Notes / Commercial Description:
Everyone knows some of our best friends are wine growers from the Libourne region in France, more specifically those who make Saint Emillion and Pomerol. They respect the tradition and let their wine ferment in a natural way.

Fermentation, origin and vintage are still kept up.

Our collaboration resulted in a product uniting the best of their wine and of our beer : the Saint-Lamvinus.

The grapes, of the merlot and cabernet-franc varieties, are soaked in Bordeaux barrels containing two to three years old lambic. The beer is not blended before the bottling. The foam is caused by the addition of a liquor which starts the fermentation.

Vintage 2013
Appearance: pours the color of really fresh and ripe plum flesh. a finger or so of a white head with good retention and leaving behind a solid lacing. pretty hazy and almost to opaque.

Smell: spicy red wine grapes and oak barrels, fruits from cherries to plums. slight vinegar and funk

Taste: opens with red grapes with a strong and spicy red wine character, the presence of oak red wine barrels are apparent. after the initial red wine comes lots of other fruits, mostly cherry and plum. towards the end a strong funky flavor comes in and mixes with some oak.

Mouthfeel: medium. Super funky. Slight acid.

Overall: another killer sour by Cantillon. the amount of fruit flavor they get in the beers is amazing. also the funkiness is unlike any other breweries and they are the almost at the level of refreshing as berliners and goses

St. Lamvinus '14 vintage

Has a beautiful, vibrant color of red grapes, revealing a ruby note, and a fizzy, soon vanishing head.

Has aromas of a distinct leathery funkiness, paired with ripe grapes, pulling out their stone qualities in the best way, due to the supportive, wooden barrel. The funky barnyard tartness blends extremely well into the fermented, vinous, sour grapes. The fruitiness, as well as the wooden oakiness illustrate the acidic tartness in a very intriguing way, evoking the feeling of this being more wine than beer.

Begins with prickly, unripe grapes among earthy, leathery malts. The grapes turn sweeter, riper as the malts stand out against the tart sourness, adding stone fruit qualities to the taste. At the same time, carried by a lively carbonation, the sourness becomes quite intense, with a vinegar note, evoked by the fermented grape sourness, while both tastes blend well together, wrapped up by the wooden barrel. Finishes with a tongue quenching, slightly dry sourness, along with lemon zest and grape pulp. The beer still reminds me in many ways of a young wine, while missing its typical sweetness, replaced by the typical lambic tartness, with a refreshing, high carbonation.
