Blend of 3 barrels of Lambic maturing in fresh emptied Vin Jaune barrels from Stephane Tissot. Two barrels were filled with wort and one with a two years old Lambic.
We let it maturate for two years for the wort and one year for the Lambic. Beer bottled on 27th December 2016.

Fairly clear amber with a short but persistent off-white blanket that retains well in the classic Cantillon lambic tumbler.
Even though I've never enjoyed this one before, it's taking me right back to Belgium. It starts as bright apricot lambic might, but with white grape, white oak and minimal funk. But then emerges more savory elements like walnut, nougat and even gooey caramel.
These qualities are particularly present on the nose, but they remain as uniquely shy accenting background elements. It's worth noting that the bass of this aroma resides in polar opposition to the treble of the palate.
The body maintains a very moderate, balanced acidity, kind of like clementine juice, with a fine, wispy carbonation that lifts a touch of cedar before the bone dry finish exhales honeysuckle. What funk and hop characteristics are present express as a touch of skunky petrol, though very subtly so.

I've had multiple vintages of this one and it is probably my favorite lambic. Curry spice, tiki masala vibes, light citrus and wet oak. Surprised by the spiciness. Pepper bite. Yellow wine finish. Amazing.

Bright orange appearance with a soft foamy sparse head that floats delicately on the surface. Notes of celery, scallion, pepper, grape skin. Moderate body, soft carbonation.
