Served in 9 oz snifter glasses, the color appears a dark chestnut - partly because of the wide glass, a modest creamy head settles out quite quickly; there is almost no carbonation here.

Intense aroma, very aromatic, phenolic, organic solvent. Very intense attack on the palate, right away announces "big beer." Unlike other high end DIPAs, the entry was not particularly sweet at the beginning, bitterness and Mediterranean herbs dominate, very lingering finish. The taste profile is evolving as it is still quite young.

To find something like this in a little neighbourhood bar just down the street - it's amazing.

Some of the batch will be aged in a bourbon barrel - should be interesting.

A- Served to me in an 11oz snifter glass with a 1-finger head. Serving size was 9 oz. This beer was much darker than I expected. Low light in the bar made it hard to tell if it was dark brown or black, but it showed some red highlights.

S- Almost all hops.

T- I wasn't expecting so much balance. IPA hop flavor to begin, but underwritten with so much malt it was incredible. Definite caramel, coffee, and an unmistakable chocolate flavor. I was totally awed by this much taste and balance from an IPA. No noticeable alcohol.

M- Very thick, probably because of all the malts. Ample carbonation, far more than most high-alcohol brews.

D- With the balanced flavor and great mouthfeel, I think anybody could drink this beer all night. The only reason I didn't get a growler was that it was 64 bucks.
