Champagne.
No, really.
Champagne.
Might as well be from the province in France.
A bone dry brut is what this is.
Knowing that sparkling wines are often aged in oak puts the pieces together for me.
The smell, the flavor profile, the mouthfeel, the drinkability (has a slightly deeper color than most champagnes) all speak of dry champagne.
I find this to be more enjoyable than the $40 bottle of Veuve Cliquot my mother purchased not long ago.

UPDATED AGAIN ON 2-3-24.

UPDATED ON 2-12-21 ...

A - Dark gold color with light carbonation, no lacing.

S - Big bourbon and Belgian candy sugar with some booziness on the nose.

T - Belgian candy sugar, bourbon, and light caramel.

M - Thick and syrupy.

O - Just updated my review for the third time over the years and this year's variant is far better than those of previous years.

New Weyerbacher Beer Sunday (Week 626) continues at Chez Woody! We have achieved the kick-off of New Beer Sunday (Week 626) & I am using the occasion to kick-off my long-awaited & much-needed horizontal of Weyerbacher B.C. beers. I have a LOT of their beers in my Bottle Backlog and it may take several days until they are depleted. Enjoy the ride!

From the bottle: "Ale aged in oak barrels".

Where, oh, where & when, oh, when did I purchase this bottle? I would guess it to be pre-2008 since I think that it made the great move from my ancestral home to Chez Woody (although I cannot be certain). In that era, I was much less discerning about bottles vs CANs, purchasing any and everything that was new & different. Now, I am a bit more selective, but I am curious as to its origin and production date, It is a blank aluminum cap, if that helps.

The Pop! of the cap was followed by a moment of silence for what may have passed in the interim. I allowed for some breathing & then began a VERY gentle pour. It was going well until I noticed a slight stirring from the kick & I immediately backed off. An in-glass swirl raised a brief finger of eggshell-white head that quickly fell back to wisps. Color was Amber (SRM = > 7, < 9) with NE-quality clarity, evincing my decanting skills. Nose smelled strongly of coconut which I may or may not be correctly associating with bourbon. I also got a corn/silage smell, but nothing that spoke of oak barrel aging. Mouthfeel was medium. Once more, I allowed it to simply roll around on my tongue before swallowing. It did not seem to have retained much in the way of carbonation. At the same time, it had a mild coconut flavor along with a mild corn sweetness, Once again, I would have been hard-pressed to identify it as oak barrel-aged. On top of that, its alcohol seemed to have been subsumed into the rest of the liquid to the point that it was dangerously drinkable. Phew. Finish was semi-sweet with a corn-like quality that seemed to dominate, I could not identify either Merry Monks or bourbon barrel aging. If you still have any, I recommend a bottle share in the near future.

22oz bottle from 2005.

Pours hazy gold with a half inch of white froth. A partial skim coat for the duration with some minor streaks of lacework.

Aromatics starts with vinous, fruity, boozy notes. Pineapple, bourbon, vanilla, and wine barrel. Oaky and winey.

Medium bodied with soft carbonation. A bit creamy and lush.

The palate leads with a mild tartness, ripe fruit, and warming alcohol. Pineapple drizzled with bourbon-infused honey.

Finishes with some lingering sweetness, warming booze, and mild funk.

Very tasty after 10 years on it's side. A mild brett infection adds a nice touch and the beer has dried up quite a bit from what I remember.

Bottle sent by tobelerone, poured into a mug.

Murky caramel-brown, like dirty water. One finger of fizzy, sand-colored head is constantly replenished by bubbles from below.

A lot of the sherry/honey oxidation in the nose. Caramel, a little pear, some vanilla and oak.

A lot tangier in the flavor — maybe some brett and tartness. Pear, green apple, oxidized honey, caramel, a good amount of bourbon. Vanilla and toffee linger into the finish.

Soft medium body with mild massaging carbonation. A little blast of heat comes through the nose upon the swallow.

Prophecy is a weird beer, delivering an unexpected blend of flavors. Weird, but not bad. This bottle was a little old and oxidized, but I still enjoyed it.
