, its flavorful but delicate and clean. way more of the wood in the taste than the smell, and quite a bit more yeast character as well. not bretty necessarily, maybe mildly so, but there is a barnyard element to it, almost belgian, unique for sure, must be a house blend of strains. there are some hops here too, grassy and a little bitter, but also with a delicate citrus quality, mandarin orange or something. its awesome on the whole, insanely easy drinking with the champagne carbonation and dryness. i would love to get my hands on some of their other stuff, this seems like one of their more straight forward brews, as process intensive as it is. beautiful and memorable saison.

Bought at Beer Star in Seattle, WA. ~15$ for a 750 mL bottle. Bottled 08/2021, consumed 10/16/22. Poured into a 10oz snifter glass.
A&S: Translucent apricot-colored beer. A small rim of white head, no lacing. Lively little carbonation bubbles rise up from the bottom. The smell consists of sweet malts, floral and grassy hops, and apple cider.
T&M: While fairly cold, the taste is primarily tart, lemon zest. Acidic. As it warms, I get hints of peach, white grapes, and funk. Tastes stronger than 6.5% AVB. The feel is very smooth, light, and well-balanced with a kick of carbonation.
Overall: Very happy with this beer. My first time trying beer from this brewery. I had fairly high expectations and this beer slightly exceeded those expectations.

This one pours a slightly hazy orange color, with a small head, and not much lacing.
This smells like sweet maltiness, bready Brett, lemon funk, floral hops, and grass.
This is quite good. It's got an intriguing bready and malty sweetness, with a Brett character reminiscent of sourdough and lemon. There's a nice floral funk and hop character, too, with some stone fruit, too.
This is light bodied, crisp and very clean, with a great level of drinkability.
Like basically every saison I've tried from them, this is quite great. Holy Mountain can basically do no wrong in my eyes.

750ml bottle. Served in a snifter glass. Golden straw yellow body, slightly unfiltered, one finger white head. Fair retention, no lacing. Smell is oaky leathery funk; fairly brett-forward but with a nice sweet malted presence; light white vinous dryness, touch of toasted bread. Flavour is a bit more blended in- light-moderate acetic dryness, light malt, white wine, oak, touch of leather, fair bit of citrus and lemon. In a lot of ways this reminds me of Hill Farmstead Florence in how tart it is but still maintaining that lemon Brett presence. Mouthfeel is medium bodied, good carbonation, refreshing, easily drinkable. Solid oak-aged saison.

Saturated orange amber color, thin ring of bubbles.
Weird cidery acidity in the nose, not especially funky or clean.
Taste is better, dry and oaky with some puckering citrus acidity.
Crisp and effervescent, light bodied, fairly bone dry.
Overall this was still kicking, and nice to try.

Either quite under-rated or a bit more time in the bottle has done this well. Pours a bit darker orange than expected with a creamy head. Citrus, faint musty hay bales, crushed dried flowers. Soft feel and medium body, rounder and more citrus and mixed-culture must as it warms.
