2016 bottle at Cantillon Brewery in Brussels, Belgium.

Clear yellow-light amber appearance with a big amount of light foam head upon pour. Aroma is wonderful! Aprical galore and there's no mistaking it. If you like apricots, this will deliver on the smell AND taste. Apricot's are abundant with mild barnyard funkiness as well. Sour as well but not overly tart, and very mildly sweet. Out of all the Cantillon beers I've had, this one is the most sour to me. Feel is mostly smooth with a mild sour bite at the end. This totally lives up to the hype and is one of my favorite sours, not just from Cantillon but in general.

Well this is my official 1000 beer rated and I saved this gem for this occasion

2016 vintage drank from tulip
Look: beautiful hazy golden yellow color with a 1 inch white Champaign type head
Smell: a ton of apricot, some earthyness and funk throughout
Taste: it's the perfect blend of funk/sourness and amazing fresh apricot... the apricot is all ways present and delicious
Feel: amazingly drinkable, semi dry, medium carbonation and a light yet full body

Overall this is a real gem... insane flavors and complexities... a must try for any beer lover.

This was an absolute delight. So much apricot, glad I got this on tap as it tastes extremely fresh. The smell is incredible and it's super tart. It leaves a bit of a sour aftertaste but it doesn't linger for too long.

Went to Cantillon when I was in Brussels. Pretty sure I drank 6 bottles of fresh Fou over the course of 2 days. This beer is awesome fresh. Once its been shipped, stored, etc I personally think this beer gets worse. I would drink this fresh all day over aging it.

2015 bottle poured into a Cantillon stem. Semi hazy orange with a white head. Aroma is all apricots and funk. Taste is the same. Lots of apricot, sour and funk. Lots of carb. Overall an excellent funky sour. Best Cantillon I've had.

750 ml bottle into tulip glass, bottled on 9/5/2016. Pours slightly hazy medium golden yellow color with a 1-2 finger dense white head with good retention, that reduces to a thin cap that lingers. Nice spotty soapy lacing clings on the glass, with a moderate amount of streaming carbonation retaining the cap. Aromas of big tart lemon, lime, apricot, peach, mango, pineapple, melon, pear, green apple, white wine, oak, hay, straw, leather, grass, pepper, wet musty funk, wheat, cracker, light vinegar, and yeast/oak earthiness. Incredible aromas with fantastic complexity and balance of fruity/funky yeast, apricots, oak barrel, and moderate pale malt notes; with good strength. Taste of big tart lemon, lime, apricot, peach, mango, pineapple, melon, pear, green apple, white wine, oak, hay, straw, leather, grass, pepper, wet musty funk, wheat, cracker, light vinegar, and yeast/oak earthiness. Light fruity/lactic tartness and yeast/oak spiciness on the finish. Lingering notes of tart lemon, lime, apricot, peach, mango, pineapple, melon, pear, green apple, white wine, oak, hay, straw, leather, grass, pepper, wet musty funk, wheat, cracker, and yeast/oak earthiness on the finish for a good bit. Incredible complexity, robustness, and balance of fruity/funky yeast, apricots, oak barrel, and moderate pale malt flavors; with an amazing malt/tartness balance, and zero puckering/astringent flavors after the finish. Light dryness from tart/spiciness, lightly increasing through the glass. Medium-plus carbonation and medium body; with a very smooth, moderately crisp, creamy/grainy, and fairly acidic/tannic balanced mouthfeel that is awesome. Zero warming alcohol as expected of 5%. Overall this is an insane fruit lambic! All around incredible complexity, robustness, and balance of fruity/funky yeast, apricots, oak barrel, and moderate pale malt flavors; very smooth, crisp, and refreshing to drink with the mellow acidity/tartness. Plenty of funky yeast complexity; with perfectly balanced fruit, oak, and malt notes. A highly amazing offering.
