Notes:
Styled after the Bohemian classic, Pilz is a crisp golden pilsner with an assertive hop character. With special Moravian heirloom barley malt, a traditional decoction mash creates a firm yet light body and deep golden color. Cold fermentation with a Czech lager yeast and lengthy secondary conditioning produce a brilliant beer that highlights the spicy and grassy Saaz hops. Authenticity in a glass; Pilz is beer.

Pours a lovely rich auburn, crystal clear with a pillowy and persistent stark white head.
Smells of straw and bread dough, faint banana candy scent.
Taste is mild lemon zest and ritz crackers.
Mouthfeel is well nigh perfect. So light and so crisp, it dances across your tongue leaving the door open for more. So refreshing after a few hours out in the sun.
Overall this is a wonderful pilsner, crisp and light and refreshing and I would imagine just about the perfect compliment to some ungodly hot texas days.

I know my score my be a bit heavy-handed compared to other, however IMO - this is a very solid example of exactly what a pilsner should be. Pours a nice golden color. One-finger bubbly white head that dissipates quickly. Strong lacing. Taste & smell are spot on.

L: mostly clear yellow, nice white foam, head just 1/2-inch at most, thick collar, no lace. Maybe debris. wasn' t poured into a pilsener, so it's hard to judge the head here, but as it is, not bad.
S: sweet green grass, some grain, super sweet onion (as in, it's almost not onion it's so sweet) ... So good as it warms. So sweet but not bread malt ... It's like sweet green hops. amazing. really opens up.
T: fantastic grain bomb at first with green grass hop bite, but the bitter is very subdued. like the nose has a hop note that's super sweet, the taste here has hop flavor but a very controlled bitterness. very good. VERY good, in fact. I could drink this all the time.
F: light but good carbonation. it's not as dry as I think the Czech pilsener is often touted as, but there's nothing wrong here.
O: very nice. Sharp corners on a true Old World style in that it isn't overly Americanized. the sweetness is not full on bread malt but it's real close; the grassy hop bite is also restrained nicely. fantastic beer.

this is the same exact direction most craft pils is going in these days, much hoppier than what most of us are used to in the import selections that have been around awhile. this one is no different than the trend, spiked with traditional and regionally appropriate hop strains no doubt, but dosed to please the american hop lovers palate. mostly grassy vegetal bitterness in terms of how it tastes, so it can still appeal to the lager drinker too, its not so polarizing as some have been, its still well within range for the style, but its bold enough to be both hearty and interesting, despite this one staying on the lower side of the abv spectrum. this is really drinkable still, despite all its flavor, and doesnt incorporate a whole lot of body. big time carbonation is on point for the style. a really versatile beer with food, from cured meats to funky cheese to fresh seafood and even something spicy, this beer has a lot of culinary applications. perhaps not the most amazing pils out there, and not even close to as good as their hefe, but this is a really tasty and serviceable beer from live oak. well done overall. killer in hot weather, and better at the brewery when its super fresh!
