12oz brown bottle, sample from the brewery.

Brilliant deep golden hue, thin but tight lacing. Big Mosaic hop aroma with suggestions of cedar, orange pith, earthy grass, & mango skin. Quite bitter, smooth with a medium body. Bread maltiness with a warming alcohol. Citrusy hop with faint evergreen and cedar flavors from the hops. Fun to have these single hop, single malt beers while there is not as much depth there is still a lot of flavor.

Color is a lovely pale with a slight orangey or reddish blush. No hop haze from dry hopping, no real chill haze and very clear. Stream of bubbles rising to the top to meet a just white head of creamy foam, bubbles that lasted and fell very well. 8.1%

Nose is tropical and mango! Good firm herbal, thin honey like nectar for malt with a slighter floral background. So this floral did not provide the idea of sweetness, the fruitiness did. The malt on the nose is but a softness. A crackery light scent that maybe is kissed by a little nectar like sweetness . Not awfully complex except in that you can really see both the fruit and thee herbal from this hop. The herbal is shy, the fruit is stone fruity and ripe.

The drink is "juicy." It also has plenty of malt character. In fact the malt they used is rather forward I think and delightfully so. It is soft, graceful and supple on the tongue even though it appears mostly neutral on the nose. That's good because that is how you experience all the fruitiness. It gives a dynamic weight to the mouthfeel that is satisfying to the palate but not heavy. It's just a softness on the tastebuds that envelops them and then the fruit is simply juicy. Mango, peach a light lemon citric backing. Even though there is no alcohol on the nose or on the palate this beer has a light sweetness from the booze that enhances the fruit but does not really touch the finish. The herbal is firm but not forward. It's kind of prickly and I love it. I think this hop can appear catty or oniony but in this beer it does not. In fact the spice that I am seeing is more like a light earthy pine. This beer finishes soft creamy and medium dry. It's just bitter so that the fruit stays on the palate throughout the drink and into the aftertaste. That bitterness actually shows you the sweetness in the beer. This beer finishes like it starts. Perfect! Hoppy and bitter but not over the top.

12 oz bottle, "DOB 5/31/17" printed on the label....so not as super fresh as I would like it, but not a terrible amount of time in the bottle...about 3 1/2 months.

Quite typical IPA look to this one...almond amber, slight haze, light tan mini cap and leaving some strands of fine lace.

Some pine and citrus on the nose, on the muted side.

What this one lacks in the super wow, fresh and flavorful department, it makes up for in the smooth, drinkable and yummy/balanced department.....resiny/piney/citric hops, merging with a nice underbelly of maple malt....all with the 8.1% alcohol nowhere to be found...smooth and tasty, nice creation in brewing, all with a few mellowing months in the bottle. Worthy and dangerously drinkable.

Appearance: Nice looking glass of beer. Slightly hazy deep gold/amber beneath a rocky head of off-white. Very good head retention indecent enough lacing.

Aroma: Malty and hoppy with a hint of caramel and minty/citrusy-tropical notes (mainly orange like marmalade).

Flavor: The flavor follows the aroma with the addition of some woodiness and berry-like fruitiness; and it's surprisingly well-balanced between malty sweetness, bitterness, and a flicker of alcohol. The malt and hop components come together nicely, perhaps enhancing each other, but also combining as "one". The alcohol shows just as much as it should for a double IPA, letting you know it's there but not really cutting into its drinkability. An interesting note of blueberry in the finish leaves it refreshing and brings your palate 'round for another go!

Mouthfeel: Medium bodied, but almost seemingly lighter if that makes any sense. The carbonation might be the cause, and it's similar: crisp, but gently so, and then smooth.

Overall: I wasn't expecting much of this to be honest, but I'm at the very least satisfied if not impressed. No, I take that back, I am pretty impressed, but not in a shock and awe kind of way. The choice of malt and hops (as this is a single malt, single hop beer) has clearly worked, and it's put together nicely; and I've never been of the mind set that a double IPA has to be a hop bomb, and this is not, but at the same time there are more than enough hops present to make for an interesting and enjoyable ride. Something special.

A nice clear amber color with a generous head and nice lacing. Nice citrus and hops hints. The taste follows the nose with hops with citrus hints. A light bodied smooth DIPA with a decent flavor and a good amount of carbonation. Well done and nicely balanced DIPA.

Amber colored, white head. Pleasant hop aroma - well rounded a little dank, a little fruity. Some caramel malt in there too. Moderately bitter, biscuity malt and same hop flavors. Medium bodied.

Bottle > Snifter Glass

A - Beautiful clear orange gold with just over a finger of fizzy white head, little lacing.
S - Mosaic is obviously dominant here, white grape, floral, some astringent hints, grass, lemon. Aroma is pretty good.
T - Flavor kinda falls short, you get that white grape, pine, grass, grapefruit qualities from the mosaic, and it fades fast, finishes with a bready malt.
M - At 8% its semi-thin, a little too fizzy, lingering dry bitterness.
O - This was OK, I heard it was awesome and was excited for this, but I'd much rather have the 2x One over this.

A: This poured a hazy gold with a little off white head.
S: It smelled like fresh grapefruit with some papaya and apricot.
T: It tasted like pithy grapefruit and bitter lemon zest, with some sweet papaya and apricot. It had a clean bitter aftertaste with some alcohol warming.
M: It was oily with moderate carbonation. Nice full body.
D: This was a nice imperial IPA with nicely balanced tropical and citrus scent and taste. Amazing they got all that out of only one type of hops. The body was decent and the finish was a bit hot, so it was better to sip. Not quite top tier but very enjoyable.

A: slight haze on a deep gold body. head is bright white. I would actually say this is fairly hazy.

S: citrus and pine. not getting anything too tropical.

T: melon, hop resins, sticky but not cloying. a little touch of booze and malt right on the backend, but otherwise very dry and lacking a lingering sweetness or hop bitterness bite.

M: body is fairly light. good carb and mouthfeel. doesn't hang nearly as heavy as the abv indicates.

D: overall this improved for me as I drank more. not blasting you with anyone heavy hop note or flavor, but rather a balanced hoppy DIPA with a little kick of heat. if you like southern tiers other hoppy brews, this one follows nicely.

Bottled 3/30/17...Pours clear, gold in color, with 1/2 inch head. Taste is very herbal with light tangerine and grapefruit rind. Bitter, heavy bodied with moderate carbonation. Tasty, above average imperial ipa. I like other IPAs by Southern Tier more, but this one is solid and worth a try.

this is an excellent DIPA. for as simple as the malt bill is(one type of malt) it has a good bit of complexity. but what really makes this shine is mosaic hops. fruity and wonderful, this is an excellent example of what a single hop beer can be. well done.

Poured from a 12 oz. bottle into a chalice.

Appearance: Pours a bright copper orange with a moderate amount of bubbles. Solid finger of white head that settles into a thin patchy layer.

Smell: A very juicy hop forward aroma with a scent of citrus fruit and pine. Upfront citrus hop scent of orange peel, mango, grapefruit, passionfruit, pineapple, tangerine, and lemon. Good hints of pine resin along with a little mint and pepper spice. Pale malt with hints of caramel, cracker, and yeast. A very good juicy aroma.

Taste: Like it smells, a juicy and spicy hop driven taste with notes of citrus fruit and pine. Juicy and ripe presence of citrus hops with notes of grapefruit, orange peel, passionfruit, mango, pineapple, tangerine, and lemon. Herbal notes of pine resin. Some subtle notes of pepper and mint. Pale malt with notes of caramel, cracker, and yeast. A really good taste.

Mouthfeel: Medium to full bodied with a moderate amount of carbonation. Very juicy, oily, and drying. Alcohol is masked by the hop bitterness.

Overall: A very good take on a single hop Double IPA. Great juicy and spicy mosaic hop flavors.

Now this a gorgeous looking beer. Appearance is golden, crystal, bright. One of those beers that glows and just flat out looks inviting. Aromas aren't overly impressive or amazing because nothing is dank or pungent. But the nose is pleasant and carries hints of earthiness, tropical fruits, bubblegum, berries and pine. The flavors are similar with floral, tropical as well as bubblegum touches leading the way. Feel is rather thin but not watery. Overall, this is a solid and very well crafted beer that relies on subtleties and refined characteristics rather than a overwhelming upside the head hop beat down.
