Notes: Barrel-Aged Mexican Achromatic is an Imperial Stout inspired by Mexican hot cocoa, a drink that traces its roots back to the Mayans, Aztecs and Spanish in Mexico. Brewed with obscene amounts of roasted cacao nibs, cinnamon sticks, and vanilla beans and aged in Breckenridge Distillery bourbon barrels, Barrel-Aged Mexican Achromatic is a rich, decadent beer that evokes the innovative spirit of brewing while paying homage to its Mexican heritage.

This is smooth barrel aged cinnamon stout. It's downright awesome. At the top level of stouts you have to really nitpick. It could use a thicker mouth and more complexity to bring it to that "WOW" level. Ultimately, this is a great that I would drink regularly if it was available.

375ml bottles, red wax, 2016 release. Served in a snifter glass. Pours a dark cola brown body, one finger offwhite head, short retention, thin collar, not much lacing. Smells of rich cinnamon; the cinnamon is so strong that I wasn't sure if I was smelling chili peppers or not; there was a hefty dose of spice without the vegetal qualities that peppers bring, so after consulting the description on the bottle, I convinced myself it was the cinnamon. The cocoa and chocolate components are certainly underneath the cinnamon, not so much the vanilla. A fair bourbon bite also. Flavour on the other hand is a nice balance of cinnamon spice, cocoa astringency, chocolate malt and bourbon barrel flavours. A bit more vanillin comes out as well. Bourbon is fairly standard, but the dark chocolate and somewhat roasty coffee bean flavour is notable as well. It overall works out reasonably well. However, the mouthfeel is surprisingly a bit thinner than expected despite the 13.2% that it is listed at, with all the adjuncts in the beer. I would like a bit more body to back up the bourbon and the adjuncts here; for the most part it works well with solid carbonation, but if comparisons are going to be made to the more hyped up stouts of the same ilk, the body of the base beer is the first difference you will notice.
