On cask at Moeder. Clear golden color with off-white head. Aroma is really woody and rustic with some fermented fruits on top. Taste starts tart, bitter and woody and lingers on the aftertaste with bitter wood flavor. It has some funk but mostly you get the spicy wood flavors. Body is quite light and almost flat. It's a very different lambic from what I had from bottles. The lack of carbonation makes it really easy to drink and the cask notes really shine through.

From the cask, aged 18 months. Tasted at the brewery, poured from a jug into a Cantillon tasting glass.

Appearance: It was a clear dark golden orange colour with no head and no lacing.

Aroma: Funky and sour with hints of wood and lemon.

Taste: Sour, tart and funky with a touch of hay and lemon zest.

Mouthfeel: Light bodied with pretty much no carbonation.

Overall: Quite nice, but I tend to prefer at least a bit of carbonation.

Hazy amber yellow, no head.

Aroma of citrus peel, grass and straw. Sour, green apples, citrus and hay.

Moderate, dry, almost sharp aftertaste, typical Cantillon funkiness is present, but only in a supporting role. All in all very agressive on the palate, due to the untamed sourness.

Not one-dimensional, but not as complex and balanced as the "Ouder" versions.

On cask at Moeder

White head. Golden color.

Has a lighter acidity than the other ones. Easier to drink. Vinegar and lemon acidity. Not too sour. Nice funk to it.

Lighter bodied and carbonation level. Finishes clean. Very easy to drink, but not as complex as the others.

Poured at the brewery after the tour. Fantastic experience, and tasting it where it is created certainly adds to the overall experience. A must do if in the area.

1, 2, and 3 year lambic poured from boxes. 1 year is much paler than 2 and 3 year. No head. 1 year is soft and almost sweet smelling. Straw and wheat. Low acidity. 2 year smells almost vinegary and oaky. 3 year is extremely oaky and yogurty. Tastes are dramatically different as well. 1 year has some sweetness with straw and grain. 2 year is extremely sour. 3 year is an incredibly complex lambic. Oak is prevalent. Moderate acidity, but less than I expected. Funky and yogurty tartness. All are flat and medium light in body. Fantastic experience to try these three components next to the gueuze they are blended into. They are interesting to taste, but the refinement of the gueuze they become belies their abrasive characteristics.
