Nothing like a quad. Quads shouldn't be sour. Maybe the style is wrong for this entry?

On tap at Phantom Carriage in Carson, CA.

Pours an almost opaque super dark orange-brown with a foamy dark khaki head that settles to wisps of film on top of the beer. Small dots of lace form around the glass on the drink down. Smell is sour with dark fruit, prune juice, funk, and acidic aromas. Taste is much the same with sour dark fruit, raisin, and prune juice flavors on the finish. There is a mild amount of acidity on the palate with each sip. This beer has a lower level of carbonation with a slightly crisp mouthfeel. Overall, this is a pretty good beer with lots of sour dark fruit characteristics all around.

Serving type: on tap.

a pretty darn enjoyable beer here, never had one quite like this. dark, looks like a deep brown or even porter, with a little red glow along the edges in bright light, and a sturdy inch of dark tan head. it smells amazing, red wine all the way, lots of oak, tart cherry, rum raisin, belgian candy sugar and the accompanying belgian yeast esters that go with it, dried fig, molasses, chocolate malt, black tea, lots going on to say the least. the dark grains are deeper than i normally think of when i think quads, more roast to this, more of a porter or a brown there. the sourness is very prominent, but its a lot more than just a pucker. red wine and oak tannins are there all the way with the mixed culture, some woody musty funk is there too, quite developed. tons of red wine on this, i wonder how long it spent in the barrels. it almost seems like it has to have been made with the grapes themselves, its that forward. well carbonated, lots of body, but the thing that gets the the most is how well hidden its strength is, it doesnt drink anywhere near this strong. in a world where everyone is making sours that taste the same, this is an impressive departure from the generic. very well done!

This is sour perfection. A high ABV quad made with a bouquet of souring bacteria specifically cultured over a decade to handle the high alcohol environment has mouth puckering tart character, with dark fruit and yeasty esters. The aging in used Cabernet Sauvignon barrels gives this a lush and decadent mouthfeel.
