VESPER is a table beer conditioned with Brett. It was brewed with Pilsner malt, flaked rye, and wheat, and lightly hopped with Styrian Golding and Cascade. Vesper was fermented in stainless with one of our favorite strains of Belgian yeast and then bottle conditioned with Brett.

I had this beer on-tap in a tulip at the Holy Mountain Phinney Ridge taproom.
Appearance: pale golden yellow hue with just a dash of haze and a finger of eggshell foam atop.
Smell: a nice level of sweetness and tartness and funk that reads as candylike. Very good and I’m hoping this is indicative of what’s to come!
Taste: light and crisp with a dash of maltiness and a bit of funky sourness. It’s quite light, which is not unexpected, but good.
Mouthfeel: medium light body but with plenty of carbonation and a good creaminess.
Overall: super drinkable at 3.8%. Flavorful and quenching; I could drink a lot of this in the sun.

sort of a grisette type table beer here, stuff of brilliance, thanks to my buddy for sharing. this has everything i want in the style, mixed grains for one, the oats and rye do a lot here, earthy and spicy and with some body, but it stays light with the pils malt the rest of the way, its also got multiple fermenters at work, belgian yeast and brett both, so there is some real complexity in the ferment, the belgian strain is well restrained, while the brett is quite developed, this shows some mastery over process and specifics, which is to be expected from hoy mountain, its also super low alcohol, and massively effervescent, so it drinks both refreshing and eventful, i loved this. the funk is great in the taste, all on the back end, a brett brux type i would think although i dont know for sure, and the absence of woodiness makes this clean for being farmy, cool. i like the hop bitterness at the end, makes it seem european to me, and this really has a little bit of everything for being so mild and drinkable. i thought this was amazing, desert island kind of stuff, something with infinite intrigue and high consumption potential. the bottle conditioning is epic too, belgian level good here. im sure its amazing with oysters, weird cheese, or just about anything you would eat on a picnic blanket. splendid overall quality, this is the kind of thing that makes me love these guys so much!

Straw appearance with significant white head that dissipates slowly. Aroma is s mild pleasant slightly sour fruit. Taste is also a pleasant mild slightly sour fruit.

This one pours a light and clear yellow color, with a small white head, and lots of lacing.
This smells like pear, clove, hay, stone fruit, and grassiness.
This is quite simple, but very tasty and very well done. It's super drinkable, with a light and fruity funkiness. There's some creamy pear and stone fruit, a touch of oak, some grassy bitterness, and a touch of lemon. It's all very well integrated.
This is light bodied, crisp and very clean, with a very high level of drinkability.
Holy Mountain has done it yet again.

It is good to see this low-ABV rewarded with a solid average rating of 4.
Vesper Looks average, but immediately jumps to its above average game and Smells of delicate fruits, slightly tart and funky. Tastes come in genuine and similar with a nice thirst-quenching crispness. Finishes that way, too. I had this over three successive lunches and have to say it is a very versatile table beer. By the third day, Vesper had lost its fizz but not its intent.
I give Holy Mountain a few extra Overall hugs for figuring out the Belgian craft. I look forward to trying more and see how much their house yeast keeps its consistency.

Drank on tap at Engine House 9. Very crisp and refreshing, wonderfully balance and bright. Loved the low ABV. Will definitely seek this one out again.

Taste is likewise crisp and bright, thirst-quenching.
Mouthfeel is balanced and goes down easy and clean, like water. A session beer if I ever had one.
Overall a great table beer, super drinkable and refreshing. Would be perfect on a hot summer day.
