The apricots are sourced from environmentally-friendly and sustainable agriculture. The proportion is 300 g of fruit blended with one litre of lambic, and the soaking time is very short. Specifically, it will only take around five weeks for the lambic to extract the fragrances and flavours of the fruit. It is worthwhile to note that Fou’Foune kicks off the bottling season around the end of August. Given its success, Fou’Foune has taken up third place among the fruit beers in terms of volume, behind the traditional kriek and Rosé de Gambrinus.

the great and mighty fou foune, I finally found one. at a hole in the wall called novare res in downtown Portland, maine. this was on the last page of an incredible beer list. I ordered one and was told they were out. I threw a fit like a baby, said id driven 600 hundred miles to get one, and she said she would be right back. she offered me a 2005 lou pepe instead, but I just couldn't switch gears that quick. after sitting there debating what to do for a few minutes, the manager or owner emerged with a bottle of fou foune for me, all dusty and looking very much like something special. they chilled it for a few minutes, before serving it up in a very cool old mail bin with two cantillon wine glass type containers. the beer pours faded orange in color, rustic looking, cloudy, with a white head like fine champagne, rising and receding to about an inch. the smell is just mental, lots and lots of acid here, a fine lambic is the base. lacto and lemon, tart and funky. the apricots seem to add a floral element, a fruity sweetness to balance the sour, but I don't distinctly get apricots just by smelling it. it has the interesting effect of making my mouth water for every tasty treat ive ever had all at once. im watering like blue razz blowpops, sour nerds rope, lemon shaved ice, and porterhouse steak all at once. this sensation alone makes this beer a 5 out of 5 overall. nothing in the beer or culinary world has ever had this effect on my palate, and ive been around both a few times. the taste is very impressive, again, a mellow but distinct lambic as its base, I start to taste the apricots. they have a gentle fuzzy feel and flavor, like licking the outside of one. there is a sweetness there, but the juicy character of the fruit and pulpy morning time flavor profile are not dominant. what is dominant is the yeast. the best of lambic, tart and dry as any beer ive consumed. its acidic, and the lower the bottle gets and the warmer it gets, the more this is pronounced. my last yeasty sip is impossibly sour, putting hair on my chest to say the least. its dry on the palate after an insanely effervescent carbonation experience, but I taste the beer for miles and miles after the swallow. not sure ill have another beer again for awhile (yeah right). this is a one of a kind brew, an art form really, and worth all of the accolades its received and then some. nothing like it on the planet, and easily the best 50 bucks I have spent in awhile. not sure lambic will ever be the same...

edit: there is quite a lot of variance here in different vintages, in terms of relative dryness, how much fruit they seem to have, and how tart. it also seems to be relatively bulletproof over time, ive had several different vintages now, some pushing ten years, and they are all just sensational. i still think the first experience was the best, but this is one that gets me excited every time i encounter it, a truly special and one of a kind lambic!

edit: had a fresher bottle last night, cork said season 19/20, maybe the newest of these i have tasted. the apricot is so ripe and forward in nose and taste and it works just as well with what drinks like much younger lambic now, although i do get a bit more white wine vinegar sort of acidity rather than mature developed funkiness in its place, but these are so specific to seasons and years and its neat to watch them change over time. always a rare treat to get this drink one of these, but especially with the boys. living right!

edit: 2020 vintage tasting quite sour here on the back end of 2022, more tart and even lemony and vinegar forward than others, but will all the fruit still intact, i love how different these can be from year to year both in terms of vintages but also in how they change over time. still one of the absolute best there is! thanks to drlovemd87, always hooking this up!

Bottled in 2016

A: Poured into a tulip glass to a light golden yellow beer which is topped by a dense and fluffy finger and a half of white head which fades slowly to a collar around the edge of the glass with minimal lacing
S: Smells of apricots, hints of sourness, some chalky yeast and a touch of funk
T: Taste is building sourness up front with some nice apricot notes followed by some nice funk. Sourness is under control and not too aggressive with more apricots and more funk with some pale malty flavors coming through as well. On the finish there's some lemony tartness, more apricot, some lingering funk and a touch of chalky yeast.
M: This beer has a body which is on the lighter side of medium. Carbonation is lightly effervescent while the beer has a drying finish due to the acidity.
O: Overall this beer is outstanding. Great flavors and complexity. I probably should have drank this one sooner but it still tastes fantastic.

A HUGE thank you to tacosandbeer for this bottle!

A - Hazy medium orange gold colored pour with bright white, creamy lacing circling the top of the glass.

S - Massive tart, jammy, apricot with a little bit of funk going down.

T - Not as sour / tart as the nose would suggest (though still puckering). Lots of apricot jam tartness that lingers on the palate (and then some).

M - Big body with vibrant carbonation giving a soft texture leaving the entire mouth watering.

O - Straight up apricot with just the right amount of twangy zing. Pretty darn impressive and something special right here.

Poured from 750ml bottle into Spencers goblet.

L - Pale, hazy apricot gold pour with a topping of thin white foam, which disperses to a mild lacing.

S - Tart, sugary apricot jam with perhaps a touch of cinnamon and creamy vanilla.

T - Sharp sourness, almost vinegary acidity, underripe fruit, and a slight doughy grain flavor.

F - Stinging carbonation, juicy to start with a dry finish.

A beautifully crafted lambic which avoids the pitfalls of many other examples of the style (too sweet or too woody). The fruit is used to soften the lambic base. Excellent!
