A: Amber and clear with a foamy head that subsided pretty quickly.

S: Tart green apples. Sour.

T: Even more intensely sour than I expected from the smell. A tart bite.

M: Dry and lingers in your mouth.

D: Very enjoyable. The 750 mL bottle is perfect for 2.

So finally this pops back up on shelves in Columbus. I snagged a 750ml.

A- The color is nothing short of beautiful. Its a semi hazed and very bright gold. It is the color is gold bullion. A small white head fizzes up and fades very quickly which is common in many sours. And a beer that is partly 3 years old.

S- Plenty of funk. Sour lemons, grass, wet hay, maybe a little bit of a urine smell.

T- Wow, sour as all hell! The only other beer that Ive had that seemed to be such a kick to the saliva glands was Beatification. Right away the sourness here rushes to your glands and balls up your cheeks in a sharp pucker. Loads of lemon juice, lime juice. Actually the sourness makes it hard to pick out some of the other intricacies of this beer. There is definitely some oak and earthy, funky stuff going on. The finish is another powerful surge of sourness that clings to the back of your throat. The bodies natural reaction to this is to regurgitate. I can feel a very slight hint at that reation, but I fight through it and my taste buds thank me.

M- Much thicker than I expected. Its syrupy and very very very dry. The sourness lingers and gives your mouth that thick feeling that accompanies many sour candies.

D- Very good stuff. It might be a bit too intense for a whole bottle to yourself though.

Absolutely classic. I'd take this by a hair over Girardin 1882 as far as everyday gueuzes go.

Have had many times both bottle and draft, but I finally got around to sitting down and reviewing one.

2009 Vintage

A: Orange-gold body. Just the slightest bit of haze. Fairly large, 3 finger, bubbly head. Good retention and a nice soapy lacing.

S: On first whiff, this has all the barnyard funk of the brightest, mustiest saisons. Lemons, oranges, horsebanket, and a bit of earth. Then you start to sense the tartness and sourness that will come. Then you realize you are drinking a top flight gueuze.

T: Like the nose, there is lots of funk. Sour lemon. Fresh squeezed orange. Light breadyness. General acidic citrus notes. Complex and layered. Very nice.

M: Medium bodied. Lively, but not unrestrained carbonation. Nice zing on the tongue. Good sour/tart finish. I don't find it puckering, but it is an aggressive experience on the tongue.

D: Whenever I have a good gueuze I can't help but say to myself, I would like to wake up every weekend and drink one for breakfast with waffles, whipped cream and fresh fruit. Cantillon is highly regarded for a reason.... this is just one of many.

The beer is clear, sunset orange with a medium sized head and spotty lacing. The aroma offers barnyard funk, straw, tart lemons, citrus. Beautiful and simple. Classic Cantillon nose and flavor. A graceful acetic presence with a subtle burn in the finish. Very smooth with moderately low carbonation. Very enjoyable. As the label states, a classic.

Goldenrod to light orange in color. A finger-wide head forms, but dissipates to a thin film. The carbonation forms on the sides, settles down and continues from the bottom of the glass.

The smell is like lemons and oranges. Maybe sour orange juice soaked in a yeasty, French bread.

To me, this tastes like someone squeezed a tangerine into a slightly flat glass of seltzer and added some sour. It gives you a bit of a pucker, so the citrus must come from ample hopping. The malts are very crisp and not that easily discerned due to the incredible balance of this beer. The citrus flavor lingers in the aftertaste, being not at all unpleasant.

The pucker is quite pleasant and paired with the citrus it makes for a very refreshing beer. The body is medium, but the carbonation makes it seem lighter.

I was never fond of lambics due to only having the fruited ones. Now? I need to get more of this! I can see setting back one after another in the summer rather than a mojito or a shandy.

Appearance: dark brownish gold in color, cloudy, 1/4 inch head, medium carbonation

Smell: apple, lemon, and funk

Taste: apple, lemon, funk, vinegar, and small oak

Mouthfeel: sweet and sour mix, high carbonation, light body

Drinkability: Awesome gueuze. Could drink this all day. Not an intro gueuze as the sourness is prominent, but very very good.

"This one's on the house", proclaimed Casey as he plonked down a bottle of the 2001 Cantillon Gueuze on our table last night. Thank you SO much!

With great clarity, this beer is light orange with a dense off-white head with great retention and lacing. The nose... to quote Devin Townsend - "Oh. My. Fuck.Ing.God" Musty as hell with plenty of tannins, grapefruit, copious funk, this is exceptional. The blend and balance of musty basement with bright citrus character is particularly exceptional. The palate opens tart and salty, very Limburger-like. While tannic, this is still very bright and lemony with moderate citrus. Musty, cheesy, funky... this is the paragon of an aged gueuze. I can't help but stress how wonderful the balance between the tannins and the citrus is, this is just fabulous stuff.

12.7oz. corked & capped bottle poured into a tulip. No bottled date.

(A)- Pours a clear golden orange color that produced an effervescent mountain of white bubbles and foam that stuck around for awhile. A really nice color and clarity.

(S)- Funky and dry with a mild sour cheese funk added into the mix. Some hay and barnyard with a subtle white grape/apple fruits. Rather lactic too.

(T)- A big dry sour puckered profile up front with some apple & lemon fruit acidity behind it. Tons of sourness on this with a mild yeast-like dry finish.

(M)- A lively carbonation level that combined with the big tart sourness creates a party in the mouth. Quite smooth despite the sour lactic acidity.

(D)- Just a 'classic' beer for the style; so the name fits it well. All-around just plain good and tasty.

Bottled in 2008, aged until 2010.

Straw yellow appearance with slight haze. More head than I thought it would have, but the carbonation is still very light and nice.

The sourness of the beer is even apparent in its fragrance. There's a little bit of funky grass/hay/barn smell in there.

The sourness is pleasantly pronounced flavor. The lingering aftertaste is actually kind of sweet like apple or pear. The finish is very dry.

The mouthfeel has a nice subtle carbonation that enhances the sourness.

The beer is very drinkable because of the minimal alcohol percentage and the extremely dry finish that keeps one thirsty for more!

Cantillon: Gueze 100% Lambic (Bottled, 2009) (Tasted 04/27/10)
11.2 oz. bottle, poured into a flute.

Appearance: Extremely hazy golden beer with a creamy, off-white head of meringue that retains really well, about three millimeters standing after a few sips, no lace.
Odor: Sharp, full tartness in the nose, lactic character expresses citrus, cider and an undertone of chalk, from god knows where.
Consistency: Dry and juicy with a full, fluffy carbonation, all at the same time. This is why I love Cantillon, their beers have a real dynamic element to the feel.
Flavor: Sour red fruit with hints of tangerine and perceptible honey. Finish is quick and crisp with a solid, long linger of overripe, tart fruity juiciness on the tongue.

Nothing short of perfection.

As good Geuze, it offers a taste winey acid but with a little less acidity than the competition. The nose is complex, slightly acidic, and a good intensity with beautiful floral traces of citrus.

Sparkling but not too much, the body features flavors lactic woodlands and dry tannins and acids on the palate. The finish offers a wooded late drought and the presence of fresh citrus zest. Beer pure and fresh, easy drinking and refreshing.

A "must-have" when you speak about lambic.

"Bottled in 2009" on the cork. Pours a slightly hazy light orange with a thin ring of lace. Smell, which you can smell from across the room: vinegar, lemon, barnyard (but more like zoo) funk. Taste: lime, grapefruit, sour cherry... the tart and sour fades into funky midsip... finish is green grapeskin with a hint of sweetness. Low on the carbonation, which is not very noticeable because it's pretty much puckering. Finishes dry. I had a hard time with the combination of big funk and big lactic-ness in the aroma, but it's certainly tasty.

vintage 2009 served in a Tulip

pours a hazy straw with subtle hints of orange. light fizzy white head with nice retention.

sour and vinegar up front. light lemon zest and light sour grapes.

up front, nice light sweetness that lingers through out, even through the finish. lots fruit favors through out, mainly grape and green apple. nice light sourness without any strong vinegar flavor. quite balance.

light and dry with a nice moderate carbonation. sweetness coats the mouth.

insanely easy drinking. this is young and im sure it will become more sour over time and the sweetness may even take a back seat. i cannot wait to see what some time does to this.

2008 vintage poured into Duvel tuliip.

A- Pours a nice golden orange that has the slightest bit of haze after a careful pour as to not disturb the yeast. Very minimal head that is gone in the snap of a finger. The little head that remains collects around the edge of the glass.

S- Pretty straight forward smell, grapes, a little bit of vinegar and the slightest bit of yeast. Smells almost of champagne or sparkling wine.

T- Green grapes, a little bit of tart cherries and again, a slight amount of yeast that could be from the small amount that wound up in my glass. A little bit of vinegar rounds out the taste.

M- Astringent. Makes your mouth pucker just a bit. A very dry finish. Contrary to what the head or lack there of would have you believe, there is a good amount of carbonation.

D- This makes for a nice sipping beer, not because of the ABV but because it is astringent. I only have one bottle but I think that after one, you wouldn't be able to differentiate tastes as well because of the astringency. A good beer for people looking to get into lambics or gueuze.

2009 bottling

Appearance: Pours a very hazy amber color with a modest head that leaves a leggy lacing pattern behind

Smell: Barnyard funk, tart apples, lemons and oak

Taste: Starts out with a mouth-puckering blast of sour lemon, pomelo and apple flavors; by mid-palate, the oaky complexity and barnyard funk start to make their appearance, which is further intensified after the swallow; the tart flavors re-emerge in the finish, leaving the tastebuds gasping for relief but begging for more

Mouthfeel: Light to medium body with moderate carbonation; mouth puckering tartness, with a slightly creamy finish

Drinkability: A really superb geuze, with all kind of subtleties

Thanks Hart for pulling this vintage 1996 out of the cellar and sharing it!

A-Body is a uniform translucent, very hazy golden yellow color. Pours with virtually no head.

S-The nose in this brew is quite interesting. At first all that comes through is a huge barnyard funk-filled with earthiness, mustiness, mossiness...etc...but once the nose has become accustomed to this assault a lot of apple comes through-tart, juicy, and sweet-this comes no where near balancing the funk-but its certainly there.

T-Flavor is pretty interesting as well. Lots of funk comes through across the board but there are accents of apple and some other fruity sweetness. A big lactic sourness-not at all noticeable in the nose comes through for the finish and overpowers the initial flavors.

M-Very low, cask-like carbonation. Body is light weight but very full-quite smooth.

D- What a great opportunity to try this '96 vintage! Lots of sour and funk still hanging around in this brew-it has really held up well. I'd like to try this a bit fresher so I can look back and compare the experiences.

Poured into a tulip.

4.5 A: Slightly hazy vibrant yellow orange color. One finger of "fuzzy" white head that drops quickly but leaves behind 1/8 inch head for quite some time.

4.0 S: Lots of astringent woodiness from the top. Acetic acid and feet that have not been washed in weeks. Zesty lemon and citric acid. Musty basement.

4.0 T: Puckering sourness throughout. Sturdy musty cellar undertones. Lemon and tart crab apple fruitiness, but for the most part dry. Woody astringency with a touch of acetic acid and lots of citric acid.

4.5 M: Lighter body, but quite creamy. Plenty of fizzy carbonation. Dry finish with lingering astringency.

4.0 D: Tasty brew. I've been into wild stuff lately and this hit the spot. Strong flavors, but not off putting. Well done.

375ml corked bottle, dated 2009...poured into a Duvel tulip

A - inch or more of bubbly loose white foam is falling at a rapid pace. eventually settles to a thin layer of floating foam and thicker ring around the outside fo the glass. the beer is just slightly hazy, slightly burnt golden color with active carbonation inside.

S - mouth watering...sour grapes, sour lemon, sour cherries. light layer of funk and grain. a bit of a natural, woody/farm scent going on before turning more fruity by the end.

T - instantly puckering. very sharp sour lemon and green apples, puckers the mouth and almost makes my eyes water. large amount of lactic acidity, some more subtle flavors are grapes, vinegar, kosher salt. finishes very crisp and clean as sour dies off, grains turning woody.

M - medium bodied for the style, lightish carbonation lets the flavors do the talking. a bit on the creamy side, and finishes very dry, begging for another sip.

D - delicious, yet light and very refreshing. akin to a good and slightly dry and not overly sweet champagne. closing my eyes and sipping on this puts me outside on my porch on a warm June evening.

375ml corked bottle with a crown (2009) poured into a Russian River Belgian stemmed glass.

A - Pried off the crown and got a wisp of carbonation, despite being corked as well?!? Pulled the cap the the cork was soaked through...hmm. As I pour this, I am reminded of champagne, big loose head of quickly disappearing soda-like, fizzy bubbles. I can time my pour so the head dies at the same rate I'm adding liquid to keep it at a constant level. When all is said and done, a nice pale orangey gold with some yeasty haze and a finger of white head about a half finger high. Very nice.

S - A distinct hoppiness, a certain amount of skunkiness, tons of brett funk, sweet and fruity citrus, lemons, limes...lightly sour in the aroma. Excellent!

T - Lactic sourness up front. The citrus found in the aroma is maintained nicely in the flavor. A strong bitter and funky component tries to take over from the light and fruity sourness. Maybe the bitter is a bit too much, seems slightly out of balance on the high side. Brett character contributes to the bitterness as well, in addition to adding the expected barnyard funk into this. Very good overall, but not at the top of the list for me. Several others beat this one out in the flavor department.

M - Somewhat puckering from the lactic sourness. Overall on the dry side with only very little hints of sweetness. Body is expectedly thin and watery and carbonation is quite high, but I wouldn't have it any other way. Very good.

D - Overall, I'm really enjoying this beer. Perhaps a bit too high on the skunky funk, but that seems to be less noticeable as I go thru the bottle. Very good example, not my favorite, but beers like this make me wonder why I sometimes spend so much time, effort and money getting the super-hyped, super-rare American wilds when I can go to any number of local stores and pick up fine examples of the style like this for normal prices. Probably won't stop me from hitting the overhyped stuff, but still makes me wonder.

This beer pours a hazy golden straw color with little head and no retention. The carbonation is mild. The smell is tart Granny smith apples, dank basement musk and bits of white wine, pepper and cider. Less tartness than the Oude Gueuze I sampled last night.

Glug glug glug

The flavor is crisp and very tart apples with a dry finish. Ethers are slightly present as well as dry vinegary aftertaste. Over all the mouth feel is much less busy than the Oude and this comes across as a more focused and easier drinking gueuze than the Oude. Actually this is MUCH easier to drink than the Oude and I find the overall effect of this beer more inviting. I would use this to entice wine fans over to the beer side of things. Overall a great and tasty beer, and a wonderful (introduction to as well) gueuze.

Bottled October 2008. I had to kinda mangle the cork to get it out.

Poured into a goblet. Sparkling gold, no head retention.

It has the unmistakable Cantillon aroma right off the bat - it wafts out of the bottle as soon as you pull the cork. There's a lot of musty peach-crate with this one, also apple orchard and wood. Textbook gueuze aroma.

As is typical, on first sip, the level of sour was almost shocking. Yet as the palate acclimates, each successive sip becomes less sour, to the point where I find myself not taking sips, but rather taking large swallows. Holy f'ing crap, this is tasty and easy to drink! Lemon-peach sourness and light wood, some definite cheesy funk. Also of note, I really get the aged hop in this gueuze. Very nice interplay of sour, funk and bitter going on - but would you expect anything less.

There's just a soft kiss of carbonation - I love the carbonation level I typically find in Cantillon bottles. So smooth.

This is a benchmark gueuze, worthy of the name "Classic." We beer nerds tend to go wild (pun intended) for the latest sour offerings from Russian River and Lost Abbey - as good as those beers are, this is every bit as good, if not more so, in my opinion.

Some Cantillon brews are so sour, your stomach starts to feel it. Not so with this....as I said, I find myself taking large, deep sips of this with no gastric protest. Tasty, complex, low-ABV - real winner here. Big time. I don't know which gueuze I like better, this or Girardin. Outstanding. I'm pretty close to giving this a straight 5.

375ml corked & capped bottle (cork dated 2008) into a Duvel tulip.

A: Pours a clear golden body with a thin, coarse head of persistent white bubbles. Not terribly compelling.

S: Highly piquant aroma of sour funk, unripe fruit, and spicy mustard. Slightly oaky and decidedly vinous. I'm loving it.

T: Puckeringly sour, with green apple dominating throughout. A little bit of the mustard from the nose comes through, but not much. No real funk, either. The sourness does relent a bit on the finish, where a touch of sweetness shows up. Extremly tasty, with my only complaint being that it's a little one-dimensional with the tart acidity.

M: Smooth, medium bodied, and nearly still - just a bit of soft carbonation shows up after vigorous swishing. A bit more life would be welcome.

D: Pretty good considering how sour it is, but I'm glad I got the 375 instead of the full 750.

Notes: Hugely flavorful, and pretty complex. I kind of dig the mustard, as well as the smooth finish. I bought this after being blown away by Girardin, and the Cantillon didn't quite measure up. While delicious, this beer just doesn't have quite the depth of the unfiltered Girardin. I'm definitely looking forward to trying more of Cantillon's offerings.

375 mL cork-n-crown champagne bottle, bottled in 2007. Brewed with 65% barley and 35% raw wheat, with 5 grams per liter of three year old hops. This is a blend of one, two and three year old lambics that spent upwards of a year at the brewery to fully carbonate. It pours a beautiful, chill-hazed golden orange, with a thin white cap that leaves little lacing - very inviting. Cleaner that I was expecting in the nose, with a little funkiness, oak, cork and an earthy character. Pretty crazy sour on the palate, with oak, cork and a strong acidic note. Little musty as well, with mild malts, cherry pits?, sharp lemon, and a bit of bitterness, oddly enough. It has a light and tingly, very dry body, with teeth-peeling sourness that attacks the back of the throat. Despite the wildly sour character of this beer, it is imminently drinkable and very refreshing. Fans of gueuze need to seek out this beer.

From a 12.7oz bottle from Whole Foods.

Pours slightly hazy golden color with a very small hint of orange, decent head but kinda fizzy and fades fast.

Smell has a good amount of funk, not overwhelming but more than enough to know it'll have some kick.

Taste is sharp and acidic, hints of vinegar, real nice funk, carbonation dances on the tongue, the funk really hits the sides of the tongue.

This is probably the gueuze all gueuze's should be judged on, always a classic and having it readily available doesn't hurt either.

Had this in the bottle at St. James.

The appearance is a golden straw color with an oily body. It pours with a one finger white head that doesn't really stay for very long. It does have some oily legs that just slather the sides of the glass.

The smell is a bit faint for my liking but there is musk and sour stale smells. Some lemony citrus notes are present as well.

This was delicious! It is sour and tart in the right places and is a total joy to drink. It has some tart lemon going on in the beginning. There are lactose cheese tastes in the middle that make it very interesting. Sour, tart, and juicy! Delicious.

The mouthfeel can be explained as palate wrecker! The oily nature of the brew just coats the mouth and the tart sour flavors destroy the palate. I loved this brew so much I went back the next day and bought another to enjoy. It has all of those sour tastes that I love, lemon, grass, barnyard funk, saliva gland gusher. Love it.
