This Belgian inspired ale pays reverence to old world Franco-Belgian farmhouse brewing traditions. Brewed with the finest malts from Belgium and France and generously hopped with a blend of fresh aromatic noble hops.
This ale is fermented with our house saison yeast that takes a back seat to no other yeast when it comes to overall complexity. The final result is softly contoured pale golden ale with a billowing rocky head and slight haze in appearance. The aroma is rife with floral, spice and earth, an artifact of the yeast and hops in a delicate brushstroke. The outcome is a beer of unique design and exquisite taste, displaying some of the best attributes of American craft brewing. The finish is crisp and dry. The bracing, but not overwhelming hop bitterness ties things together and heightens the finish.

it was cool to see a couple of clean saison types in here when we visited, i know them more for hoppy beers and sours, so i was surprised and also stoked to see a few like this on the menu. this is somewhat simple as they go, classically styled for sure, not funky at all, a very well made and tidy take on the style, where there isnt a ton of urgency from the grain or the hops, fresh and balanced as they are, its really all about the yeast here, which is lightly estery, a little more interesting than french saison yeast alone, but in that vein, with a white wine character through it, hints of peach and white pepper, absolutely bone dry in the finish, expressive carbonation, and a very complete overall feel. the yeast is earthy and raw too, giving this a rustic appeal despite its cleanness, and its not estery enough to be belgiany and lingering, its faster than that. traces of floral honey, dried herbs, and light bitterness from the noble hops all come up on the finish. very drinkable beer, maybe not as distinctive and memorable as some of the others on their menu, but its hard not to be impressed with the quality here. these guys really are killing it across a wider range of styles than i had previously thought. this one is a year round drinker in my book.

Pours a slightly cloudy gold color with a modest head. Nice pattern of saucer shaped ring lacing.
Fruity aroma that includes pear, melon, peach and citrus.
Bright fruity flavors that include citrus, hints of lemon, and peach. A cracker malt sweetness pervades throughout, balanced by yeasty flavors in the form of light peppery spice and fruity esters.
Medium bodied, smooth and a soft mouthfeel aided by a very gentle carbonation. The overall sweetness of this beer is contrasted by a dry finish.

Served on draft into a 13 oz (384 ml), stemmed snifter glass at Alamo Draft House in Yonkers, NY.
A: Pours a hazy golden color with a less than quarter inch, white head, low retention, and modest lacing.
S: Aromas of lemon citrus, pepper, cloves, and mint predominate.
T: Palate follows the nose, but a bit spicier. Tart. Minty bitterness notable and interesting.
M: Light to medium bodied with medium carbonation. Neat, crisp finish.
O: Despite the ABV, a light, refreshing saison. Interesting and different.
