A:
Clear with slight chill haze, nice vibrant yellow that is "barely not clear" with a flash of effervescent white head. Drops to scummy ring. No lacing. (4)

S:
Acidic tartness against a backdrop of rich funk. Under-ripe fruit, plow horse sweat, bubblegum, hay, slight lacquer, vinegar, green strawberries, etc. My god, the smell shifts around the glass as I take whiffs! (4.5)

T:
Lemons, twangy lactic tartness, horse blanket, crab apples, musky muddy character that is really excellent, under-ripe fruit with dead lawn and flowers approaching fall as the funk and hops dry your palate out. (4.5)

M:
Bright, thin, effervescent, fresh, more drinkable than other sours I've encountered. (4.25)

O:
I get it! Sweet mystery of life at last I've found you. Sours might not be my favorite or anything, but this is an amazing fucking beer!!!
This is the sort of beer that shows you what people like about sours. Or me at least. Wow. It looks nice in glass as far as sours and my personal interpretation of 'nice' go. The aroma and flavor are complex for days. A balancing act between tart, outright sour, earthy, stanky, floral, and so on. Contrary to what I had expected, despite being very sour the real stand-out is the funky, barny canvas that the rest of it is painted on. I can definitely understand the love for Cantillon and its flora. I already understood the love for the process and history, but having the beer seals it all together pretty nicely. (4.5)

2007 bottle at Cantillon Brewery. (Side note, I had this at the same time as 2008 Cantillon Lou Pepe Framboise).

Golden yellow color with a sizeable nice fizzy foam head which dissipates quickly. Barnyard funk, lemon grass, wheat, oak... it's all in the smell. More sour present than the funk in the taste, but follows the smell notes closely with all kinds flavors: citrus (lemon), oaks, weeds and wild grass.. some kind of cheese!? Being inside Cantillon brewery and drinking this, you can definitely pick up the smells in the air from the place and all the barrels, and how they make it into each beer. Truly unique. The aftertaste is dry but refreshing ... not sure how that makes sense, but as I was sipping I could pick up each finish. Just a phenomenal beer. Cantillon brews truly are unlike any other and at the top of the class. This one is no exception.

2015 vintage. Poured from 750 mL capped and corked bottle into tulip.
A: Pours a clear golden yellow with moderate carbonation producing a 2 inch fizzy white head with decent retention.
S: Lovely...sweet funk, tart, earthy barnyard, dry minerals, peppery spice, and a subtle sweetness.
T: Wow! Subtle citrus sweetness, barnyard funk, oak tannins, vanilla, tart and sour (lemon, cherry?), white pepper, and dry minerals. With warming, an almond note emerges that is quite nice. I'm sure I'm missing some of the elements...very complex which likely comes from the blending of one, two, and three year old lambic.
M: All sorts of sour, tart, sweet, funk, and dry. Nice lingering and maturing on the palate too. Light body. Moderately effervescent.
D: Phenomenal for style. Hands down, best gueuze I've had. Refreshing and deeply complex at the same time which is a very difficult feat. Simply a tremendous brew!

Deep straw yellow color with a modest semi foamy white head that goes away quickly. Definate barnyard funk on the nose with gravel, wood, and weedy earthy tones. Really sharp bitter sour tarty taste that lingers and continues to develop on the back of the tongue throughout. Pleasantly effervescent carbonation and soft mouth feel. Mellows as it warms. Fabulous classic Gueuze, top of its category.

Deep golden with a small white head that fades to nothing and leaves no lacing. Huge sour nose. Sour vineous grape, barnyard funk, and sharp acidic edges of hay all around. Sharp carbonation, crisp edges and dry as can be. Deeply complex sour that's hard to put words to. Absolutely stunning.

The head crests near two fingers of dense off-white to light tan color, nice retention, keeps a thick surface layer. Deeply bronzed liquid, sunset orange, fully opaque, there’s quite a bit of active bubbles yet they are not always easily visible. The nose punches real hard and drives into the nostrils, smells mainly of yeast, pulped oranges and tangerines, cardamom, sage to white pepper with touches of pineapple, kumquat and star fruit, warming up does little to smooth it out. Medium-bodied, the carbonation lends strong prickle which even further accentuates the formidable sourness. Cavalcade of tart grapefruit, orange, lemon citrus, so stinging that the flavors become hard to separate. Yeast, wheat germ, barley easy to peg, the fruit flavors here too muddled by the sourness, mostly pineapple, nectarine, green apple with a few red cherry notes. Monolithic in scale and assured in the message it wants to send.

I picked up a bottle of Cantillon's Gueuze 100% Lambic a couple months ago for $12.99 at The Lager Mill. I've been saving this one for my 2,000 rating on BA since I always try to have something a little special, different and not something that I would normally drink for these milestones, so lets see how it goes. 2015 Vintage. Poured from a green 375ml bottle into a teku.

A- The label looks good, it's got a classic look to it and it's eye catching. It poured a slightly hazy orange color that took on more of a golden orange color when held to the light, it had a thin ring off bubbly off white head that quickly faded away and it left some spotty lacing behind. This is a very nice looking Gueuze it's pretty standard looking for the style.

S- The aroma starts off with a medium amount of sweetness with a big sweet tart candy aroma being the first to show up and it's got a little fruityness that imparts some stone fruit aromas with some lemon coming through. Up next comes the yeast which impart a funky barnyard and wet straw aromas and it's followed by the malts which impart more of a pale malt, slight grainy and light bready aromas. This beer has a very nice aroma, it's just what I would expect from the style.

T- The taste seems to be pretty similar to the aroma and it starts off with a medium amount of sweetness with the sour fruit flavors being the first to show up and they impart most of the same aspects that it did in the aroma, but less stone fruits and lemon shows up this time. Up next comes a lower amount of high sourness with the malts showing up next which impart all the same aspects that they did in the aroma, but it's a little lighter this time. Up next comes the yeast which imparts the same funky aspects that it did in the aroma, but it's also a little lighter than it was in the aroma. On the finish there's some lingering sourness with a nice lemon and sour aftertaste. This is a very good tasting beer, it's just what I would expect from the style and nothing is out of place.

M- Fairly smooth, crisp, a little mouth puckering, a little acidic, on the lighter side of being medium bodied with a medium amount of carbonation. The mouthfeel is very nice and it works well with this beer.

Overall I thought this was a very good beer and a great example of the style, it had everything that I look for in the style and not a single thing was out of place. This beer had nice drinkability, the whole bottle would be my limit though, anymore than that and ti would be too acidic for me. What I like the most about this beer is the taste and how true to style it was, not a single thing showed up that wasn't suppose to be there. What I like the least about this beer is nothing, there's ins anything that I disliked or would change. I would for sure buy this beer again if I see it and I would love to see how it ages. I would recommend this as a must try for anyone who really likes the style. All in all I was very happy with this beer and a little impressed, they really nail this style and I can see why so many people search this beer and brewery out. It's not a favorite Cantillon beer, but it;s one of the best Gueuze I've had. Great job guys, this is a very tasty and memorable beer, keep it up.

375 ml bottle, dated September 2015.

Nice aroma of lemon, grass, dirt weed and barn. I don't know, it smelled really good. Huge funky sour notes and dry, but somehow very refreshing. Body is Brooke Burke. So damn good. One of the best sours I've ever had.

Look: Golden color with 1.5 finger head. Nice lace as well.

Smell: Funk, Acidic, grassy

Taste: Acidic and funky. Tart.

Feel: Perfect amount of carbonation. Medium low body.

Overall: Great Gueuze. Tough to find but worth it. Perfect amount of tart, funk, and acidity.

Yellow and orange, amazingly great white head on the top, 1/2". Best lace in genre. Aroma hit the grassy dry and tart notes.

Not a sweet lambic/gueuze, this one is dry, highly carbonated, dropping some grapefruit, green grape, apple, lime and lemon notes, grassy, hay, mild funk, relatively clean. Very consistent. French oak? Some acidity that isn't overdone. Sets the standard for gueuze in my opinion.

I think this one is often deemed a lesser Cantillon because it is the most available. Chasing one off Cantillons doesn't make sense, they rarely are as good as this one.

A - Straw yellow with a small bubbly white head that quickly dissipates.

S - Spicy and complex, tart Belgian yeast.

T - Tart and sweet, white grape juice, slightly acidic. Earthy and complex.

M - Light-medium body, medium carbonation.

O - Excellent beer with a wide array of subtle flavors and complexities.

Poured on draught into a tulip glass (2015 version). Appearance is a bright copper color with three finger thick head and excellent retention.Taste is very refreshing with an interesting citrus profile and a nice yet subtle balance of salt. Excellent beer with almost perfect balance, but I was hoping for a bit more citrus. Regardless, I could drink this Gueuze all day.

Pours gold with brilliant white head. Looks like a million bucks. There's insane funk on this one. This bottle was several years old, and it has had plenty of time to develop. There some nice cinnamonic acid. It's light but still oozes with complexity. One of the best gueuzes I've ever had.

Had a younger bottle and adjusting rating based off of that. Still smelled good, but had a ton of bell pepper flavor. Perhaps this bottle needed more time.

Poured gently at 50F from a bottle into a beer flute. Consumed on 09Apr16.
LOOK: A fingers worth of white foam is formed after pouring. Pale gold in color with a moderate amount of cloudiness. Rising bubbles are in abundance and small in size. Lacing is thick, but subtle.
SMELL: Strong aromas of hay and sour green apple elegantly combine with mild aromas of earthy yeast, oak, peaches, white grapes, and pears along with subtle grass aromas.
TASTE: Strong earthy yeast, hay, and sour green apple flavors pleasantly bombard the palate upon first sip. Mild peach, white grape, and pear flavors instantaneously trail as earthy yeast flavors grow slightly stronger. Mild flavors of oak and subtle grass finish off the taste theatrical as all previous flavors push on.
FEEL: Medium-bodied with high amount of carbonation. Goes down rough due to the carbonation. Finishes with a strong and unpleasant dryness.

2013 bottle

pours a straw yellow color, with a slight white head. Smells like lemon, hay, a slight wet funky aroma. Tastes of tart lemon, quite citric. almost a wood barrel taste to it. There was almost no carbonation in this beer. Overall a great gueuze. Glad to have tried this one.

375ml into a pint. Barely to zero head. Nose is somewhat tart farmhouse-like. Very crisp, tart feel with intense carb and heavy oak. Was pretty drunk at this point and slammed the bottle to myself. Worth the $7 but definitely need to try it again.

I had Had several rave gueuze, but never quite could appreciate the sourness.
The serious students of this style tell us that it is more art than science.
How these flavors are made and blended can be described, but must be tasted to be understood.
After sharing this one on a hot summer day, I understood.
All this complexity somehow finishes bone-dry without any bitterness.

Lambic-Bio is deservedly on the "1001" list.
Reviewed in "Michael Jackson's Great Beers of Belgium" and said it is "clean and fresh, with the typical lemon zest and citrus pith."

375 into snifter. March 2015 bottling

L - pours golden straw with fluffy 2 inch head and bright carb
S - Lemon, hay and soft spice. Not much funk, and not sharp or sour. Quite bitter on the finish
T - more lemon peel, tart, with a bit of funk, but all well balanced
F - Bright effervescent carb with light body

Overall, a really tasty Gueuze. Honestly, I think this isn't really any better than many widely available Geuzes (Marriage Parfait, 3F, Cuvee Rene) but absolutely on the bucket list for a lambic fan. Will be interested to see how it evolves and ages, as it is very subtle right now at 1 year in the bottle.

Pours dark orange, opaque. Smells like skunk, sour and dank. Flavor is powerfully sour. Like... burn your mouth acidic. Very intense but flavorful. Finishes dry. Have a couple more bottles of this... it will be interesting to see how it develops later on.

My first Cantillon, couldn't wait to crack this open. Cork says bottled in 2015, poured into my Hill Farmstead glass. Comes out a nice golden amber color, slightly hazy, with a small head that takes a bit to wake up. Some spotty lacing eventually.

Smell is super tart right off the bat after the cork is pulled out. In the glass there are some sweeter notes swirling around, bit of dried grass funk.

Taste is initially very tart, mouth puckering at first. Once you get used to it, the sweetness comes out a bit more. There's a nice lemony tart/sweetness going on in the middle. Finishes with a lingering sourness, but there's some elements of peat and hay, along with some funk. Feel is pretty smooth, pretty sticky. Overall a decent body for the ABV.

Overall this is a great tart masterpiece of a gueuze. While nothing is overdone, this beer is fantastic in its balance of flavors and extreme sourness. Well done beer.

Was able to have a glass while visiting the brewery in September. Also, have opened a few bottles I brought back from the trip.

Look: Light straw body. White fast dissipating head.

Smell: Funk barnyard aroma. Slight acidic fruit.

Taste: Tart, but not as sour as I thought it would be. Tart fruit funky finish.

Feel: Bubbly. Feels a lot like champagne.

Overall: While I do enjoy it a lot, this is my least favorite of the beers I've had from Cantillon. I do think it is better than most American version.
