Notes / Commercial Description:
Everyone knows some of our best friends are wine growers from the Libourne region in France, more specifically those who make Saint Emillion and Pomerol. They respect the tradition and let their wine ferment in a natural way.

Fermentation, origin and vintage are still kept up.

Our collaboration resulted in a product uniting the best of their wine and of our beer : the Saint-Lamvinus.

The grapes, of the merlot and cabernet-franc varieties, are soaked in Bordeaux barrels containing two to three years old lambic. The beer is not blended before the bottling. The foam is caused by the addition of a liquor which starts the fermentation.

Cantillon St Lamnivus is a mouth-puckeringly sour lambic with a little sweetness to balance and some rotten fruit flavours.

A: Red colour and no head. 3.5

S: Super super sour smell. Rotten fruit. 4.5

T: Sour, a little sweet and fruity with a slightly bitter, dry finish. Mouth-puckeringly sour and balanced with a little sweetness. 4.5

750ml bottle procured at the brewery. 21 November 2012 indicated on the label. Pours a beautiful garnet hue with an effervescent,white head that quickly dissipates. Nose is somewhat subdued - tart, suggestions of cork and acetic acid. Taste is a bit musty with grape skins, cranberry and tannins. Mouthfeel is light-medium in body with a carbonation just shy of lively and a dry finish. Overall, not my favorite offering from Cantillon (I anticipated a little more fruit); however, a wonderful lambic nonetheless.
