Notes: What do you do when customers say "I love hoppy beers"? Well, if you're any other brewery you might brew 6 different IPA's for them to choose from, but if you're Monkless, you capitulate, and dry hop your classic Belgian Tripel. We took one of our favorite beers, The Trinity, and dry hopped it to add a blast of flowery, citrusy hop aroma.

A: The beer is hazy pale golden yellow in color and has a light to moderate amount of visible carbonation. It poured with a half finger high bright white head that left a large patch of bubbles on the surface and lacing down the sides of the glass.
S: Light to moderate aromas of spicy and fruity yeast (with notes of green apples and grapes) are present in the nose along with hints of candi sugar.
T: The taste has flavors of spicy yeast and candi sugar.
M: It feels medium-bodied on the palate and has a moderate amount of carbonation.
O: You can definitely tell that this beer is strong given the amount of candi sugars, but there are enough spicy flavors to help balance things out and any outright flavors of alcohol are very well masked.

Pours a nice bright sunny yellow with a nice sized frothy white head.
Spicy, yeasty , bright fresh aroma. Pears and peach kin followed by
Taste the same beautiful and elegant. Semi sweey like a nice white wine.
Good mellow mouth feel.' No alcohol tasted
Very nice easy drinking triple.

Clear deep gold with two fingers of cream color ten minute head. Swirling rings of lace.
Smell is yeast malt funk.
Taste is yeast malts herbal hops with some floral hop notes also.
Mouthfeel is medium with good carbonation. The finish is dry and balanced.
Overall a tasty and interesting take on this style.

Poured into a Gulden Draak tulip. Pours a medium golden amber with a healthy three finger white head with good retention and lacing.Aroma of grainy malt, apple, lemon, clove and a hint of funk. Flavor is grainy malt, light citrus and grassy hops, clove, lemon, Belgian yeast, dry grass. Medium bodied with light creaminess and good carbonation. An odd hybrid of Western IPA hops and a modest tripel, closer to a Belgian IPA than a tripel in flavor, although the malt, clove and fruity yeast lean to the tripel. Interesting, but a bit muddled; I haven't had a tripel for a while and this is idiosyncratic enough to miss the mark for the traditional style. After I accepted the hoppy tripel premise, this did grow a bit on me, and I'd be surprised if I didn't want to try it again in the future.
