2015 vintage enjoyed under the saint gilloise label, incredible lambic. sometimes with all the other great wild ale i forget how good these cantillon beer really are, this is truly incredible stuff. its very sour in the nose, intense lactic pucker, new smelling oak, light vanilla and then a raw wheat and straw complexion from the grain, heavy lemon, and slightly hoppier than others i have had from these guys. my mouth waters to taste this. in the flavor, the sourness is immediately intense, that well aged funk right there with the acidity. iodine, slight medicinal funk, tons of oak, and the aged hop thing, low bitterness but floral and sort of citric as well, lemon and lime notes, like straight up 7up soda, strong hay and straw dried grassiness, and a wonderful bretty weirdness to it behind the clean sourness, which is quite intense here. the beer feels soft, fluffy from the wheat, fresh from what hops remain in here somehow, and effervescent in carbonation, which i adore in lambic. pungently funky, wet animal and basement weird, but so attractive too. better as it warms. always a treat to drink beer from cantillon, as rare and hyped as it is, it almost always lives up to the lofty expectations i have for it. awesome beer right here!

750 ml bottle into tulip glass, bottled on 1/5/2017. Pours slightly hazy pale golden yellow color with a 1-2 finger fairly dense and fluffy white head with awesome retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation retaining the cap. Fantastic appearance. Aromas of big lightly tart lemon, lime, peach, melon, pear, green apple, citrus peel, white grape, white wine, hay, straw, peppercorn, oak, leather, musty funk, herbal, floral, grass, wheat, white bread, light white vinegar, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/spicy/acidic yeast, earthy hops, oak barrel, and pale malt notes; with great strength. Taste of big lightly tart lemon, lime, peach, melon, pear, green apple, citrus peel, white grape, white wine, hay, straw, peppercorn, oak, leather, musty funk, herbal, floral, grass, wheat, white bread, light white vinegar, and yeast/oak earthiness. Light-moderate herbal/grassy bitterness, yeast/oak spiciness, and lactic tartness on the finish. Lingering notes of tart lemon, lime, peach, melon, pear, green apple, citrus peel, white grape, white wine, hay, straw, peppercorn, oak, leather, musty funk, herbal, floral, grass, wheat, white bread, light white vinegar, and yeast/oak earthiness on the finish for a while. Incredible complexity, robustness, and balance of fruity/funky/spicy/acidic yeast, earthy hops, oak barrel, and pale malt flavors; with a great malt/tart/bitter/spiciness balance, and zero puckering/astringent flavors after the finish. Moderately increasing dryness from tart/bitter/spiciness and carbonation. Medium-high carbonation and medium body; with a very smooth, moderately crisp, and grainy/sticky/acidic/tannic balanced mouthfeel that is awesome. Zero warming alcohol as expected of 5%. Overall this is a fantastic dry hopped gueuze! All around outstanding complexity, robustness, and balance of fruity/funky/spicy/acidic yeast, earthy hops, oak barrel, and pale malt flavors; very smooth, crisp, and easy to drink; with the modestly lactic/tannic/drying finish. Wonderful musty Brett complexity; with balanced dry hops, pale malt, and oak barrel flavors. A highly enjoyable offering, and spot on style example.

Leather with some hops! Citrus with some steelie earth. Great aroma and flavour, good body for its weight, crisp finish. Great summer brew! Pours a nice head, but no retention. Slight haze.

called cuvee saint gilloise now, supposedly the same beer, either way it is delicious, a wonderful tart refreshing beer, perfect carbonation complimented wonderfully by the hallertau hop
