This is a spontaneously fermented "witbier" recipe. Not a lambic nor a gueuze, but a wild ale.

Bottle. Clear light gold, large white head. Nose is tart with light green apples, lemon, but mostly a lactic kind of tartness. Seems more like a light American sour, not nearly as intense as a traditional lambic, which I know this is not. Soft body, more green apples. Some hop bitterness upfront. Young and thin in body and flavor. Not much sour or fruit complexity, just thin and maybe too young right now.

750 mL bottle. Light haze, but mostly clear orange. Nose is sweet doughy breadiness. Oxidized. Some cardboard. A little citrus. Taste is brighter. Lemon and orange. Wheat breadiness again. Still oxidized. Medium light body. Soft carbonation. Never had it fresh, but I assume age has degraded this. Oxidized and kinda boring.

750ml cork and caged bottle. Served in a stemmed glass 4/30/2016.

Light yellow body, one finger white head, effervescent and long retention. No lacing. Smells of cereal grain, classical brewery funk, touch of non-descript spices and peppercorn, oak. It's different for sure, but certainly it is acidic. Flavour is a bit of leather and oak, wheat, moderate acetic acidity with a bit of lactic acidity, touch of hay and floral notes as well. It's different, and doesn't really wow in any way. Mouthfeel is medium bodied, fluffy, effervescent and refreshing. A nice tick to be sure, and very refreshing one at that.

Thanks to GRG1313 for sharing this one at his tasting.

Pours a hazy honey orange with a foamy beige head that settles to wisps of film on top of the beer. Tiny dots of lace form around the glass on the drink down. Smell is sour with grain, funk, acidic, wood, citrus fruit, and floral aromas. Taste is much the same with sour citrus fruit, floral, funk, hay, and wood flavors on the finish. There is a mild amount of acidity on the palate with each sip. This beer has a lower level of carbonation with a slightly crisp mouthfeel. Overall, this is a very good beer with interesting citrus and floral qualities that work well with the sour and funk.

Serving type: bottle.

Very floral aroma with a rotting tinge. Plasticky and astringent. Somewhat tea-like. Odd beer.
