Had from a guest tap at Third Planet’s taproom in Niceville, FL in March 2022. I wasn’t sure what to expect, but this beer blew me away! Imagine the sweet, donut-like flavors of a pastry stout (beignet), combined with a gentle vanilla coffee aroma and flavors (au lait). Finding these notes, not in a stout, but in a pale, light-ish bodied blond ale was most unexpected. Surprising, unique and delicious!

Had to order another after having a flight sampling. Great beer. It was a bit darker than a typical blonde, let's just say it had highlights instead. The glass held simple lacing. Nose was of sweetness, almost honey like. The taste was as its name suggests, like a beignet. Sugars and bread and held throughout the session, fuller bodied than expected. Highly recommended

Beignet Au Lait has a thick, off-white head, and a bubbly, somewhat hazy, gold appearance, with minimal lacing. The aroma is of mild coffee, cream, and dough. There is a similar flavor with noticeable bitterness. Beignet Au Lait has a high-medium body and a dry finish.
