Barrel-Aged Mexican Achromatic is an Imperial Stout inspired by Mexican hot cocoa, a drink that traces its roots back to the Mayans, Aztecs and Spanish in Mexico. Brewed with obscene amounts of roasted cacao nibs, cinnamon sticks, and vanilla beans and aged in Breckenridge Distillery bourbon barrels, Barrel-Aged Mexican Achromatic is a rich, decadent beer that evokes the innovative spirit of brewing while paying homage to its Mexican heritage.

BAMA 2020. Opened from cellar temp 4/7/20
It did gush on open but no off flavors.
Pours a pitch black with a over carved head due to the gush. Nose is of warm cinnamon and bourbon and vanilla whisps of chocolate. Taste follows the nose. Cinnamon up front followed by bakers chocolate, slight warmth from the barrel. Think taste will be better/more balanced in a few months, cinnamon is very strong. Feel is minimal carb, but 1% milk consistency, wish it was thicker and a tad less carb. Overall, the appearance and nose were top notch, but the cinnamon was overpowering and no vanilla and only minimal warmth from the barrel. Needs improvement.

Very dark appearance with slight tan head that dissipates quickly. Aroma is a very pleasant blend of cinnamon, bourbon and a touch of pepper. Taste is slightly sweet blend of cinnamon, bourbon and pepper.

From bottle into snifter. Dark brown, with foam dissipating quickly. Tons of cinnamon on the nose. Basically masked everything else. Plenty of it in the taste too. Would really have to search for vanilla or any kind of chocolate flavor, which is only faintly there after it warmed. Medium mouthfeel and also slight heat once warmed. Barrel was present, but not as much as I would have expected (subdued). Somewhat of unbalanced brew due to overwhelming cinnamon and not enough barrel.

This is smooth barrel aged cinnamon stout. It's downright awesome. At the top level of stouts you have to really nitpick. It could use a thicker mouth and more complexity to bring it to that "WOW" level. Ultimately, this is a great that I would drink regularly if it was available.
