Super Saint Thomas is not just an Imperialized version of our Mosaic IPA "Saint Thomas," it's a double dry-hopped Happy Birthday to the man we could not have built this brewery without. This beer opens up with a barrage of freshly made tropical fruit salad, bellowing from the glass like a smoke signal from the Vatican. Honeydew Melon, citrus, fresh green grapes, and hints of under-ripe pineapple and freshly harvested marijuana dominate the palate in a sticky and resinous manner. Shockingly clean and restrained in malt character for a Double IPA of this size, letting the Mosaic hop character slam-dance all over the palate, finishing with an assertive yet refreshing note of freshly cut ruby red grapefruit.

Can poured into a Mountain Rambler Brewery pint glass
A: Pours hazy golden golden orange with a frothy beige head that settles to a light layer and leaves a little nice lacing.
S: Plenty of ripe citrus, a touch of pine, underlying tropical and stone fruit, light floral notes, a touch grassy, biscuity slightly bready malt, and caramel sweetness.
T: Big citrus, ripe grapefruit, plus lemon lime and hints of tangerine, floral notes, underlying tropical and stone fruit, pineapple, peach, apricot, mango, passion fruit, and melon, a touch of pine, faint grassy tones, biscuity slightly bready malt, and caramel sweetness.
M: Full body, moderate carbonation, impressively smooth, alcohol is pretty much completely hidden.
O: Ridiculously easy drinking for what's essentially a TIPA. They pulled a ton of good stuff out of that Mosaic.

Sweet orange tropical hoppy nose on this one! Taste follows well with a smooth, slightly creamy feel on the finish. For 9.6% ABV, this has relatively low IBUs and a low boozy kick. The booziness eventually dissipates into a bitter hop finish that lingers a bit on the palate. Good stuff!

16oz can, served in a snifter glass. Pours a hazy straw yellow body with a copper hue, one finger white head, fair retention, not much lacing. Smell is stone fruit, grapefruit and caramel/sugar sweetness. A bit of grain. Sweet, smells like a Triple IPA more than a Double IPA. Flavour is a nice balance of sugary caramel sweetness and grapefruit, mild resinous and leafy bitterness on the backend. Fairly balanced, but on the sweeter end of the spectrum. Mouthfeel is medium bodied, good carbonation, a mild resinous and leafy bitterness on the backend, but overly sweet. A solid IPA, essentially a triple IPA at this point in terms of the sweetness.
