Notes: Many things can happen when collaborating breweries come together. Like us and Jester King. We both share a deep affinity for sour and wild beers. But rather than rest on our laurels, we challenged ourselves to brew a beer reminiscent of a nearly forgotten, early 20th century cocktail, the Ramos gin fizz, employing our wildly traditional methods to do so. We began with some of the cocktail's signature ingredients - lemon, lime and orange citrus fruits, botanicals and sweeteners (sorry, no egg whites) - and then let our collaborative brewing process run wild. The result is laden with herbal and floral notes, bright lemon and lime zest, orange blossom honey, vanilla, warm oak and comforting spices. The Ramos gin fizz is a hard cocktail to find, and when you do, it takes 10 minutes to make. Our collaboration with Jester King will be similarly elusive; however, it took nearly a year in the making.

Alcohol well disguised. Not overly funky or complex but a moderate to high acidity and sourness. Very good.

A - Cloudy copper color, nice carbonation with tight bubbles, micro-thin lacing.

S - Tangy and tart lime, sweet sour tartness, malt is subdued.

T - Very tangy and tart: lemon, lime, vanilla, ginger, some oak.

M - Heavy medium body that's silky smooth, very wet finish, mouth watering.

O - This is one of the most unique beers I've ever had (in a good way) - hands down. Seek out if you are adventurous. Not a typical beer.

750ml bottle poured into a tulip. The brew displays hazy copper with white topping that fades leaving patchy lace

This smells really strange yet inviting and pleasant like an herbal tonic meets ginger ale but lemony too with some vanilla shining through the back. Once it warms up, it has that familiar bruery blonde sour feel with mild vinegar/brine. Some whiffs even come across like cola/cream.

The taste is sharply sour, bordering acedic with brine and vinegar contrasted by a sort of zesty ginger ale meets cola feel and some sticky sweet vanilla beans. Its hard to pick out behind the sticky vanilla bean inclusion but some oak influence is present.

This is light in body with moderate carbonation. Even by Bruery standards this is weird but i kinda dig it and my wife found it to be absolutely chug-able, so thats kinda cool. After the fact thoughts: this in a large format bottle is cruel. The 8oz or so I drank gave me almost debilitating heartburn...I guess im just a pussy because after finishing off the bottle, the wife wanted more.

A bottle received from the generous BA 2beerdogs a couple of years ago. I usually cringe when I see the word 'spices' on a label and probably sat on this for that reason. Poured in a supplied Bruery tasting glass for the occasion.

Look- Pours a very clean translucent sparkling gold leaving a few centimeters of soapy white foam that quickly settles. Not a trace of lacing to be seen.

Smell- Vanilla, musty oak, herbs/spice, citrus and mild funk.

Taste- Slightly sweet vanilla forward, followed by lemon/lime, allspice and oak.

Feel- Tart and crisp with a very dry finish.

Overall- I can't say with any degree of certainty how prominent the spices were fresh, but they're a perfect accompaniment to the rich vanilla and citrus profile now. A very clean and easy drinking 8.3% make it dangerous on this hot, humid day.

Vanilla notes are a little too strong, almost tastes artificial. The sweetness is a bit much, and this is coming from someone with a sweet tooth. Coconut notes with a bit of ginger. Pretty interesting, but can't drink too much of this in one sitting.

2015 Vintage

Appearance: Slightly cloudy amber color with a modest-sized light beige head that dissipated fairly quickly. Good looking wild ale.

Smell: Vanilla and mild citrus/fruity notes. not a bad nose but fairly restrained.

Taste: Things get interesting here. Vanilla, citrus and some mild herbal notes work together cohesively to mimic a cocktail as advertised. While the vanila is upfront all the other elements work well together to produce a unique flavor profile.

Mouth-feel: Body is on the lighter Medium side with a moderate level of carbonation.

Overall: A unique tasty beer in my opinion. All the flavor elements work well together to mimic a gin fizz without any odd aftertaste of flavor notes. I wasn't sure how this would work when I opened this beer but I was pleasantly surprised.

750ml bottle poured into oversized wine glass

A- pours a deep golden peach color with a small foamy white head that leaves nothing behind

S- spicy woodsy oak mixes with vanilla sweetness up front, floral notes, musk, grape skin, acidic tartness

T- spicy and oaky up front that gives off earthy & musty flavors, along with some floral notes. Undertones of vanilla sweetness at the mid-palate, along with cola-like flavor. Acidic tartness as it nears the finish with a dry fruity linger

M- medium body with low carbonation leads to a slightly foamy mouthfeel and a tart dry finish

O- really enjoyed this one, the spicing and the vanilla works very well with the oak, just enough tartness to balance it out

A: Poured into a Duvel tulip to a light orange topped by a finger of dense white head that fades quickly to a collar around the edge of the glass with minimal lacing
S: Smells of sourness, spices and a boatload of vanilla
T: Taste is tart and fruity up front along with a nice hit of vanilla and some spices. This one has a good amount of acidity going on that remains close to the forefront for the entire drink. The vanilla does a decent job of keeping it in check though. Slightly oaky at times as well. Swallow is more fruity sourness, spices, and lingering vanilla.
M: This beer has a medium mouthfeel that feels crisp on the palate. The carbonation is just slightly prickly and the acidity gives this one a drying finish.
O: This beer is intense. It has great flavors and some really nice complexity. Kind of funny and different than a lot of other beers out there. This beer caught a lot of ire prior to release due to the cocktail inspiration but it tastes great. Definitely one to try if you like the style.
