Inspired by Cafe’ Cubano, this 5.9% American stout is brewed with lactose and Huila Acevedo coffee beans from our friends at Flat Track Coffee Roasters. The beans produce a soft, sweet, savory profile with hints of cherry that pair perfectly with the beers’ creamy texture and burnt sugar notes. Rotating seasonal coffee varieties will be used with each new batch.

This is without question the best beer made at Zilker at this point in time. All others are good, decently made but without any real distinct character and there is a common flavor profile running through the current Zilker brews despite the different styles.

This one is a wonderful milk stout. Lovely color and tan/brown head. The nose is an assertive chocolate and coffee that's really inviting and distinctive.

The flavors are just what you want in a milk stout and while 8% abv it drinks almost like a nice "adult chocolate milk." (My words; not theirs).

This is a really nice beer. I hope that they keep it in the lineup.

Very dark brown draft pour. Big coffee nose on this one. Taste is like my perfect cup of coffee. The milk stout base lactose sweetness and creaminess along with the coffee is near perfect. I'd drink these all night but fear staying awake as well. Full body lower than average carbonation.

12oz can from Justdoit1234 (thanks man!). Canning date is smudged but looks like 9/2/16. Served in my trusty Phish snifter.

Pours black with almost two fingers of dense tan head. As the foam rescinds a nice thin veneer on the surface spreads to a wide ring, in turn leaving several patches of lace.

Smells of dark malt, coffee, sugar and chocolate.

The taste blends bold coffee, roasty malt, burnt caramel, sweet mild milk sugars and a hint of dark chocolate. Good stuff that goes down easily with no alcohol presence whatsoever.

Light, velvety feel with moderate carbonation. Coffee and roasty, caramelly malt dance on the palate in the finish.

Zilker's Coffee Milk Stout may not be over the top but it is quite good at being exactly what it calls itself. Well brewed and highly drinkable, I'm glad to have tried it.

12 oz can , Born on 12/22/15 . , Wow what a nice Coffee milk stout, @ 5.8 % ABV. , this is so very smooth roasted , creamy milk stout , not bitter at all , just melts in your mouth & all comes together very nice , I'm picking up a little vanilla as it warms up . I will look for this over & over again , & take a trip to the tap room , must try this on tap ! Great job on this one My Fav., Zilker- brew !

Drank on tap at Violet Crown Social Club, Austin, TX
Served in a pint glass

Impressive appearance. The beer poured an opaque brown/black and was topped by a super tight and creamy, two-finger tall, khaki colored crown. Drippy rings of lacing trickled all down the glass. The head eventually dropped to a small frothy collar.

The aroma was solid but a bit muted initially. Coffee came through fairly strong. There was a dry, powdery yeastiness. Bit of powdered cocoa. Somewhat roasty. As the beer sat, the coffee notes really intensified. This reminded me of coffee syrup. Dark chocolate also came through strong. Rich, robust and very mocha-like.

The flavor profile was punchy and very coffee forward. Like in the nose, coffee syrup came to mind or perhaps freshly brewed coffee. Really pleasant. Lots of rich, dark chocolate in the center. Very fudgey. Touch of dry yeastiness on the back end. The beer finished moderately roasty with a hint of lingering bitterness.

On the palate, the beer was soft, supple and smooth. The liquid contained a very fine, mellow effervescence. This almost seemed a bit undercarbonated but worked well for the style.

Zilker Brewing's Coffee Milk Stout is a punchy but still highly drinkable take on the style. I love that more and more breweries are doing flavorful yet lighter bodied and lower ABV beers like this one.

Brief impression from a can:

Not cloyingly sweet, but it's anchored aptly by a lactose sugar and dark malt core. Buried hints of roast do emerge especially as it warms, but roasted barley is far too subdued in the mix. Coffee does come through, but it's not horribly interesting insofar as coffee additive goes...slightly earthy and somewhat akin to generic cold brew, but not over the top in terms of roastiness or java-like characteristics. They could go heavier on the bitter flavours here; I want more roast and more coffee grounds flavours as well as possibly some burnt malts or charred sugars. Chicory additives or other coffee substitutes might help add some needed complexity.

Its balance is its best attribute.

This is a straightforward and enjoyable coffee milk stout, but it needs more depth and diversity of flavour to really stand out; as-is it's rather by-the-numbers.

An almost jet black body is capped with a massive soapy brown head after a vigorous pour. As it dissipates it is still roiling like a bad movie special effect of toxic waste. But not toxic, more like delicious. Eventually there is naught but a slight ring and opposite bald patch sliding around the slick oily body.

After that massive head the nose is a bit of a let down. Toasty grains are the driving factor here, but not in a roasty toasty way, more in like a wet storehouse way, though upon deeper digging there is a little bit of black coffee acidity and maybe some warming cocoa softness underneath.

Surprisingly soft bodied with a light dance of carbonation, it's quite easy to drink. Flavour thankfully offers a bit more than the nose with a milky sweetness meeting chocolate and lightly acrid coffee bitterness finishing it off.
