Cloudy raspberry color with a finger of raspberry-tinted head that's quick to dissipate into a thin crown. Big raspberry aroma. Raspberry flavor with dry farmyard funkiness behind. Semi dry finish. Medium bodied with nice carbonation. On the fruity side, as to be expected, but still quite tasty.

Had it on tap at Ma Che Siete Venuti A Fà in hip Trastevere, Roma, Italy. In a trip where I got to drink Westvleterens 12 and 8, what a treat it is to be able to sample some Cantillon!
Pours a beautiful color that can be described in several colors; amber, ruby red, pink, cranberry. It opens with a large foam white head with a pinkish hue. Throughout the drink a sudsy film retains well and light lacing clings to the glass.
In the nose there is the expected acidic tartness, barnyard funk, lemon and wheat. Raspberries and cherries play a central yet restrained role, their sweetness never quite overtaking the tartness.
What a sublime treat it is to put in my mouth! Amazing range of flavors and complexity. Medium bodied but with a soft, light and refreshing mouthfeel. Bone dry finish, tart, acidic but in a very accessible way. The fruity flavors coat the mouth with depth and lightness at the same time; raspberry, sour cherry, hint of lime, and grapefruit bitterness.
They taste fresh, never syrupy and never too sweet. This is because of the fabulous interplay between fruit and earthy, fresh straw, wheat and wild yeast funk.
What a fabulous introduction to Cantillon! As I finish my last sips, I set my eye on the bottle of Cantillon Geuze in the fridge and promptly order it. That will be the next review.

Poured from a 750ml bottle into a snifter glass.

Look is a deep rich head and pretty clear with no head.

Aroma has a funky snourness with a slight fruit at the end.

Taste opens up sour but then gives way to a lovely nice raspberry sweetness.

Absolutely delicious.
