375ml cork and caged bottle, dated 12/21/2015. Cork comes out with a large pop. Served in a snifter glass. Pours a slightly cloudy darker reddish body with an orange hue; one finger white head with good retention, not much lacing. Smells of rich cherry skin and tannins, oak, and mild funk. Touch of lemon is in the back as well. A bit of mineral, but the dominant aroma is cherry skin. Flavour does follow; tannic with moderate cherry skin tartness and a bit of cherry flesh; back is touch of lemon and leather, a bit more oak and a mild funk to it. Mouthfeel is medium-lighter bodied, slightly yogurty, moderate acetic acidity with cherry skin and funk on the finish. A very nice cherry AWA that I really enjoyed.

Pours a light pinkish color with similar colored head. Cherries on the nose, strong aroma of tart cherries, with a little funk mixed in; follows onto the palate. Medium bodied. Finishes with tart cherry and dry. I was pleasantly surprised how much the fruit comes through on this one.

Pours a hazy dark orange color with a one finger off-white head that slowly settles into a lasting ring.  Spotty lacing left behind.

Earthy, musty aroma with lots of barnyard/horsey character.  Hints of oak, funky bugs, lactic acid and cobweb followed by faint fruit and acetic vinegar.  I was expecting the nose to be bursting with cherry but it's pretty subtle.  Smells pretty good with some nice funk but kind of one dimensional.

Medium bodied with a tart, lactic funk that isn't acetic or harsh.  Decently sour but not too much do.  More funky than anything else with a slight acetic quality.  Just a touch of vinegar in the finish but not solent like.  Not very sweet with the cherries again being slightly integrated.  Subtle vinous character with some fruit skin and cherry pit.  Finishes dry with some lingering acidity.

poured into tulip glass.

Appearance: medium rose red bodied beer that is opaque. Almost 2 full fingers of white head that quickly drops to a ring around the glass with a thin and separated cap.

Smell: sharp nose that is fairly funky and acidic. Cherries are definately present as well, they smell like a wild cherry flavored lifesaver candy.

Taste: Mild tart and very bright cherries, hint of lemon, lots of funk, and deep wet oak notes. The beer isnt as tart as the nose leads you to believe it will be. The cherries almost take on a sweet and sour flavor profile in the taste of this beer, kind of a unique quality that I havent seen very much in wild ales brewed with cherries. The beer has alot of depth from its funk; its musty and dusty with a touch of cheesy and yogert like funk notes. You also get a tannic and oaky flavor from the barrel. Finishes with a mild lactic bite, a lite spice cinnamon kick, and bright cherries that are mildly sweet maybe even a hint of vanilla to boot. Just a nice and complex brew by Allagash that is effortlessly delicious.

Mouthfeel: low end of a medium boided beer with carbonation that is on the high side of low carbonation levels. A rather bright and clean beer. Semi-dry and crisp finish that leaves your mouth watering after every sip. Quite a drinkable beer as well; not even a hint of the booze in this 8% beer. Mellow and smooth carbonation with a quick and light epervescence as the beer sits on your tongue.

Overall: This is my first official beer that I have drank that is an american wild that used a coolship during the brewing process. This is also probably my favorite Allagash beer that I have drank . I would definately like to seek out more of these coolship brews by Allagash as this is a very enjoyable beer.

375ml C&C bottle; bottled on March 6, 2014

poured into Hill Farmstead Wine Stem.

Appearance: Rosey red bodied beer that is completely opaque. The color of this beer looks like a liquefied cherry lifesaver. Thick white cap of white head that quick to disappear and leaves only a thin ring around the glass.

Smell: This smells like it will be really sour. A lot of vinegar/acetic notes. Also this sour beer smells very fruity and very funky. Cherry and lemons.

Taste: Yep this one is bracingly sour in the best possible way. It starts off sweet, then transitions into very dry and sour beer. Its got to be an 8/10 level sourness. Yet it remains at that perfect level of sourness to me for the fruitiness. I don't want anymore sourness in this beer, but it is right at that spot that is starting to pushing my boundries of being almost too sour. Pretty big wet oak barrel notes in this beer. Moderately funky; mostly dirty and musty funk with a hint of barnyard and horse. Finishes with mild and dirty funk, sour lemons and sweet cherries. Also tasting a decent amount of rhubarb and cherry pie in the finish. This is seriously fantastic coolship sour.

Mouthfeel: medium bodied beer with low carbonation. Pretty dry finish to this sour.

Overall: I am liking the 2014 vintage substantially more than the 2012 vintage which was my first coolship cerise that I tried. Big difference in the ABV as well. The 2012 vintage clocked in at a hefty 8.1% where the 2014 vintage is substantially less ABV at 5.6%. When I picked this beer up at Allagash the tour guides told us that this Cerise is a really sour beer and they were absolutely correct about that fact, especially compared to the 2012 level of sourness which was slightly disappointing to me. The 2014 vintage cerise is legit! Great job with this beer Allagash!

thank you a million to Gary for sending these our way...shared with Mike and Scott side-by-side with Red and Balaton.

a - murky orange with a thin head that was gone quick leaving a thin ring of fizziness on the surface.

s - some funky acetone. cherries are there, but not like in the balaton.

t - very funky. dark cherry. the booze is a bit evident compared to the other 2...and this is the strongest and it tastes it.

m - good carbonation. sour and musty.

o - overall unique and different. not something i need again and my clear least favorite of the three. the cherry flavoring is really overshadowed by the cherry flavor of the balaton which is more to my liking.

A - Pours a dirty pink-orange with a few white bubbles that are gone instantly.

S - Funky, earthy, subtle cherry, oak.

T - Funk, tart cherry, oak. Very complex and nice.

D - Lower carbonation with a good mediumb body.

O - Funky and tart cherry and oak, as you would want it.

Sparkling pink-amber with a loud fizzy head that settles to a soft, spotty film but can easily be stirred up with a quick swirl. Second half of the bottle will cloud you up.

Smell is wild yet focused sparkling cherry cider mellowed by oaky, earthy, cheesy funk and a little peppery spice. With more time, the smell reminds me of walking through a wild apple orchard with fallen apples underfoot and wildflowers all around--super nostalgic and homey, yet complex.

Whoa, this is very sour at first! Cherry is quickly complemented by a spiced apple cider or apple pie-like flavor, over an excellent, sharp crisp fizz. After acclimating, I taste almond, pie crust, a little acetic oak, and then the cherry comes back in on the finish--bing and black cherry pie, finishing quite dry indeed. Then, long after the swallow, a savory, peppery oakiness blooms on the throat.
