Supercruise (Cab Sauv)Supercruise (Cab Sauv)
Notes: Supercruise starts with wine grapes from locally-sourced, family-owned vineyards in Palisade, CO. Once the grapes have been destemmed and crushed, we allow the juice to rest for a few days - developing rich color and depth of flavor - before finally transferring the juice to neutral oak barrels along with our base golden sour. The beer then goes through a secondary fermentation while resting on the grapes, and after a few weeks is ready to bottle. Fruited at about half of what we do for Mach-Limit, the stonefruit character from the base beer is backed by bright fruit and soft tannins, yet the beer still shines through. This beer should age well with proper cellaring, however the grape character may diminish over time.

A - Pours a dark ruby red with a large foamy white head. Tons of soapy lacing.

S - Aroma is red wne, green apple skin, lemon and lactic funk.

T - The taste is red grapes, red grape skins, green apple, lemon, white wine, leather and oak.

M - Medium body with low carbonation. Creamy mouthfeel with a soft dry finish.

O - This is a super tasty sour. The Sauvignon Blanc grapes add a ton of wine characteristics. Super mellow and easy drinking. Definetly recommended.

750 ml cork & cap bottle into tulip glass, bottled in 2/2019. Pours slightly hazy medium orange/amber, light reddish color with a 1-2 finger fairly dense and fluffy light pink head with great retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big juicy/tart/tangy red grapes, fruit skin, lemon, lime, peach, plum, pear, apricot, melon, red/green apple, currant, red wine, toasted oak, hay, straw, grass, wheat, cracker, and white bread; with lighter notes of oaken vanilla, peppercorn, leathery/musty/lacto funk, and yeast earthiness. Damn nice aromas with great balance and complexity of fruity/funky/acidic/spicy yeast, grapes, oak barrels, and pale/wheat malt notes; with big strength. Taste of big juicy/tart/tangy red grapes, fruit skin, lemon, lime, peach, plum, pear, apricot, melon, red/green apple, currant, red wine, toasted oak, hay, straw, grass, wheat, cracker, and white bread; with lighter notes of oaken vanilla, peppercorn, leathery/musty/lacto funk, and yeast earthiness. Light-moderate fruity/lactic tartness, wine tang, and light yeast/oak tannin spiciness on the finish. Lingering notes of tart/tangy red grapes, fruit skin, lemon, lime, peach, plum, pear, apricot, melon, red/green apple, currant, red wine, toasted oak, hay, straw, grass, wheat, cracker, white bread, light pepper/funk, and yeast earthiness on the finish for a good bit. Fantastic complexity, robustness, and balance of fruity/funky/acidic/spicy yeast, grapes, oak barrels, and pale/wheat malt flavors; with a fantastic malt/tartness, tangy fruit, and yeast/oak spiciness balance; with zero puckering flavors after the finish. Fairly crisp finishing. Medium-plus carbonation and medium body; with a very smooth, moderately creamy/grainy/acidic/tangy, and lightly tannic balanced mouthfeel that is fantastic. Zero warming alcohol for 6%. Overall this is a fantastic fruited sour/wild ale. All around fantastic complexity, robustness, and balance of fruity/funky/acidic/spicy yeast, grapes, oak barrels, and pale/wheat malt flavors; very smooth and fairly crisp/refreshing to drink with the mellowly acidic/tangy/drying finish. Nicely soft, and not overly lactic. Fantastic balance of juicy/jammy Cabernet Sauvignon grapes, and Brett/bacteria complexity; with great oak presence, and pale/wheat malts against acidity. Mild residual sweetness with lingering crisp acidic/tangy dryness. A highly enjoyable offering, and outstanding style example. A lot smoother, softer, and less vinegary than the first one I tried.
