375 ml Bottle from share. Cloudy pale golden with soft bubbly head. Sour notes from the get-go, brett, mild fruity aromas. Taste follows with more of the brett, soft tartness, some barrel notes, Light and airy. And delicious

Finally cracked it open after having it sit in my fridge for almost a year. This is a September 2015 vintage. Time for some great taste for the dawn of a new life ;)

Appearance: Looks a lot like a fizzy strawberry lemonade, it is golden slightly hazy with a rose coloured hue, the colours actually dance and play depending on the light. A decent one finger head that is consistently smooth and chunky, dissipation is slow and leaves a quaint princely cap and crown with no real lacing. It is effervescent, plenty of bubbles popping up to the surface throughout.

Aromatics: Initial inhale was cider vinegar, but as I let it sita minute, and has a lot os tangy sour apple - but not an "aged" sour apple. It's crisp and fresh like you nose just bit into a super tart baby crab apple, which brings along with it some barnyard reminiscences, and leaves trails of apricot and nectarine in its wake.

Taste: A nice forward tart (not so much a sour) but big pomaceous flavour of apples and pears. The flavour also meanders through mild earthy florals and thinned sweet honey, and for a cider-y as it smells I get little in way of an acidic tanginess. It has a really nice introduction and then the tarts winds down into nothing.

Mouth: Over time the carbonation does get a bit timid and leaves just a mild fuzziness on the tongue, I think it has the right kind of weight for a gueze. A slightly salty spice tingle on the throat but never turns into a warming. Much like the last gueze I had, this one is very similar in body and has the same tangy/tartness that never makes it to sour, and also has a similar abrupt finish with no real palate sensations to note at the finish line.

Overall: I always love the crispness of a gueze and I have looked for that light saltiness, making sure it was well integrated. With Cantillon though, I never even noticed it, which means it was fantastically incorporated. The slight sour tartness and gentle fruitiness is what makes it enjoyable for me.

Pairing: It has a nice light fruit and gentle carbonation so a lite seafood. Pan seared red snapper filet or a lightly baked bass, a few herbs (garlic, rosemary, black pepper) and a spritz of lemon, served with a side of long grain wild rice and wild mushrooms.

Bottle, poured into flute.

Golden, ever so slight copper hue. Clear and bubbly. Foamy, big-bubbled head. The head is pure white.

Aroma is sweet-tart candy, bit of lemon rind and slight funk.

Tart but not crazy sour. Smooth, crisp flavors. Subtle all around. Citrus zest, a bit of cider vinegar.

Effervescent, bubbly, fairly light bodied.

Reading the reviews it seems like there is a lot of variation. Mine was extremely pleasant and full of clean flavors. Nothing negative, but nothing that blows you away like some other Cantillon options.

This review is subject to a future chance due to the fact that the tasting wasn't done in the best condicions.

Drank on tap at Le Fine Mousse, Paris and poured to a teku glass.

A: The body is semi opaque yellow. Basically it's mid-way between opaque/cloudy and cristalline. No head is visible, and therefor no lacing nor retention. Zero.
S: The aroma is weirdly salty, like prosciutto salty.
T: The taste is overly salted, you can barely have some citric notes but they're really behind a block of salt. It's hard to get there but once you do, you've unlocked the other flavors such as a biscuit-y and sweet malt tones.
M: Mouthfeel-wise, the body is low to medium. More close to low carbonation. The end in the mouth is sour as expected. The saltiness, being too much, actually brings the beer down more quicly as you don't have much pleasures to have it in your mouth.
O: This was my first Cantillon. Didn't know what to expect from it but it seems to me, as referred before, that the underlying conditioning of the beer wasn't that great. That being, this is more of a totally-non-permanent personal review of this beer.

The head crests near two fingers of dense off-white to light tan color, nice retention, keeps a thick surface layer. Deeply bronzed liquid, sunset orange, fully opaque, there’s quite a bit of active bubbles yet they are not always easily visible. The nose punches real hard and drives into the nostrils, smells mainly of yeast, pulped oranges and tangerines, cardamom, sage to white pepper with touches of pineapple, kumquat and star fruit, warming up does little to smooth it out. Medium-bodied, the carbonation lends strong prickle which even further accentuates the formidable sourness. Cavalcade of tart grapefruit, orange, lemon citrus, so stinging that the flavors become hard to separate. Yeast, wheat germ, barley easy to peg, the fruit flavors here too muddled by the sourness, mostly pineapple, nectarine, green apple with a few red cherry notes. Monolithic in scale and assured in the message it wants to send.

Pours a red colour, with a pinky small head that fades leaving a creamy lace. Aroma of grapefruits, apple, citrus, cider, cherry, wood, vanilla.. Creamy and sour palate, normal carbonation. Taste of cherries; apples, grapefruits, wood, vanilla..

Purchased at the brewery last June on my honeymoon. Opening now to celebrate one year wedding anniversary. Bottled December 2014

Clear golden straw color with a head that disapates quickly. Lots of funk, some lemon in the nose. Taste follows. Ever so slightly sweet profile as well. Top notch, as to be expected.

Pours gold with brilliant white head. Looks like a million bucks. There's insane funk on this one. This bottle was several years old, and it has had plenty of time to develop. There some nice cinnamonic acid. It's light but still oozes with complexity. One of the best gueuzes I've ever had.

Had a younger bottle and adjusting rating based off of that. Still smelled good, but had a ton of bell pepper flavor. Perhaps this bottle needed more time.

Poured gently at 50F from a bottle into a beer flute. Consumed on 09Apr16.
LOOK: A fingers worth of white foam is formed after pouring. Pale gold in color with a moderate amount of cloudiness. Rising bubbles are in abundance and small in size. Lacing is thick, but subtle.
SMELL: Strong aromas of hay and sour green apple elegantly combine with mild aromas of earthy yeast, oak, peaches, white grapes, and pears along with subtle grass aromas.
TASTE: Strong earthy yeast, hay, and sour green apple flavors pleasantly bombard the palate upon first sip. Mild peach, white grape, and pear flavors instantaneously trail as earthy yeast flavors grow slightly stronger. Mild flavors of oak and subtle grass finish off the taste theatrical as all previous flavors push on.
FEEL: Medium-bodied with high amount of carbonation. Goes down rough due to the carbonation. Finishes with a strong and unpleasant dryness.

375ml into a pint. Barely to zero head. Nose is somewhat tart farmhouse-like. Very crisp, tart feel with intense carb and heavy oak. Was pretty drunk at this point and slammed the bottle to myself. Worth the $7 but definitely need to try it again.

I had Had several rave gueuze, but never quite could appreciate the sourness.
The serious students of this style tell us that it is more art than science.
How these flavors are made and blended can be described, but must be tasted to be understood.
After sharing this one on a hot summer day, I understood.
All this complexity somehow finishes bone-dry without any bitterness.

Lambic-Bio is deservedly on the "1001" list.
Reviewed in "Michael Jackson's Great Beers of Belgium" and said it is "clean and fresh, with the typical lemon zest and citrus pith."

Pours a gold peach hue, with a huge, light, fizzy head that dissipates slowly, and can be coaxed back while cold, but then says goodbye as it warms, becoming like a smooth wine.

I get pleasant but strong tartness on the nose up front first, with Belgian yeast, hints of peppercorn and even allspice as it warms.

Vert tart and acidic kiwi pineapple orange juice rides along with the Belgian profile.

This is nicely rounded, not overly tart or spicy like I found Lindemans to be.

375 into snifter. March 2015 bottling

L - pours golden straw with fluffy 2 inch head and bright carb
S - Lemon, hay and soft spice. Not much funk, and not sharp or sour. Quite bitter on the finish
T - more lemon peel, tart, with a bit of funk, but all well balanced
F - Bright effervescent carb with light body

Overall, a really tasty Gueuze. Honestly, I think this isn't really any better than many widely available Geuzes (Marriage Parfait, 3F, Cuvee Rene) but absolutely on the bucket list for a lambic fan. Will be interested to see how it evolves and ages, as it is very subtle right now at 1 year in the bottle.

Pours dark orange, opaque. Smells like skunk, sour and dank. Flavor is powerfully sour. Like... burn your mouth acidic. Very intense but flavorful. Finishes dry. Have a couple more bottles of this... it will be interesting to see how it develops later on.

My first Cantillon, couldn't wait to crack this open. Cork says bottled in 2015, poured into my Hill Farmstead glass. Comes out a nice golden amber color, slightly hazy, with a small head that takes a bit to wake up. Some spotty lacing eventually.

Smell is super tart right off the bat after the cork is pulled out. In the glass there are some sweeter notes swirling around, bit of dried grass funk.

Taste is initially very tart, mouth puckering at first. Once you get used to it, the sweetness comes out a bit more. There's a nice lemony tart/sweetness going on in the middle. Finishes with a lingering sourness, but there's some elements of peat and hay, along with some funk. Feel is pretty smooth, pretty sticky. Overall a decent body for the ABV.

Overall this is a great tart masterpiece of a gueuze. While nothing is overdone, this beer is fantastic in its balance of flavors and extreme sourness. Well done beer.

This smelled like a musky body odor and I felt a bit of trepidation to try it. It's super tart but strong strawberry and raspberry flavors come through. I get some mineralization, and funky sour.

2012 bottling. Low carbonation, clear and pale. Aroma is amazingly complex and delicate - honey, light sage, some grapefruit and sweet grape must. Tinges of burnt toffee as well. Flavor fell a bit flat, some richness and earthiness, very different from the other range of Oude Gueuzes we tasted. Good medium high acidity, with some fermented wood bitterness - maybe some peach pit as well. While I though this beer was OK flavor wise, my dad thought it was his favorite!

From notes on 9/10/15. First beer ordered while at the Cantillon brewery. Very solid gueze. Nice bubbly mouthfeel. Tart and refreshing flavor. Excited to try the rest of there beers.

Light fizzy head, crystal clear honey orange pale color.

Nose is awesome, would grassy funk, hay, generic fruity sour like notes, hint lemony, grassy barnyard funk, juicy tart.

Taste is acidic and tart, nice lemony tartness, acidic bite, wild barnyard funk, juicy tart fruity flavors, bitter lemon zest, tart, great lambic funk. Hint flemmy finish, tart lambic funk lingering but smooth, acidic, nice funk, bit too much bitterness.

Mouth is med to lighter bod, decent but lighter carb, little flemmy.

Overall great, but for Cantillon this is low tier.

750mL bottle poured into a wine tulip glass.

Peach-skin color in the body with some golden hues. Fizzy but persistent pale white head. Not exactly a transparent beer, but neither is it murky. Light trickles of carbonation show through. 5

The nose is tart with some orchard fruit, fuzzy funk, and a white wine yeast aroma. Clean and appealing, but not profound in any way. 4

A surprising bit of raisin flavor is the first thing I taste, followed by unripened peach, earthy, floral funkiness and a sharply tart apricot juice flavor. 4.25

It's tart with some lemony acidity and a full-bodied feel. The finish has some tart bite before a vinous dryness and sticky funkiness that lingers. Carbonation up front gives a lively feel and accentuates the tartness before things settle into a lingering dry, oaky finish. 4.25

It's very good, I'll leave it at that.

A - Poured into a Kate the Great tulip a crystal clear golden hue with a thin white head that fades to leave light wisps.

S - Aromas of excellent funk, Cantillon yeast, horse blanket, sharp acid, light citrus.

T - Taste is similar to the nose with nice funk, real good house yeast, horse blanket, great acidity, bigger lemon citrus.

M - Mouthfeel is very lightly cardboard and a little thin.

O - Overall this beer was rather tasty, however, the mouthfeel is really too light for the style.

This and the other 100% Bio are the same beer, this is just the European label. The US label can't be called organic since the standards here are different than the European standards, but it's the same beer. Alas, I'll rate both.

Of the basic gueuze, perhaps my favorite. Appearance is standard for the style, small head that fizzes away quickly. Aroma is green apple, lemon, barn stall combination of hay / wood / leather / grain / salinity. Flavor carries that through with more minerality, a dried flower / potpourri middle, lingering lemony bitterness.
